1/2 habanero pepper, seeded and chopped
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons packed light brown sugar
1 tablespoon granulated sugar
1 teaspoon fennel seeds
1 teaspoon cayenne pepper
1 teaspoon allspice
1 teaspoon dried thyme
1/2 teaspoon ground ginger
2 cloves garlic, chopped
2 scallions, chopped
2 tablespoons apple cider vinegar
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
3 pounds chicken wings

Steps:

  • Combine the habanero, soy sauce, honey, both sugars, fennel seeds, cayenne, allspice, thyme, ginger, garlic and scallions in a blender. Add the vinegar, lime juice and orange juice and blend until smooth. Place the wings in a large resealable plastic bag and pour the marinade over them. Seal and refrigerate 4 to 6 hours.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Remove the wings from the bag, place on the lined sheets and bake 20 minutes. Meanwhile, bring the marinade to a boil in a small saucepan over medium heat and cook until reduced by one-third, about 10 minutes.
  • Remove the wings from the oven and brush with the glaze. Raise the oven temperature to 400 degrees F and continue to bake until the wings are cooked through, 20 more minutes.

2 -3 lbs fresh chicken wings, cut and tips removed
1/4 cup olive oil
1/2 cup low sodium soy sauce
1/4 cup honey
1/2 cup brown sugar
2 teaspoons paprika
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Heat olive oil, soy sauce, honey, brown sugar, paprika, cumin, salt and cayenne pepper until disolved.
  • Cool. Pour over wings and marinate at least 2 hours, turning once or twice.
  • Bake at 375 with marinade for 1 1/4 to 1 1/2 hours. You can broil for one minute at the end to crisp the skin but watch carefully, they can burn easily.

2/3 cup HEINZ Tomato Ketchup
2 Tbsp. lime juice
1 Tbsp. brown sugar
1/2 tsp. ground allspice
1/4 tsp. ground red pepper (cayenne)
1/8 tsp. garlic powder

Steps:

  • Heat oven to 400°F.
  • Spread wings onto rimmed baking sheet sprayed with cooking spray.
  • Bake 50 min. to 1 hour or until done, turning after 30 min. Meanwhile, mix remaining ingredients until blended.
  • Remove wings from oven. Heat broiler. Brush wings with half the ketchup mixture.
  • Broil, 4 inches from heat, 2 min. Turn; brush with remaining ketchup mixture. Broil additional 2 min.

2 large limes, juice of
4 1/2 teaspoons garlic powder
3 teaspoons paprika
2 teaspoons black pepper
1/4 teaspoon salt
2 teaspoons soy sauce
1 cup flour
oil (for frying)

Steps:

  • In a large bowl toss wings in juice.
  • Add all seasoning except flour and oil and mix to coast evenly.
  • Dip wings in flour to coat.
  • Heat frying oil to medium high and deep fry wings until done (10-12 minutes).
  • Drain on paper towels and serve.
