This apple crisp was brought to our house for dessert by a dear friend named Carla. I had always had an aversion to cooked apples, but I wanted to be polite so I tried it. This has been one of my favorite desserts since then. I was sooo bummed out because it got lost in the move to South Africa. I had lost contact with Carla as well. Then 2 weeks ago, 3 1/2 years later, I FOUND IT! In that one box that was full of "junk" that was so important to bring with us, but not important enough to go through for 3 + years! So here it is:

1/4 cup sugar
1 tablespoon lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
5 -6 apples, large
1 cup oats
1/2 cup brown sugar
1/3 cup flour
1/2 teaspoon salt
1/3 cup butter, Melted

Steps:

  • Mix first 4 ingredients.
  • Peel, core and slice apples.
  • Toss in mixture and put in a greased 9 in square pan.
  • Mix oats, brown sugar, flour and salt.
  • Stir in butter until crumbly.
  • Sprinkle evenly over apples.
  • Bake at 375 for 40 min, until bubbly.
  • You can use a bit more butter in the topping for a richer crisp.
  • Best served hot with a scoop of vanilla ice cream on top.

1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 cup old-fashioned oats
½ cup all-purpose flour
⅓ cup packed brown sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup cold unsalted butter (cut into ½-inch cubes)

Steps:

  • Preheat oven to 350° F with a rack in the middle position. Lightly grease an 8x8-inch square baking dish.

1 cup all-purpose flour
3/4 cup rolled oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, softened
4 cups chopped peeled apples
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla extract
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 4 ingredients. Cut in butter until crumbly. Press half into a greased 2-1/2-qt. baking dish or a 9-in. square baking pan. Cover with apples. , In a small saucepan, combine the sugar, cornstarch, water and vanilla. Bring to a boil; cook and stir 2 minutes or until thick and clear. Pour over apples. Sprinkle with remaining crumb mixture. , Bake 60-65 minutes or until apples are tender. Serve warm, with ice cream if desired.

1 cup quick-cooking oats

¼ teaspoon baking soda
½ cup butter, melted

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

5 large Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar

2 pounds Granny Smith apples
2 pounds Honeycrisp apples
1 1/2 cups all-purpose flour (see Cook's Note)

1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.
