This mexican stew/meat with gravy recipe is a marriage between EdsGirlAngie's recipe and the recipe on the Bolner's Fiesta Brand Extra Fancy Carne Guisada spice bottle with a few modifications by me.

2 1/2 lbs stew meat, cut in bite-size pieces
6 -7 tablespoons bolner's fiesta brand extra fancy carne guisada seasoning
4 teaspoons cumin powder
2 teaspoons chili powder
2 teaspoons red peppers (or more if spicier is desired)
3 tablespoons coconut oil (may substitute Veg. oil or olive oil)
2 -3 garlic cloves
1 medium onion
2 -3 serrano peppers, seeded and minced (or add more, with seeds if spicier is desired)
3 cups beef stock (or sub other stock)
3 tablespoons tomato paste

Steps:

  • Combine Seasoning, Cumin Powder, Chili Powder and Red Pepper in a bowl and dredge the meat through it.
  • Lightly brown meat in Coconut or Vegetable oil in large sauce pan on stove along with minced fresh garlic and chopped onions.
  • Add minced Serrano Peppers (may want to wear kitchen gloves while mincing).
  • Mix together some of the Beef Stock and Tomato Paste and add to beef along with the rest of the stock.
  • Simmer for about 2 1/2 hours, stirring occasionally, or put on low in crock pot. Test for desired tenderness.
  • Serve with flour tortillas, grated cheese, sour cream and shredded lettuce.
  • May also serve with Spanish rice, and Refried beans.

3 lb beef chuck, boneless
1 large white onion
1 medium jalapeno pepper
2 large tomatos
1 large green bell pepper
3 clove garlic
3 tsp ground cumin
1 tsp black pepper
1 Tbsp kosher salt
1 Tbsp lard or butter
1 tsp chili powder
1 tsp paprika
1 pinch mexican oregano
1 Tbsp corn masa or flour
1/2 c water

Steps:

  • 1. Cut the roast into 1 inch cubes and using the tblspn of Salt season the beef evenly
  • 2. Thinly slice the 3 cloves of Garlic
  • 3. I use a Mandolin and slice the (de-seeded fresh)Jalapeño and Onion very thin
  • 4. Quarter both Tomatoes and de-seed and finely chop the bell pepper
  • 5. In a Large pot add the Lard or Butter (oil can be used) and turn to medium adding the Beef then the Tomatoes then the Onion the the Peppers
  • 6. Add the remaining spices over the top and using a large spoon stir the ingredients together,,cover with lid and turn to Low cooking for 3 1/2 - 4 hours
  • 7. During the Last 20 minutes of cooking stir the tablespoon of Corn Masa into the 1/2 cup of water and add to the Carne Guisada to tighten up the gravy and continue to cook!
  • 8. Serve on warm Flour Tortillas with Cheese and now you're in Carne Guisada Tex-Mex Heaven... Now just grab yourself a Cold Big Red and Enjoy! All my friends who have had this said it Rivals the best places in San Antonio!

In this recipe, chunks of lean beef are simmered with fresh tomatoes, bell pepper, onion, garlic, and Mexican seasonings to make a rich spicy gravy (guisada). Serve with warm tortillas and garnish with guacamole, sour cream, and/or cheddar cheese for awesome guisada tacos. If your gravy is too thin, whisk a 1/2 cup of the gravy with 1 tablespoon of flour and stir it back into the meat mixture; cook until the sauce thickens, about 10 minutes.

1 tablespoon vegetable oil
2 pounds beef sirloin, cut into 1/2-inch cubes
1 large onion, chopped
1 large red bell pepper, chopped
4 large tomatoes, chopped
5 cloves garlic, minced
2 tablespoons ground cumin
1 teaspoon dried, crushed Mexican oregano
1 tablespoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon paprika
⅓ cup water

Steps:

  • Heat vegetable oil in a Dutch oven over medium-high heat. Place the beef sirloin in the Dutch oven and cook until the cubes are brown on all sides, about 10 minutes. Reduce the heat to medium and add the onion, red bell pepper, tomatoes, garlic, cumin, oregano, garlic powder, salt, black pepper, paprika, and water.
  • Continue cooking, stirring often, until the meat is tender, about 30 minutes.

A mexican style beef stew. You can also serve this over rice or noodles, but I prefer it on tortillas like a burrito. This doubles and freezes well.

1 lb stewing beef
1 large onion, chopped
3 garlic cloves, chopped (more or less to taste)
4 cups low sodium beef broth (water can be substituted, adjust seasonings)
1 tablespoon chili powder
1 tablespoon comino
2 teaspoons salt
1 teaspoon black pepper
1/3 cup flour
1/3 cup vegetable oil
flour tortilla
fresh cilantro, stems removed
chopped onion
shredded cheddar cheese
sour cream

Steps:

  • Brown beef well in a large cast iron dutch oven, a heavy stainless steel pot can be used with good results.
  • Add onion and garlic and cook until onions are translucent.
  • Add stock, chili powder, comino, salt, and pepper.
  • Bring to a simmer and cook for 2-3 hours or until beef is very tender.
  • In a separate skillet mix flour and oil together to form a roux.
  • Cook over medium high heat until a dark beige color, about 5 minutes.
  • Be careful not to let it burn.
  • Carefully add roux to stewed beef.
  • Be very careful because it can splatter.
  • Bring back to a simmer and thicken, simmer for 5-10 minutes to allow flavors to meld.
  • Serve like a soft taco on flour tortillas with fresh cilantro, chopped onions, shredded cheese and sour cream for garnish.

2 tablespoons oil
1 clove garlic, mashed
1 teaspoon ground cumin
1/2 teaspoon chili powder
4 tablespoons flour
1 can beef broth
3/4 cup water
salt and pepper

Steps:

  • Cut beef into 3/4-inch cubes.
  • In nonstick skillet over medium heat, saute beef until brown.
  • Add oil and flour and toss with beef until flour is brown.
  • Add water and spices, stirring well.
  • Add beef broth and reduce heat to medium low.
  • Simmer approximately 30 minutes until beef is tender.
  • (If sauce seems too thin, add a bit more flour to desired consistency.) Serve spooned onto flour tortillas (like tacos).
  • Garnish with sour cream, cheese and pico de gallo.
