Sausages with oregano, mushrooms & olives image

Mash is a must for a winning sausage dish, give it a boost with this easy one-pot stew

450g pack reduced-fat sausage
1 tsp sunflower oil
2 tsp dried oregano
2 garlic cloves , sliced
400g can chopped or cherry tomato
200ml beef stock
100g pitted black olives in brine
500g pack mushroom , thickly sliced

Steps:

  • Using kitchen scissors, snip the sausages into meatball-size pieces. Heat a large pan and fry the pieces in the oil for about 5 mins until golden all over.
  • Add the oregano and garlic, fry for 1 min more, then tip in the tomatoes, stock, olives and mushrooms.
  • Simmer for 15 mins until the sausages are cooked through and the sauce has reduced a little. Serve with mashed potato or pasta.

This white wine and garlic Alfredo sauce served with a nice spaghetti is one of my family's favorites, and I'm sure it will impress and become one of your favorites too. Mix with pasta and serve with fresh Parmesan cheese.

1 tablespoon extra-virgin olive oil
5 (3.5 ounce) links hot Italian sausage, cut into bite-size pieces
1 white onion, chopped
1 (4.5 ounce) can sliced mushrooms, drained
3 cloves garlic, chopped
2 tablespoons dried oregano
salt and ground black pepper to taste
¼ cup white wine
½ cup heavy whipping cream
3 tablespoons freshly shredded Parmesan cheese
2 tablespoons butter

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir sausage in the hot oil until browned, about 10 minutes. Stir onion, mushrooms, garlic, and oregano into sausage, season with salt and black pepper, and cook until onions are slightly browned, about 15 minutes.
  • Pour wine into skillet, bring to a boil, and reduce heat to medium-low. Simmer until liquid has nearly evaporated, about 10 minutes. Pour cream into skillet and add Parmesan cheese and butter. Cook at a simmer, stirring often, until sauce is slightly thickened, 10 to 15 minutes. Adjust salt and black pepper to taste.

1 teaspoon sunflower oil
2 teaspoons dried oregano

400 g chopped tomatoes
200 ml beef stock
100 g black olives
500 g mushrooms, sliced

Steps:

  • Using kitchen scissors, snip the sauages into meatball size pieces. Heat a large pan and fry the pieces in the oil for around 5 mins till goldena ll over.
  • Add the oregano and garlic, fry for 1 min more then tip in the tomatoes, stock, olives and mushrooms.
  • Simer for 15 mins until the sausages are cooked through and the sauce has reduced a little.
  • Serve with Mash or pasta.

If you are in a hurry, just cook for 25 minutes, or even simmer for a longer time, this is even better if made a day ahead to allow flavors to blend. Prep time includes boiling the pasta.

3 -4 tablespoons olive oil (of coarse what else lol!)
1 onion, chopped
1 -2 tablespoon chopped fresh garlic
1 -2 tablespoon dried oregano
1 teaspoon dried red pepper flakes (or to taste)
2 (16 ounce) cans diced tomatoes, with juice
5 ounces pitted black olives, sliced (or to taste, about 1 cup and a little more)
5 ounces pitted green olives, sliced (or to taste, about 1 cup and a little more)
12 ounces small shell pasta (cooked to firm-tender and drained)
1 -2 cup canned drained mushroom (or to taste)
3/4-1 cup grated parmesan cheese
salt and pepper

Steps:

  • Heat oil in a Dutch oven over medium-high heat.
  • Add in chopped onion, garlic, oregano and crushed red pepper flakes; saute for about 5-6 minutes.
  • Add in tomatoes with juice and drained mushrooms along with black and green olives; simmer on low heat for about 25-30 minutes, or until mixture starts to thicken.
  • Add in cooked pasta shells and 3/4 - 1 cup grated Parmesan cheese; toss to combine.
  • Serve with more Parmesan cheese.

2 tablespoons extra virgin olive oil
1/2 pound hot Italian sausage, casings removed
1 large sprig fresh rosemary
1 fat garlic clove, finely chopped
1 1/2 pounds ripe plum tomatoes, trimmed and diced
1/4 cup green pitted olives, slivered
Salt to taste
1/2 pound whole-wheat pasta, like penne

Steps:

  • Warm the oil in a large skillet over medium-high heat. Add the sausage and rosemary; cook, breaking up the meat with a fork, until browned and cooked through, 5 to 7 minutes. Add the garlic, cook 1 minute. Add the tomatoes and stir occasionally until they have broken down and turned into a sauce, 10 to 15 minutes. Stir in the olives for the last 5 minutes of cooking. Add salt to taste, cover and keep warm.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain well and toss with the sauce.
