An easy and authentic Carnitas Recipe for making the best Mexican Tacos de Carnitas! Featuring slow-cooked, tender bites of pork broiled to crispy perfection!

3-4 pound boneless pork butt
1 tablespoon Kosher salt
1 tablespoon chili powder
2 teaspoons black pepper
2 teaspoon onion powder
1 1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 cup orange juice ((freshly squeezed), about 3-4 oranges)
1/4 cup lime juice ((freshly squeezed), about 3-4 limes)
2 bay leaves
1/2 cup water (+ 2 tablespoons, separated)
2 teaspoons cornstarch
Flour or corn tortillas ( (1-2 per person))
Topping Suggestions: red onion, cilantro, Cotija cheese, freshly squeezed lime juice

Steps:

  • Preheat the oven to 325°F. Pat the pork butt dry with a paper towel. Use a large, sharp knife to trim away excess fat. Cut the pork butt into 1" thick slices. Then, cut each slice into 1" cubes.
  • Transfer the pork to a 4-5 quart enameled cast iron Dutch oven. Add all of the dry spices, and massage them onto the pork with your hands.
  • Add the orange juice, lime juice, and a 1/2 cup water to the Dutch oven and stir to combine. Add the bay leaves, cover, and transfer to the oven.
  • Cook for 2 hours. Remove from the oven, and turn on the broiler on high. Have ready a rimmed sheet pan lined with nonstick aluminum foil.
  • Use a slotted spoon to transfer the pork to the prepared sheet pan. Using the tines of a fork, gently press down on the pork to ever-so-slightly break it apart.
  • Place the pork under the broiler, and watch closely so that it does not burn. As soon as the pork begins to tinge with dark brown hues and crisps up on the edges, remove it from the oven. Depending on your broiler, this could take anywhere from 1- 4 minutes. Remove from the oven and set aside.
  • Place the Dutch oven on the stovetop over medium-high heat and allow to come to a simmer. In a small bowl, combine cornstarch and 2 tablespoons of water. Add the cornstarch slurry to the cooking liquid and allow to simmer until thickened, about 2-3 minutes. Remove from the heat.
  • Either add the pork back to the Dutch oven and stir or brush the sauce lightly over the carnitas. Serve with tortillas and your favorite taco toppings and enjoy!

2 tablespoon vegetable oil
12 ounce beef sirloin steak, thinly sliced
1 tablespoon ground New Mexico, pasilla, or ancho chile pepper or chili powder
1 teaspoon kosher salt
1 cup onion, cut into thin bite-size strips
1 cup red sweet pepper, cut into thin bite-size strips
1 cup sliced fresh mushrooms
2 cloves garlic, minced
0.25 cup light Mexican beer (such as Corona), Caldo (see recipe, page xx), or reduced-sodium chicken broth
0.5 cup roasted tomato salsa
0.5 cup Caldo (see recipe, page xx) or reduced-sodium chicken broth
2 tablespoon butter
2.667 cup Mexican Red Rice (see recipe, page xx) or plain hot cooked white rice
Fresh cilantro (optional)
Lime wedges

Steps:

  • In an extra-large skillet heat 1 tablespoon of the oil over medium heat. Add beef, ground chile pepper, and kosher salt; cook about 3 minutes or until beef is no longer pink, stirring occasionally. Transfer beef to a platter; set aside.
  • In the same skillet heat the remaining 1 tablespoon oil. Add onion and sweet pepper; cook about 4 minutes or until onion and sweet pepper begin to soften, stirring occasionally. Add mushrooms; cook about 2 minutes more or until mushrooms begin to soften, stirring occasionally. Push onion-mushroom mixture to one side of the skillet; add garlic and cook 20 seconds, stirring garlic constantly. Stir garlic into onion-mushroom mixture.
  • Carefully add beer, stirring to scrape up any crusty brown bits. Add salsa and Caldo to skillet, stirring to combine. Simmer about 5 minutes or until liquid is reduced by half. Add cooked beef and butter; simmer for 1 minute, stirring several times.
  • Serve with Mexican Red Rice and lime wedges. If desired, garnish with cilantro.

I use this recipe all the time. It is the best! The meat just falls apart, and it's delicious served in flour tortillas with guacamole and salsa. This also freezes well.

4 pounds chuck roast
1 (4 ounce) can green chile peppers, chopped
2 tablespoons chili powder
½ teaspoon dried oregano
½ teaspoon ground cumin
2 cloves garlic, minced
salt to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place roast on heavy foil large enough to enclose the meat. In a small bowl, combine the green chile peppers, chili powder, oregano, cumin, garlic and salt to taste. Mix well and rub over the meat.
  • Totally wrap the meat in the foil and place in a roasting pan.
  • Bake at 300 degrees F (150 degrees C) for 3 1/2 to 4 hours, or until the roast just falls apart with a fork. Remove from oven and shred using two forks.

4 1/2 lbs pork butt
6 cups water
7 slices orange zest
6 garlic cloves, minced
1 1/2 onions, diced
1 1/2 teaspoons crushed red pepper flakes
1 1/2 cinnamon sticks, preferably Mexican
2 bay leaves
1 1/2 teaspoons oregano leaves, crushed
1 1/2 teaspoons kosher salt
salt
1/4 teaspoon ground cloves
24 small corn tortillas, warmed
chopped fresh cilantro
finely chopped onion
fresh salsa verde or hot sauce

Steps:

  • Trim any thick fat from the outside of the pork butt. Cut the meat into 1-inch cubes. Discard any cubes that are pure fat, but don't try to trim all of the fat out of the meat.
  • Put the pork in a large pot. Add the water the strips of orange zest, garlic, onion, red pepper flakes, cinnamon, bay leaves, oregano, 1 1/2 teaspoons salt and cloves. Bring to a boil then reduce to a simmer. Skim off any scum that forms on the surface. Simmer for 1 1/2 hours, until the pork is very soft, adding more water if necessary to keep the meat submerged. Season with salt.
  • Bring to a gentle boil and cook until the water has evaporated about 30 minutes. Cook a little longer to fry the meat slightly. (Note: if you want extra-crispy carnitas, fry approximately 25 minutes.) Watch carefully to prevent burning.
  • Remove the bay leaves and cinnamon sticks. Put the meat in a fine strainer and push gently with a wooden spoon to remove any excess fat. Discard the fat.
  • Fold a few tablespoons of carnitas inside each tortilla and top each taco with cilantro, onion and salsa.

This makes absolutely delicious and tender meat. I like to serve it with soft corn tortillas, pico de gallo, sour cream, cilantro, slices of avocado, and homemade salsa. It's great over rice and right out of the pan. This is definitely a 5 star recipe and SOOO easy.

2 lbs stewing beef
2 tablespoons flour
1 medium onion, diced small
2 garlic cloves, minced
2 jalapenos, seeds removed and minced
3 cups beef broth (Swanson is what I use and it DOES make a big difference)
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon hot Mexican chili powder
1 teaspoon adobo seasoning or 1/2 teaspoon salt, plus
salt, to taste
3 tablespoons extra virgin olive oil, EVOO

Steps:

  • Preaheat oven to 350.
  • Season meat with adobo.
  • Toss meat with flour.
  • In a frying pan large enough to put a single layer of meat add EVOO add olive oil and heat until hot. Add meat and brown.
  • Add all remaining ingredients, scraping up browned bits, and cook over medium high heat until bubbling.
  • Transfer to a 11 by 8 baking pan (holds a single layer of meat) and bake uncovered for 3 hours. The sauce should be very thick and the meat VERY tender.
  • Serve as a taco or over rice.
