CARROT RICE RECIPE
Carrot Rice Recipe is an Indian style rice dish which is quick, healthy and tasty breakfast, lunch and kids lunchbox recipe.

Steps:
- Heat 1 tbsp of oil/ghee in a kadai. Add whole spices ,mustard and cumin seeds.
- Once the mustard seeds start spluttering add green chillies ,curry leaves and hing(asafetida).Saute for few seconds.
- Next add onions, minced ginger and garlic.Saute till onions are light brown in color.Then add green peas, grated carrot and cook for 2-3 minutes.
- And then add turmeric, red chilli powder, garam masala, sambar powder and salt. Cook for another minute.
- Add cooked rice, mix it well and turn off the gas.
- Garnish it with coriander leaves & serve hot with raita.

- Add the oil to a medium sauce pan over medium heat. Add the cardamom, cloves, cinnamon and bay leaf. Stir for a minute until fragrant.
- Reduce the heat to low, add the onion and saute, stirring frequently for 4 - 5 minutes until translucent.
- Stir in the carrots and sultanas, cook for another couple of minutes until they start to soften. Stir in the rice and mix well.

- Soak the rice in water for 20 minutes. In the mean time wash, peel and grate the carrots using a food processor or carrot grater and chop the onion finely.
- After 20 minutes, drain the water from rice and discard. In a saucepan add 2 cups of fresh water, salt and bring it to a boil. When the water starts boiling add the rice and cover and cook until all the water content absorbed the rice completely. Spread the cooked rice on a wide plate and allow it to cool.
- In a pan heat oil add mustard seeds and allow it to splutter. Add urad dal, curry leaves, chopped onion and cook until the onion becomes soft.
