1 lb carrots, peeled, coarsely chopped
2 cloves garlic
3 tablespoons red wine vinegar
1 teaspoon Sriracha sauce
1/2 cup chopped fresh cilantro leaves
1 teaspoon salt
3 tablespoons olive oil
Food Should Taste Good™ blue corn tortilla chips, as desired

Steps:

  • In 2-quart saucepan, cover chopped carrots with cold water. Heat to boiling. Reduce heat; simmer about 20 minutes or until carrots are tender. Drain; place in food processor.
  • Add garlic, vinegar, Sriracha sauce, cilantro and salt. Process while slowly drizzling in olive oil, until smooth. Serve with chips.

½ cup Greek yogurt
2 tablespoons lemon juice
1 teaspoon Sriracha sauce
1 teaspoon apple cider vinegar
¼ teaspoon garlic powder
¼ teaspoon ground cumin
4 large carrots, peeled and halved lengthwise
1 tablespoon olive oil
salt and pepper to taste
1 tablespoon chopped cilantro, or to taste

Steps:

  • Combine yogurt, lemon juice, Sriracha, vinegar, garlic powder, and cumin in a small bowl. Set aside.
  • Brush carrots with olive oil and season with salt and pepper.
  • Preheat an outdoor grill for low heat and lightly oil the grate.
  • Cook carrots for 5 minutes. Flip and cook until tender but not mushy, about 3 more minutes. Transfer to a serving plate and spoon the yogurt sauce on top. Garnish with cilantro and serve immediately.

Steps:

  • Add all ingredients to a food processor. Blend until well mixed. If your dip isn't quite spreadable feel free to add just a tiny bit of mayonnaise until it reaches the desired consistency. Serve with crackers, with celery, carrots, or on top of baked potatoes.

1 1/2 pounds carrots, halved if large
1 large onion, cut into wedges
6 tablespoons olive oil, divided
1 1/2 teaspoons ground cumin
Coarse salt
2 tablespoons red-wine vinegar
1 to 2 tablespoons Sriracha
1 small garlic clove, minced
Yogurt and pita bread, for serving

Steps:

  • Preheat oven to 425 degrees. On a rimmed baking sheet, toss carrots and onion with 2 tablespoons oil and the cumin. Season with salt. Roast until golden brown and tender, about 35 minutes, flipping halfway through.
  • Transfer vegetables to a food processor, and pulse until a coarse paste forms. Add remaining 1/4 cup oil, the vinegar, Sriracha, and garlic. Pulse to combine. Season with salt. Dollop with yogurt and serve with pita bread.

1 pound carrots, peeled and thinly sliced
3 cloves garlic, thinly sliced
1 (2 inch) piece fresh ginger root, peeled and thinly sliced
¾ teaspoon salt, divided
⅓ cup apricot preserves
2 tablespoons fresh lemon juice
4 teaspoons toasted sesame oil
1 ½ teaspoons ground coriander
⅛ teaspoon cayenne pepper

Steps:

  • Put carrots, garlic, ginger, and 1/4 teaspoon salt in a large saucepan. Add 2 cups water to cover. Bring to a boil, then reduce heat and simmer, covered, until carrots are tender, 10 to 12 minutes. Drain.
  • Transfer carrot mixture to a food processor along with remaining 1/2 teaspoon salt, apricot preserves, lemon juice, sesame oil, coriander, and cayenne. Process until almost smooth.

1 small onion, chopped
2 teaspoons canola oil
4 medium carrots, sliced
1/3 cup water
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon curry powder
2 tablespoons reduced-fat mayonnaise
2 teaspoons prepared mustard
Assorted raw vegetables

Steps:

  • In a nonstick skillet, saute onion in oil. Add the carrots, water, salt, pepper and curry. Bring to a boil. Reduce heat; cover and simmer for 6 minutes or until vegetables are tender. Uncover; cook for 8 minutes or until liquid has evaporated. Cool. , Transfer to a food processor or blender; cover and process until smooth. Add mayonnaise and mustard; mix well. Serve with vegetables.

1/2 cup mayonnaise
2 medium carrots, finely shredded
3 green onions, thinly sliced
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic salt
1 small firm head iceberg lettuce, optional
Fresh vegetables or crackers

Steps:

  • In a small bowl, beat cream cheese and mayonnaise until smooth. Stir in the carrots, onions, Worcestershire sauce and garlic salt. Chill for at least 1 hour. , To make a lettuce serving bowl, hollow out the head of lettuce, keeping the core at the bottom intact and removing enough interior leaves so that a 1-in. shell remains. Add dip; serve with vegetables or crackers.
