Catfish a la Shannon image

Original Recipe name is Catfish Allison. I changed some of the ingredients, but the original recipe came from "The Catfish Cookbook". It has different dishes from famous chef's. I guess Allison someone or another created this dish - I can't find the book now. I served this dish with steamed asparagus and new potatoes. It is very rich, and filling.

1 cup parmesan cheese
1/2 cup butter, softened
6 tablespoons reduced-fat mayonnaise
6 scallions, chopped
1/2 teaspoon Worcestershire sauce
6 -8 catfish fillets
Tabasco sauce

Steps:

  • In bowl mix parmesan, mayo, butter, scallions, worcestershire sauce, and tobasco mixing thoroughly.
  • Poach catfish in a skillet of lightly simmering water.
  • (About 4-5 minutes) Lift with slotted spoon, and transfer to baking dish or (6 individual casserole dishes).
  • Top fillets with mayo mixture (If using individual casserole dishes, divide mixture up evenly among the fillets).
  • Broil about 3 min, until lightly browned.
  • Serve with juices (if using individual casserole dishes, serve in dish).

3 medium tomatoes, chopped
1/4 cup chopped onion
2 jalapeno peppers, seeded and finely chopped
2 tablespoons white wine vinegar
3 teaspoons salt, divided
3 teaspoons paprika
3 teaspoons chili powder
1 to 1-1/2 teaspoons ground cumin
1 to 1-1/2 teaspoons ground coriander
3/4 to 1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
4 catfish fillets (6 ounces each)

Steps:

  • For salsa, in a large bowl, combine the tomatoes, onion, jalapenos, vinegar and 1 teaspoon salt. Cover and refrigerate for at least 30 minutes., Combine the paprika, chili powder, cumin, coriander, cayenne, garlic powder and remaining salt; rub over catfish. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. , Grill fillets, uncovered, over medium heat or broil 4 in. from the heat for 5 minutes on each side or until fish flakes easily with a fork. Serve with salsa.

This batter is great on any fish, and our favorite is crappie. Hope you enjoy. The serving size and cook time are approximate because we usually just cook what we catch. You can cook as little or as much fish as you have on hand.

10 lbs catfish
1 cup milk
cooking oil
1 cup plain flour
2 1/2 cups cornmeal
1/2 teaspoon salt
1/8 teaspoon red cayenne pepper
1 teaspoon garlic powder
1 teaspoon butter-flavored salt

Steps:

  • Soak fish in milk Mix the dry ingredients thoroughly in a bowl or bag.
  • Roll the fish in dry ingredients Fry in hot cooking oil deep enough to float the fish.
  • (Be sure grease or oil is not too hot, about 350 degrees).
