Number Of Ingredients 6

1/2 cup mayonnaise
1 tablespoon chopped cornichons
1 tablespoon chopped shallots
1 tablespoon capers, drained
2 tablespoons freshly squeezed lemon juice
Coarse salt and freshly ground black pepper

Steps:

  • In a small bowl whisk together mayonnaise, cornichons, shallots, capers, and lemon juice. Season with salt and pepper.

1/4 cup finely chopped red onion
1/4 cup coarsely chopped capers
1/4 cup finely chopped cornichons, plus 2 tablespoons of the juice
3 cups Hellman's prepared mayonnaise
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground pepper

Steps:

  • In a medium bowl, combine all the ingredients. Stir well, and refrigerate until ready to use. May be prepared 1 day in advance.

4 each hard-boiled egg yolks
3 large Egg, yolk, raw, fresh
½ cup extra-virgin olive oil
2 tablespoons Dijon mustard
2 tablespoons sour cream
1 teaspoon lemon juice, or to taste

Steps:

  • Press hard-boiled egg yolks through a fine mesh sieve into a porcelain bowl. Add raw egg yolks and whisk until fluffy and creamy. Add oil, 1 tablespoon at a time, whisking constantly until consistency is like mayonnaise. Whisk in mustard, sour cream, and lemon juice.
