These vegetarian taco bowls are perfect for meal prep!

1 head cauliflower
1 tablespoon oil
1 tablespoon chili powder
1 teaspoon garlic salt
1 teaspoon cumin
½ teaspoon oregano
Cayenne pepper (optional)
½ cup mayo
½ cup sour cream
1 lime (juiced)
½ teaspoon garlic powder
2 tablespoons cilantro (diced)
2 cups cooked rice
1 cup corn (cooked)
1 cup cherry tomatoes (halved)
1 lime (quartered)
Cilantro (for garnish, optional)
Green onions (for garnish, sliced, optional)

Steps:

  • Whisk sauce ingredients together in a small bowl. Set aside.
  • Cut the stem and leaves from the cauliflower. Cut cauliflower into bite-sized pieces.
  • Add oil to cauliflower. Mix cauliflower seasonings together in a mixing bowl. Stir cauliflower in spices to coat evenly.
  • Air fry the cauliflower at 380 degrees F (193 degrees C) for 12 to 14 minutes or until cauliflower is fork tender.
  • Equally divide the cauliflower into four bowls with other bowl ingredients. Sprinkle with cilantro and green onions. Enjoy!

12 ounces cauliflower florets
2 tablespoons olive oil
2 teaspoons taco seasoning, or to taste

Steps:

  • Preheat the oven to 380 degrees F (190 degrees C).
  • Toss cauliflower with olive oil and taco seasoning in a bowl until well combined. Transfer to the air fryer basket.
  • Air-fry cauliflower for 7 minutes. If you like your cauliflower extra crispy, air-fry for an additional 7 to 8 minutes. If your florets are small, keep an eye on them, otherwise they may burn.

1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon sea salt
¼ teaspoon garlic powder
1 (15 ounce) can chickpeas, drained
1 small head cauliflower, cut into bite-sized pieces
1 cup sour cream (such as Daisy®)
¼ cup chopped fresh cilantro
⅛ cup lime juice
1 tablespoon Sriracha
salt to taste
6 (6 inch) corn tortillas

Steps:

  • Preheat an air fryer to 370 degrees F (190 degrees C).
  • Whisk together olive oil, lime juice, chili powder, cumin, salt, and garlic powder in a large bowl. Add chickpeas and cauliflower and stir until evenly coated.
  • Stir together sour cream, cilantro, lime juice, and Sriracha in a bowl until evenly combined. Season with salt to taste.
  • Place cauliflower mixture in the basket of the air fryer. Cook for 10 minutes, stir, and cook for another 10 minutes. Stir once more and cook until desired crispness, about 5 more minutes.
  • Spoon cauliflower mixture into corn tortillas and top with sauce.
