Steps:
- Slice the strawberries. In a large bowl, toss 3/4 of them with the sugar and orange liqueur. Refrigerate for at least 1 hour to macerate.
- Put the ice cream in the refrigerator to soften.
- Put the cream and half of the macerated strawberries in a cold mixing bowl. With an electric mixer, whip to soft peak, about 2 minutes. Fold in the softened ice cream.
- Distribute the cream among 6 chilled bowls. Mix the plain sliced berries with the remaining macerated berries and place on top of the cream.

- Remove stems from strawberries; cut a deep "X" in the tip of each berry. Gently spread berries open., In a small bowl, beat the cream cheese, confectioners' sugar and extract until light and fluffy. Pipe or spoon about 2 teaspoons into each berry; if desired, sprinkle with chocolate. Chill until serving.

- Slice the tops off the strawberries to create a flat surface for them to sit on. Slice the tip off the strawberry to make the hat.
- Squeeze some frosting or whipped cream on the strawberry, and replace the tip.
- Decorate the rest with a piping bag.
- Add the mini chocolate chips for eyes.
- Strawberry santas are mischievous, and tend to disappear quickly! Make enough for family and friends!

CELESTE'S STRAWBERRY SIGHS OR SUSPIROS
My Portuguese neighbor and friend passed away two years ago. I ate these but never made myself. This is her recipe.

Steps:
- Combine sugar, water, lemon peel and juice, and salt in a saucepan.
- Bring to a boil and cook without stirring until syrup reaches soft ball stage (234 degrees). Remove fro heat.
- Beating constantly, pour syrup in egg whites.
- Continue beating until meringue is cool and very thick.
- For each sighs, spoon a heaping tablespoons of meringue onto a buttered baking sheet.
- Top with a strawberry and spoon on just enough more meringue to completely cover and seal in the berry.
- Bake in hot oven 450 degrees for about 3 minutes or until golden.
- Remove to wire rack to cool.
