This creamy Carolina rice pudding is always a favorite.

2 quarts whole milk, or more as needed
1 cup Carolina gold rice
1 cup white sugar
2 eggs, at room temperature
1 cup raisins, or to taste
1 teaspoon vanilla extract
ground cinnamon

Steps:

  • Place milk, rice, and sugar in a large pot. Bring to a boil. Reduce heat and simmer until rice is tender, 20 to 25 minutes.
  • Beat eggs in a bowl. Add a small amount of the rice mixture to the eggs to temper them. Pour mixture into the pot; add raisins and vanilla extract. Let cook until thickened, 15 to 20 minutes more. Add more milk if pudding gets too thick. Pour into a serving bowl and sprinkle cinnamon on top.

A kitchen torch is an inexpensive, handy tool for quickly caramelizing sugar into crackled tops for these dense puddings made with Arborio rice. If you don't have a kitchen torch, you can brown tops under the broiler, but the sugar may not melt completely.

3 cups whole milk
1/2 cup Arborio rice
1/2 vanilla bean, seeds scraped and reserved
3/4 cup heavy cream
1/4 cup cup granulated sugar and 1/4 teaspoon coarse salt
2 large egg yolks
Pinch of ground cinnamon, plus more for sprinkling
1/4 cup turbinado or other raw sugar

Steps:

  • Preheat oven to 350 degrees. Put milk, rice, and vanilla bean and seeds into a medium saucepan. Bring to a simmer. Cook, stirring occasionally, until rice has absorbed most of the liquid, 15 to 20 minutes. Remove from heat. Discard vanilla bean.
  • Whisk cream, granulated sugar, salt, yolks, and cinnamon in a bowl. Pour into rice mixture, stirring constantly. Return to heat; bring to a simmer. Divide among four 6-ounce ramekins set in a roasting pan; add boiling water halfway up sides.
  • Bake until almost set, 15 minutes. Let cool 10 minutes.
  • Sprinkle tops with raw sugar, dividing evenly. Using a kitchen torch, caramelize sugar. Sprinkle with cinnamon.

For whatever reason, rice pudding is usually not near the top when people list their favorite desserts, but despite that, it's a proven crowd-pleaser, and quite easy to make, especially using this simplified, one-pot method.

½ cup uncooked long-grain white rice
¼ teaspoon kosher salt
1 cup water
¼ cup white sugar
1 ⅓ cups milk
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
1 large egg yolk
1 tablespoon cold butter
2 tablespoons dried cherries, chopped

Steps:

  • Place rice, salt, and water into a saucepan. Bring to a boil over medium-high heat. Reduce heat to low, cover, and cook until tender, about 20 minutes. Remove from heat; sprinkle with sugar and pour in milk. Stir with a whisk until until the thin layer of cooked-on starch at the bottom of the pan is cleared and incorporated into the mixture, 2 or 3 minutes.
  • Place pan over medium heat, stirring frequently, until it reaches your desired of level of doneness and creaminess, 8 to 10 minutes. The longer it cooks, the thicker and stickier it will be. Remove from heat. Add vanilla and cinnamon. Very quickly whisk in the egg yolk (to prevent it from cooking). Whisk for about 1 more minute. Add butter and dried cherries; stir thoroughly.
  • Transfer warm pudding to serving dishes. Cool to room temperature. Cover and refrigerate until thoroughly chilled, 3 to 4 hours.

Steps:

  • Combine cooked rice, 1/2 cup Cheddar cheese, sour cream, and red pepper. Mix well.
  • Spoon mixture into a lightly greased 1 1/2-quart casserole.
  • Cover and bake at 350 F for 15-20 minutes.

3 large eggs
1 1/4 cups sugar
1 1/2 teaspoons vanilla extract
1 1/4 teaspoons ground nutmeg
1 1/4 teaspoons ground cinnamon
1/4 cup unsalted butter, melted
2 cups milk
1/2 cup raisins
1/2 cup pecans, coarsely chopped
5 cups white bread cubes, very stale
2/3 cup heavy cream
1 teaspoon Grand Marnier
1 teaspoon vanilla extract
1/4 cup sugar
1 teaspoon brandy
2 tablespoons sour cream

Steps:

  • In a large bowl of an electric mixer, beat the eggs on high speed until extremely frothy, about 3 minutes (or with a metal whisk for about 6 minutes).
  • Add the sugar, vanilla, nutmeg, cinnamon and butter and beat on high until well blended.
  • Beat in the milk, then stir in the raisins and pecans.
  • Place the bread cubes in a greased loaf pan.
  • Pour the egg mixture over them and toss until the bread is soaked.
  • Let sit until you see only a narrow bead of liquid around the pan's edges, about 45 minutes, patting the bread down into the liquid occasionally.
  • Place in a preheated 350F oven.
  • Immediately lower the heat to 300F and bake 40 minutes.
  • Increase oven temperature to 425F and bake until pudding is well browned and puffy, about 15 to 20 minutes more.
  • To serve, spoon in ½ cup hot bread pudding and top with ¼ cup Chantilly Cream.
  • Chantilly Cream:.
  • Makes about 2 cups.
  • Refrigerate a medium-size bowl and beaters until very cold.
  • Combine cream vanilla, brandy and Grand Marnier in the bowl and beat with electric mixer on medium speed 1 minute.
  • Add the sugar and sour cream and beat on medium just until soft peaks form, about 3 minutes.
  • Do not over beat. Over beating will make the cream grainy.

3 tbsp. sugar
1/8 tsp. ground nutmeg
1/8 tsp.salt
1 tbsp. vanilla
1 c. cooked rice
1/4 c. toasted nuts

Steps:

  • Combine raisins, milk, and cream in med. saucepan; place over low heat. Beat the eggs with the sugar, nutmeg, salt and extract until thoroughly blended. Mix with the cooked rice. Stir the hot mixture with the raisins into the rice mixture and turn into a quart sprayed dish that is deep. Set in a shallow pan with hot water. Put in a 350 oven. Bake 15 minutes then sprinkle top with the nuts and continue baking 15 to 20 min. or until custard is barely set in the center of the pudding. Remove from the oven and set in a pan of cold water to cool quickly and keep custard creamy. Serve pudding warm or cold. Top with sweetened whipped cream or whipped dessert topping.
