Herb-Roasted Beef Rib-eye with Roasted Shallots image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 2h25m

Yield 2 to 4 servings

Number Of Ingredients 19

One 2-inch-thick boneless rib-eye (1 1/2 pounds), tied with 2 pieces of twine to keep it together in a compact round shape
Kosher salt and freshly cracked black pepper
1 tablespoon ground paprika
1/2 teaspoon ground cumin
1/2 teaspoon dry mustard
2 tablespoons canola oil
4 ounces (1 stick) unsalted butter
10 sprigs fresh thyme
4 sprigs fresh rosemary
1/2 head garlic, cloves smashed
Fleur de sel, for sprinkling
2 tablespoons aged balsamic vinegar
Extra-virgin olive oil, for drizzling
Roasted Shallots, recipe follows
8 shallots, cut in half through the root, skins left on
2 tablespoons olive oil, plus more for finishing
1 teaspoon fresh thyme leaves
Kosher salt and freshly cracked black pepper
1 tablespoon balsamic vinegar

Steps:

  • Season the steak rather liberally with kosher salt. Bring it to room temperature, about 1 hour outside of the fridge.
  • Preheat the oven to 325 degrees F.
  • Combine the paprika, cumin, mustard and a few turns of freshly cracked pepper in a small bowl. Season the steak with the rub.
  • Heat the canola oil in a saute pan over high heat until smoking. Add the steak and sear on all sides, about 3 minutes per side. Add the butter, thyme, rosemary and garlic. Reduce the heat to medium low and baste the steak with the butter as it begins to brown, 2 to 3 minutes (without burning).
  • Transfer the steak to a rack in a roasting pan and top with a few pieces of the herbs and garlic and 3 spoonfuls of the butter. Roast to an internal temperature of 120 degrees F for medium rare, 7 to 10 minutes. Allow the meat to rest for 15 minutes before slicing.
  • Finish the sliced meat with a sprinkle of fleur de sel and a drizzle of aged balsamic and olive oil. Serve with the roasted shallots and a simple watercress salad if desired.
  • Preheat the oven to 400 degrees F.
  • Toss the shallots with the olive oil and thyme and season with salt and pepper. Lay the shallots on a baking sheet cut-side down. Roast until the shallots are very tender, about 25 minutes.
  • Toss the shallots with the vinegar and additional olive oil.

CHAR-CRUSTED RIB EYE, GARLIC BUTTER MUSHROOMS & YUKON GOLD

Char-Crusted Rib Eye, Garlic Butter Mushrooms & Yukon Gold image

A great steak starts with a great cut of beef and for me that means USDA Prime. Less than 2% of all beef is graded USDA Prime but the extra cost is worth every penny, IMHO. Look for an amply and evenly marbled Rib-Eye, preferably bone in, of about 1.5 " thickness. The meat should be a pale cherry red in color and be firm with a creamy-white fat marbling throughout. Reject two-toned meat. To prepare the steak for grilling, remove it from the refrigerator at least 45 minutes prior to grilling to allow it to achieve room temperature. I use "Char Crust" Roasted Garlic & Peppercorn rub on the steak. This rub leaves a beautiful, mouth-watering crust on the steak. I prefer to enjoy a great steak with a couple simple sides. Garlic buttered Crimini (baby Portobellos) mushrooms and a Yukon Gold potato. (Recipe for sides in the directions.)

Provided by Three-olive Martini

Categories     Steak

Time 35m

Yield 1 serving(s)

Number Of Ingredients 4

1 (12 -16 ounce) rib eye steaks (12 oz for boneless 16 oz bone-in) or 1 (12 -16 ounce) usda prime steak (12 oz for boneless 16 oz bone-in)
1 tablespoon peppercorn (a.k.a. Char Crust Roasted Garlic and Peppercorn rub)
4 -6 cremini mushrooms (baby Portobellos)
1 medium yukon gold potato

Steps:

  • Remove steak from refrigerator 45 minutes prior to grilling. Apply Char Crust Roasted Garlic and Peppercorn rub and let sit to warm to room temperature. Heat grill to accomplish searing. Put steak on grill and turn 90° one minute later. After another minute flip the steak over and after another minute turn steak 90° again to accomplish the great grill marks. Turn grill down to 350° and continue to grill for another 10-15 minutes depending on your desired degree of doneness, flipping steak half way through. Baste steak with a little EV olive oil when you turn the heat down and when you flip it to help maintain the beautiful char and moistness. When steak is done to your taste, remove from grill and let sit for 3-4 minutes covered with aluminum foil.
  • A steak of this quality should be enjoyed with a great Cabernet Sauvignon.
  • Sides:.
  • Garlic-butter Mushrooms.
  • Garlic-butter marinade: (Mix up in a small ramekin).
  • 1 ounce of EV olive oil.
  • 1 tsp butter.
  • 1 clove garlic finely chopped.
  • 1/8 tsp fresh cracked pepper.
  • 1/8 tsp salt.
  • Remove the stems from 4-6 mushrooms and dredge the mushroom caps well in the garlic butter mixture. Place them head down on a 12"x12" square of aluminum foil and wrap up and seal into a packet for the grill. Put this packet on the grill when your turn the heat down to 350° after searing your steak and they should be done perfectly in about 12-15 minutes.
  • Seasoned Yukon Gold.
  • After a good scrubbing, stab the Yukon Gold with a fork several times. Rub the skin with a small amount of EV olive oil to moisten it, then season the skin with salt, pepper and some chive flakes and wrap the potato in aluminum foil. The potato will take about an hour on the grill @ 350° so make your cooking plans accordingly.
  • Bon Appetite!

BEEF RIBEYE ROAST WITH HERB SHALLOT SAUCE

Beef Ribeye Roast With Herb Shallot Sauce image

Make and share this Beef Ribeye Roast With Herb Shallot Sauce recipe from Food.com.

Provided by Chef GreanEyes

Categories     Roast Beef

Time 1h35m

Yield 1 roast, 6-8 serving(s)

Number Of Ingredients 9

1 beef ribeye roast (4 to 6 pounds)
2 tablespoons chopped fresh thyme
2 tablespoons garlic-pepper seasoning
2 tablespoons minced shallots
2 teaspoons chopped fresh thyme
1 cup dry red wine
2 teaspoons country dijon-style mustard
1 tablespoon butter, softened
salt and pepper

Steps:

  • Heat oven to 350°F Combine 2 tablespoons thyme and garlic-pepper seasoning; press evenly onto all surfaces of beef roast.
  • Place roast, fat side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat. Do not add water or cover. Roast in 350°F oven 1-3/4 to 2 hours for medium rare; 2 to 2-1/2 hours for medium doneness.
  • Remove roast when meat thermometer registers 135°F for medium rare; 150°F for medium. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare; 160°F for medium.).
  • Meanwhile skim fat from drippings. Combine drippings, shallot and 2 teaspoons thyme in medium saucepan. Cook and stir over medium heat 2 to 3 minutes or until shallots are crisp-tender. Stir in wine and mustard; bring to a boil. Reduce heat; simmer 8 to 10 minutes or until sauce is reduced to 3/4 cup. Stir in butter. Season with salt and pepper as desired.
  • Carve roast into slices. Serve with sauce.

GRILLED RIB-EYE STEAKS

Grilled Rib-Eye Steaks image

The char of a hot grill brings out the bold beef flavors of these steaks, which are simply seasoned with salt and pepper.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Number Of Ingredients 3

Vegetable oil, for grates
4 bone-in rib-eye steaks (1 pound each, 1 1/2 inches thick), preferably pasture-raised
Coarse salt and freshly ground pepper

Steps:

  • Heat grill to high; clean and lightly oil hot grates. Let steaks stand at room temperature for 30 minutes. Generously season both sides of steaks with salt and pepper. Grill steaks, rotating once to create hatch marks, until well-browned on the outside and cooked to desired doneness, 6 to 7 minutes per side on a charcoal grill (or 8 to 9 minutes per side on a gas grill) for medium-rare (about 125 degrees). Transfer to a platter; cover with foil. Let rest for 10 minutes. Slice steaks against the grain.

ROAST BEEF WITH CARAMELIZED SHALLOTS

Roast Beef with Caramelized Shallots image

This holiday-worthy roast features shallots that become very tender when roasted; tossed with balsamic vinegar and brown sugar, they taste like sweet onion jam.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Time 2h

Number Of Ingredients 7

5 3/4 pounds boneless rib-eye roast (with fat), tied, if desired
Coarse salt and ground pepper
2 pounds shallots, peeled and halved, if large
2 teaspoons light-brown sugar
2 teaspoons balsamic vinegar
1 cup dry red wine
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 500 degrees. Season beef with salt and pepper. Place in a large roasting pan; roast until golden brown, about 30 minutes.
  • Reduce oven temperature to 325 degrees. Place shallots around beef; roast until an instant-read thermometer inserted into thickest part of beef registers 130 degrees. For medium-rare, 1 to 1 1/4 hours more, turning shallots with tongs after about 30 minutes.
  • Transfer beef to a platter; tent loosely with foil. Transfer shallots to a shallow bowl (continue cooking if not golden brown). Toss with sugar and vinegar; season with salt and pepper. Cover with foil to keep warm.
  • Pour off fat from pan. Add wine; cook over medium heat until syrupy, scraping bottom of pan, 2 to 4 minutes. Add 2 cups water; cook until reduced by half, 4 to 8 minutes. Strain into a small bowl; whisk in mustard and any accumulated juices from beef. Season with salt and pepper; serve with beef and shallots.

CHARRED SHALLOTS WITH LABNEH AND PITA

Charred Shallots With Labneh and Pita image

The flavor of roasted caramelized onions is a universal favorite that add sweetness and depth to countless recipes. When grilled, the onions - and in this case shallots - take on a smoky char as well. Here, they are served on top of thick labneh (strained Middle Eastern yogurt) to be eaten as a side or an unusual dip with grilled pita. This recipe calls for grilling the shallots slowly over indirect heat, giving them plenty of time to soften, brown and absorb the smoke. Or you can use the oven instead if need be, but you won't get that smoky flavor.

Provided by Melissa Clark

Categories     dips and spreads, appetizer

Time 1h30m

Yield 4 servings

Number Of Ingredients 13

4 medium shallots
1 medium white onion
5 garlic cloves, peeled and left whole
5 tablespoons extra-virgin olive oil, more as needed
2 tablespoons chopped parsley, plus a handful of whole leaves
1 tablespoon chopped mint, plus a handful of whole leaves
1 tablespoon finely chopped preserved lemon
1 teaspoon lemon juice
Kosher salt, as needed
Black pepper, as needed
2 cups labneh or full-fat Greek yogurt
Sumac, as needed
Grilled pita, for serving

Steps:

  • Peel shallots and halve lengthwise through root end. Peel onion and cut into 2-inch chunks. Thread shallots and onion chunks onto metal or pre-soaked bamboo skewers. Thread garlic cloves onto a separate skewer. (If you're using the oven, skip skewering and see note on how to prepare the vegetables.)
  • Light or heat one side of grill. Leave the other side bare for indirect grilling. (If using a charcoal grill, mound coals to one side.) Lightly brush skewers with 1 tablespoon of the olive oil and place over bare side of the grill for indirect heat. Cover and cook, turning occasionally, until the garlic is soft, 30 to 35 minutes.
  • When the garlic is soft, remove from grill or oven. Transfer onion and shallot to the hottest part of the grill (add more coals if necessary) and continue cooking, turning occasionally, until onions are almost tender and well charred in spots, 15 to 20 minutes more.
  • When cool enough to handle, coarsely chop onion and shallot and place in a large bowl. Mash garlic and add to bowl. Toss in remaining 4 tablespoons oil, the chopped parsley and mint, the preserved lemon, the lemon juice and the salt and pepper. Taste and add more salt, olive oil and/or lemon juice as needed. This mixture should be highly seasoned.
  • Spread labneh or yogurt on a large platter. Spoon onion mixture over surface. Drizzle with additional oil, and tear mint and parsley leaves and scatter over top. Sprinkle with sumac. Serve with grilled pita.
