CHAR SIU (CHINESE BBQ PORK)



Char Siu (Chinese BBQ Pork) image

"Char siu" literally means "fork roast" - "char" being "fork" (both noun and verb) and "siu" being "roast" - after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire. This is best cooked over charcoal, but it's important to cook with indirect heat.

2 pork tenderloins
½ cup soy sauce
⅓ cup honey
⅓ cup ketchup
⅓ cup brown sugar
¼ cup Chinese rice wine
2 tablespoons hoisin sauce
½ teaspoon red food coloring
1 teaspoon Chinese five-spice powder

Steps:

  • Cut pork with the grain into strips 1 1/2- to 2-inches long; put into a large resealable plastic bag.
  • Stir soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, red food coloring or red bean curd (see Cook's Note), and Chinese five-spice powder together in a saucepan over medium-low heat. Cook and stir until just combined and slightly warm, 2 to 3 minutes. Pour the marinade into the bag with the pork, squeeze air from the bag, and seal. Turn bag a few times to coat all pork pieces in marinade.
  • Marinate pork in refrigerator, 2 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove pork from marinade and shake to remove excess liquid. Discard remaining marinade.
  • Cook pork on preheated grill for 20 minutes. Put a small container of water onto the grill and continue cooking, turning the pork regularly, until cooked through, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

1 tbsp garlic salt
4 tbsp brown sugar
2 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp hoisin sauce
2 tbsp red wine
1 tbsp Shaoxing wine
1 cube red fermented bean curd
1 tsp five spice powder
2 tbsp honey
2 tsp water
0.25 tsp red food coloring

Steps:

  • We'll cut our pork shoulder into long slices, roughly about 1 inch thick.
  • To a bowl, we'll add:
  • Place the meat into a ziploc bag, pour the sauce in, and massage the pork for about 2 minutes so that the sauce is able to finesse its way into the meat. Afterwards, we'll push all the air out of the bag and seal it.
  • Preheat the oven to 425° F or 218° C.
  • Now, we'll be placing the pork into the oven and taking it out periodically to lather it again with either our leftover pork marinade, or honey diluted with water.
  • Once the char siu has finished its last cycle in the oven, we'll lather each side with our diluted honey.

1 boneless pork shoulder roasting joint, about 1.1-1.5kg
1 small onion, chopped
1 jar Blue Dragon Char Siu sticky sauce
1 gem lettuce, shredded
1 small tub soured cream
1 bunch spring onions, sliced diagonally
6 tortilla wraps

Steps:

  • Place the pork in a lightly greased slow cooker. Add the onion and pour the Char Siu sauce over the pork.
  • Cover and cook on the LOW setting for 7 to 9 hours.
  • When cooked, lift the pork out of the sauce, discard the skin and fat, and with two forks shred the meat. Pour the sauce and pork into a bowl and toss to coat. Serve the pulled pork in a tortilla wrapped with shredded lettuce, soured cream and spring onion.

The secret to this char siu recipe lies in the marinade and basting the BBQ pork while it's roasting. A classic Cantonese dish that's simple to make at home.

1 lb 2 oz (500 g) pork shoulder
2 garlic cloves, finely chopped
Thinly sliced scallions, to serve
1 Tbsp. light soy sauce
1 tsp. dark soy sauce
½ tsp. white pepper
1 Tbsp. hoisin sauce
2 cubes red fermented bean curd, mashed
½ tsp. Chinese five-spice
1 Tbsp. honey
1 Tbsp. Mei Kuei Lu Chiew liquor
A few drops red food coloring (optional)

Steps:

  • Cut the pork lengthways into strips 2 inches wide and 1-inch thick and put into a nonreactive container. Combine the marinade ingredients in a saucepan over low heat and stir together. Leave to cool, then stir in the garlic and massage the marinade into the pork. Cover with plastic wrap and marinate in the refrigerator for 5-6 hours or overnight.
  • Preheat the oven to 425°F. Bring the pork back to room temperature and drain off the excess marinade into a small bowl. Place the pork on a rack in the middle of the oven and put a roasting pan containing a cupful of hot water underneath on the bottom rack. Roast the meat for 20 minutes, basting with the marinade occasionally. Reduce the oven to 350°F and roast for a further 15 minutes or until the internal temperature of the meat reaches 165°F.
  • Cool the pork briefly, then cut it into bite-size pieces. Garnish with spring onions and serve as an appetizer or with steamed rice as a light meal.

9 tablespoons margarine, divided
5 tablespoons water

2 tablespoons sesame seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Combine all-purpose flour, 4 1/2 tablespoons margarine, water, and confectioners' sugar in a large bowl; knead until a dough forms.
  • Combine remaining 4 1/2 tablespoons margarine and cake flour in a separate bowl; knead until a dough forms.
  • Wrap the cake flour dough around the all-purpose flour dough; roll out into a 8x16-inch sheet. Fold into 3 sections as you would an envelope. Roll into a log about 1-inch thick. Flatten to make a 4x31-inch strip; cut into 10 squares.
  • Mix barbeque sauce and barbeque pork together in a bowl.
  • Place 1 tablespoon of the mixture in the center of each square of dough. Brush edges of dough with egg yolk. Roll up dough, sealing the ends. Brush the top of each pastry with egg yolk; sprinkle sesame seeds on top. Transfer pastries to the prepared baking sheets.
  • Bake in the preheated oven until crisp and golden, about 25 minutes.

This legendary Asian street food isn't as hard to make as you might imagine. Add chili paste to the marinade if you want to add a kick. Feel free to substitute the vegetables as desired to make your own unique pork buns!

8 ounces pork, trimmed of fat
2 tablespoons sesame oil
2 tablespoons gochujang
2 ounces Chinkiang vinegar
1 teaspoon sugar
1 garlic clove, grated
1 teaspoon ginger, grated
1/2 teaspoon sesame seeds
1 teaspoon Chinese five spice powder
2 ounces mushrooms, chopped
2 ounces chard leaves, chopped
4 ounces Brussels sprouts, chopped
1 cup all-purpose flour
7/8 cup rice flour
2 tablespoons cornstarch
2/3 cup warm water
2 1/4 teaspoons dry yeast
2 teaspoons sugar

Steps:

  • 1. Trim fat from the pork, and cut pork into strips.
  • 2. Create a marinade using all ingredients except for the meat and vegetables. Thoroughly coat the pork in the marinade, and refrigerate in a sealed container for at least an hour.
  • 3. Add yeast, sugar, and warm water to a mixing bowl. Allow to proof until foamy, about 5 minutes.
  • 4. Using a mixer equipped with dough hooks, gradually blend the flour, cornstarch, and salt into the yeast mixture on low speed. Continue blending until mixture looks shaggy in appearance.
  • 5. Knead dough by hand until there are no dry spots. Spray inside of mixing bowl with cooking spray and roll the dough to coat. Cover with plastic wrap and allow to rest in a warm place until doubled in size, about an hour.
  • 6. While the dough is rising, heat a pan to mediunm-high, and cook marinaded pork for a few minutes, reserving some of the marinade from the container. Pork will contunue to cook in remaining steps, so don't worry about doneness.
  • 7. Add chopped vegetables and the rest of the marinade to the pan, and heat while stirring thoroughly.
  • 8. Remove pork and vegetables from pan and allow to cool in refrigerator while preparing the dough.
  • 9. Divide the dough into 8 equal pieces, and roll each into a ball. As you roll out each ball, cover the remaining dough to keep it from drying out.
  • 10. Flatten one dough ball into a disc that's about 5 inches across. Add 1/8 of the pork and vegetable mixture to the middle of the disc. Pull up the edges of the disc in a fan-fold pattern as you close up the filling. Pinch together the dough to there are no openings.
  • 11. If using a rice cooker, place a square of parchment paper to cover the holes. Arrange the pork buns, seam-side down, in the steamer so there's an inch of space between them. They will expand in the steamer, so this will avoid them sticking together.
  • 12. Steam pork buns for 10 minutes, or until the dough seems to be set. Remove pork buns from steamer by inverting the steamer onto a plate: removing them individually can cause parts of the surface to break, since the dough will still be somewhat sticky. Repeat for remaining pork buns.
  • 13. Refrigerate pork puns with a layer of parchment paper between them so they don't stick together.
