SEARED RED CHARD

2 tablespoons extra-virgin olive oil
1 small red onion, thinly sliced
10 to 12 cups red chard (2 bunches trimmed and coarsely chopped)
Grated nutmeg, to your taste
Coarse salt and pepper
2 tablespoons red wine or cider vinegar

Steps:

  • Make sure your greens are very dry before preparing recipe. Also, wash and chop them when you come in from market, then they are ready for you to cook up even quicker.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add onions and toss 2 minutes, then add chard in bunches and keep it moving as it wilts up a bit - you are just searing it up. The greens should remain crisp and crunchy. Wilting them all and searing them up should take no more than 3 to 4 minutes. Season the greens with nutmeg and salt and pepper, to taste. Douse the pan with a little vinegar and remove from heat. Toss to cook off vinegar and serve the greens hot.

This method of cooking chard was given to me (in very few words) from an organic farmer who was selling the first chard we ever bought. We tried it and could not believe how delicious this was. Delicious! Double this recipe if you are a large family of veggie eaters.

1 bunch rainbow chard - leaves and stems separated and chopped
1 large onion, chopped
1 tablespoon olive oil
salt and black pepper to taste
2 tablespoons olive oil
4 ounces feta cheese, broken into 1/2 inch pieces

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a baking sheet with olive oil.
  • Toss the chard stems and onions in a bowl with 1 tablespoon olive oil. Season with salt and pepper to taste, and spread onto the prepared baking sheet.
  • Bake in the preheated oven until the chard stems have softened and the onion is starting to brown on the corners, about 15 minutes. Toss the chard leaves with 2 tablespoons of olive oil, salt, and black pepper. Sprinkle the leaves over the stem mixture, then scatter the feta cheese over top.
  • Return to the oven, and bake until the stems are tender, the leaves are beginning to crisp, and the feta is melted and golden, about 20 minutes.

SWISS CHARD RECIPE: OHITASHI & JAPANESE PICKLED STEMS



Swiss Chard Recipe: Ohitashi & Japanese Pickled Stems image

Number Of Ingredients 9

1 large bunch (or two smaller ones) of swiss chard, washed
2 tbsp. apple cider or white wine vinegar
2 tsp. white miso paste
2 tsp. mirin, divided
½ tsp. salt
1 cup dried white rice (optional)
2 tsp. soy sauce
2 tsp. sesame oil
1 tsp. sesame seeds

Steps:

  • Remove the chard stems from the leaves, and keep both. Start by chopping the chard stems down the stalk into small pieces. Place in a bowl with the vinegar, miso paste, 1 tsp. mirin and ½ tsp. salt. Use your hands to massage the sauce into the stalks, mixing well for a couple minutes. Place the chard stem pickles in an airtight refrigerator until used.
  • If making rice, cook the rice as directed. Once cooked, set aside.
  • Bring a pot of water fitted with a steamer to the boil. Add the chard leaves and allow to stem for about 5 minutes, until the leaves have reduced greatly in size. Shock under cold water, then use your hands to squeeze out as much water as possible. Roughly chop the chard leaves, and place in a bowl with the soy sauce, sesame oil, and remaining tsp. of mirin. Gently work the sauces in, mixing and pulling apart the clumps. Top with sesame seeds.
  • Serve the greens along with the rice and pickled stems. You will likely have more stems than you need, so reserve any remaining pickled stems and add to salads or eat as a snack.

1 pound Swiss chard (preferably red; about 2 bunches), ends trimmed
2 tablespoons Japanese soy sauce
1 tablespoon bonito flakes

Steps:

  • Bring a large pot of water to a boil. Working in batches, add chard and cook, adding more chard as space allows, until barely tender, 3 to 4 minutes. Drain, then submerge chard in a bowl of ice water.
  • When chard is cool, drain again, squeeze out excess liquid, and cut into bite-size pieces. Toss chard with soy sauce, top with bonito flakes, and divide among 4 bowls.

1 tablespoon sesame seeds
1 lb spinach, well washed and large stems removed
1 1/2 tablespoons soy sauce
1 1/2 tablespoons mirin

Steps:

  • Toast the sesame seeds in a skillet until lightly colored. Cool.
  • Add the spinach to a large saucepan of boiling water and cook 2 to 3 minutes until wilted.
  • Have an ice bath ready.
  • Drain the spinach in a colander, shock in the ice bath (to retain color of spinach), then drain again.
  • Squeeze dry and place in a bowl.
  • Mix the cooked spinach with the soy sauce, mirin and sesame seeds.
  • Serve at room temperature.
