¼ teaspoon cream of tartar
¾ cup granulated sugar, divided
1 ¼ cups all purpose flour
¼ teaspoon kosher salt
3 cups heavy cream, cold
¾ cup heavy cream, hot
½ cup sugar
6 oz dark chocolate, chopped
fresh blackberry
fresh raspberry
chocolate shaving
8 sprigs fresh mint sprig
ribbon

Steps:

  • Preheat the oven to 350˚F (180˚C). Line 3 baking sheets (work in batches if necessary) with parchment paper and grease with nonstick spray.
  • Make the ladyfingers: In a large bowl, beat the egg whites and cream of tartar with an electric hand mixer until foamy. Gradually add ¼ cup sugar while continuing to beat until stiff peaks form.
  • In a medium bowl, beat together the egg yolks and remaining ½ cup sugar until thick and pale in color, about 3 minutes. Gently fold the yolks into egg white mixture with a rubber spatula. Sift in the flour and salt and fold to incorporate. Transfer the batter to a piping bag or zip-top bag fitted with a large round tip.
  • Release the bottom from a 9-inch springform pan and set the ring in the center of a prepared baking sheet. Starting at the center of the ring and working your way outward, pipe the batter in a spiral pattern, about 1 centimeter thick, leaving a ½-inch border around the edge. Remove the ring. With the remaining batter, pipe 40 3-inch (10-centimeter) long by 1-inch (2½-centimeter) wide cookies onto the remaining 2 prepared baking sheet.
  • Bake the spiral and cookies for 15-17 minutes, until lightly golden around the edges. Do not allow to get too dark. Let cool completely.
  • Make the chocolate mousse: In a large bowl, beat the cold heavy cream with an electric hand mixer until soft peaks form. Add the sugar and beat to incorporate.
  • In a medium bowl, pour the hot heavy cream over the chocolate. Stir with a rubber spatula until melted and smooth.
  • Fold the chocolate mixture into the whipped cream until incorporated.
  • Set the spiral cake base on the bottom of the springform pan and attach the ring. There should be a small gap between the cake and the ring mold. Line the gap on the inside edge of the ring with the ladyfingers, flat sides facing in. You want a snug fit so use as many ladyfingers as needed.
  • Pour the chocolate mousse into the center and smooth in an even layer. Chill until set, at least 4 hours in the refrigerator or about 2 hours in the freezer.
  • Garnish the charlotte with blackberries, raspberries, chocolate shavings, and mint sprigs. Release the springform and tie a ribbon around the outside of the charlotte.
  • Remove the ribbon before slicing and serving. Refrigerate any leftovers for up to 2 days.

This is our version of the classic French Charlotte cake. Everyone seems to take their own spin on it. I love how the sweet/tart mouse and raspberry preserves complements the soft cake and lady fingers.

10 oz 2 1/2 cups frozen raspberries
1/2 cup granulated sugar
Juice from 1 medium lemon (2 Tbsp for mousse + 1 Tbsp for simple syrup below)
1 Tbsp Knox unflavored Gelatin (from 1 1/4 packets)
3 cups heavy whipping cream
6 Tbsp confectioners (powdered sugar)
4 large eggs (room temperature)
2/3 cup granulated sugar
2/3 cup cake flour (make your own with 2 ingredients!)
1/4 tsp baking powder
7 oz pkg Lady Fingers
3-4 Tbsp raspberry preserves or jam
1 cup warm water
1 Tbsp fresh lemon juice
1 Tbsp sugar
1 cup fresh raspberries and mint leaves for garnish

Steps:

  • In medium sauce pan, combine: 10 oz frozen raspberries and 1/2 cup sugar. Cook stirring occasionally until jam consistency. Remove from heat and strain through a sieve, pressing on the fruit with a spoon to extract as much raspberry juice as possible (you should get 2/3 cup syrup).
  • Into the raspberry syrup, stir in 2 Tbsp lemon juice and 1 Tbsp gelatin. Pour syrup back into sauce pan and place back over medium heat, whisk until gelatin is dissolved. Do not boil. Remove from heat and cool to room temp.
  • Line a 9" springform pan with parchment paper. Preheat oven to 350˚F. In the bowl of your mixer with the whisk attachment on high speed, beat 4 eggs for 1 minute. Gradually add 2/3 cup sugar and continue beating on high 7 min until thick and 3 to 4 times in volume.
  • Stir together cake flour and baking powder then sift flour into whipped eggs in 2 additions, folding to incorporate between each addition. Scrape from the bottom to catch any hidden pockets of flour and fold just until incorporated - don't overmix. Bake at 350˚F for 23-25 minutes or until top is golden and springs back when poked lightly.
  • Once it's out of the oven, remove cake from pan by sliding a thin edged spatula around the edges. Transfer to wire rack, peel back parchment and cool to room temp. Then slice cake layers in half horizontally.
  • Cover springform walls with plastic wrap. Trim off 1/2" all around the edges of both cake layers (I used kitchen scissors) and place the first layer into the bottom of your springform pan. Trim about 1/2" off one end of all lady fingers. Place lady fingers in a tight ring, cut-side-down, around the cake base then brush cake with 1/3 of the simple syrup. Brush backs of lady fingers with 1/3 of syrup as well. Spread 1 1/2 Tbsp raspberry preserves over cake. Set aside.
  • With the whisk attachment, beat 3 cups heavy cream with 6 Tbsp powdered sugar on high speed until thick and spreadable. Remove 1 1/2 cups of whipped cream to a piping bag fitted with a star attachment and refrigerate to use as topping later.
  • Once raspberry syrup is completely at room temp (don't wait way too long or it will thicken and become difficult to blend), fold it into remaining big batch of whipped cream adding 1/4 syrup at a time and folding between each addition. This is your mousse.
  • Spread 1/2 of the mousse over cake layer inside the springform. Top with second cake layer, brush with remaining simple syrup and spread with 1 1/2 Tbsp raspberry preserves. Add remaining mousse. Pipe whipped cream and top with fresh raspberries and mint leaves if using. Cover with plastic wrap and refrigerate until set (3 hours or overnight). To serve, remove springform walls and plastic wrap.

7 Egg Whites (or the equivalent to 250 gr)
75 gr (1/3 cup) Caster Sugar
4 Egg Yolks (or the equivalent to 160 gr)
100 gr (2/3 cup) Plain Flour
100 gr (3/4 cup + 1 tbsp) Cornstarch
200 gr (0,4 lb) Strawberries
3 Egg Yolks (or the equivalent to 120 gr)
30 gr (2 tbsp) Caster Sugar
1 teasp. Vanilla Paste
8 gr (1 tbsp) Gelatine Powder
350 ml (1 1/2 cup) Heavy / Thickened Cream
600 gr (1,2 lb) Fresh Strawberries
120 ml (1/2 cup) Strawberry Coulis or Sauce (optional)

Steps:

  • Preheat your oven on 180°C/350°F. Line two large baking flat trays with Baking Paper. Draw the shape of the Pastry Ring (see note 1 for size) you will be using on one of the Baking Paper, and flip it.
  • In your Stand Mixer, whip the Egg Whites until you reach soft peaks. Gradually add the Caster Sugar, a little bit at the time, until you get Stiff Peaks.
  • Slowly beat in the Egg Yolks, then the Plain Flour and Cornstarch. Stop as soon as all incorporated to avoid deflating the Egg Whites.
  • Transfer the Ladyfinger Biscuits Batter into a large Pastry Bag with a large round nozzle.
  • Make the base of the cake on the sheet with the circle drawn: start from the centre of the ring and create a spiral around it with the batter, stopping about 2cm/0.8inch from the edges.
  • Make the edges of the cake: pipe small lines of batter next to each other in long rows (they should touch and be about the same height as your pastry ring). (see note 2)
  • Bake for 8 to 10 minutes or until puffed and golden. Transfer on a cooling rack with the baking paper and set aside to cool down.
  • Blend the Strawberries and pour the liquid through a thin mesh sieve to discard any seeds. Place the blended Strawberries in a small pot with the Vanilla Paste and turn on low heat (see note 3)
  • In a separate bowl, whisk the Egg Yolks and Sugar. When the strawberry juice starts to simmer, add the Yolks/Sugar. Continuously stir with a stiff spatula until the liquid starts to thicken (see note 4). Remove from the heat.
  • Mix the Gelatine Powder with a little bit of cold water and set aside for a couple of minutes, then whisk it into the Strawberry Cream until smooth. Cover with wrap and place in the fridge to cool (see note 5).
  • When the strawberries reach room temperature, start whipping the Heavy Cream until almost stiff. Gently fold in the whipped Cream in the Strawberry Cream in 3 or 4 times. Set aside.
  • Place the Pastry Ring over a flat baking tray (or the tray you will use to serve the cake). Optional: place an acetate strip on the inside edge of the ring.
  • Dice about 200gr (0,4lb) of the strawberries and set aside.
  • Slice the bottom of the ladyfinger biscuit strips if needed so they can sit flat. They should be the same height as the Ring (or slightly higher if preferred).
  • Place the ladyfinger biscuit base inside the Ring, and the ladyfinger Biscuit strips around it. Make sure the edges are packed in really tight (see note 6).
  • Pour half of the Strawberry Cream over the biscuit base. Cover with the Diced Strawberries (and the rest of the ladyfinger cookies, cut into small cubes, if any leftover).
  • Pour the rest of the Strawberry Cream over and use a small offset spatula to smooth the top.
  • Optional: Cover with the Strawberry Coulis/Sauce.
  • Spread the rest of the fresh Strawberries over the Cream and Coulis. Place in the fridge to set for at least 2 or 3 hours.
  • Optional: before serving, you can sprinkle some Desiccated Coconut, Dark Chocolate Shaving and/or Fresh Mint Leaves over the fresh Strawberries

1 (12 ounce) bag individually quick frozen raspberries, thawed
3/4 cup sugar, plus
extra sugar, for dusting pan
1 packet unflavored gelatin
1/4 cup cold cranberry-raspberry juice or 1/4 cup water
1 1/2 cups heavy whipping cream
2 (3 ounce) packages unfilled ladyfingers
10 ounces fresh raspberries (2 1/2 cups)

Steps:

  • Stir and press raspberries with back of wooden spoon through a strainer set over a bowl (you'll have about 1 1/3 cup puree).
  • Add sugar; stir until dissolved.
  • Sprinkle gelatin over juice in a medium saucepan.
  • Let stand 1 minute.
  • Then stir over medium heat until gelatin dissolves.
  • Add half the puree; heat until warm.
  • Stir into puree in bowl.
  • Refrigerate, stirring occasionally, 1 hr or until consistency of unbeaten egg whites.
  • Meanwhile lightly coat an 8 or 9" Springform pan with nonstick spray.
  • Dust with sugar; shake out excess.
  • Lay strips of ladyfingers, rounded sides out, around inside of pan.
  • Cover bottom of pan with ladyfingers, flat sides down and trimmed to fit.
  • Beat heavy cream in large bowl with mixer on medium-high speed until soft peaks form.
  • Remove 1 cup and reserve.
  • Fold remaining whipped cream into raspberry puree until blended.
  • Remove 1 cup; reserve.
  • Spread remaining raspberry cream evenly in prepared pan.
  • Scrape reserved whipped cream into the bowl and fold into reserved raspberry cream until well blended.
  • Scrape on top of first mixture; spread carefully into an even layer.
  • Cover pan with plastic wrap and refrigerate overnight at least 4 hours.
  • UP TO 1 DAY BEFORE SERVING: Cover top of cake with a layer of raspberries, then remove pan sides.
  • Refrigerate until serving.

  • For the jam, place the strawberries in a small pan with the sugar and cook over a low heat until the sugar has melted. Add the knob of butter. Bring to the boil and boil vigorously for four minutes, or until the temperature on a sugar thermometer reaches 104C/219F (setting point).
  • For the sponge rolls, preheat the oven to 220C/fan 200C/425F/Gas 7. Grease and line two 33cm x 23cm/13 x 9in Swiss roll tins with baking parchment. Whisk the eggs and sugar together in a large bowl until the mixture is light and frothy and the whisk leaves a trail when lifted out.
  • Bake in the two Swiss roll tins for 10–12 minutes, or until the sponges are golden-brown and begin to shrink from the edges of the tin. While the cakes are cooking, place two pieces of baking parchment a little bigger than the size of the tin on the work surface and sprinkle with caster sugar.
  • Turn the cakes out onto the sugared parchment and peel off the paper. Trim the edges of the sponges with a sharp knife and score 2cm/¾in from the short edge, being careful not to cut right through.
  • Leave to cool slightly, then spread with jam and roll up the cakes firmly from the scored end and set aside.
  • For the bavarois, soak the gelatine in cold water until soft. Purée 450g/1lb of the raspberries in the bowl of a food processor. Pass the raspberries through a sieve over a bowl and discard the seeds.
  • Pour the milk into a pan and heat until just under boiling point. Whisk the egg yolks and caster sugar together until pale and creamy. Pour the hot milk over the eggs and whisk together.
  • Meanwhile, line the base of a 2 litre/3½ pint round bowl with cling film, to help turn the Charlotte royale out. Slice the Swiss rolls into 1.5cm/⅝in slices and use to line the base and sides of a bowl.
  • In a bowl, whip the cream until soft peaks form when the whisk is removed from the bowl and stir into the raspberry bavarois. Fold in the remaining 100g/3½oz of raspberries and the small strawberries and spoon into the lined bowl.
  • Cover with the remaining cake slices. Cover with cling film and chill in the fridge overnight until set.
