EASY BAKED BEANS

Steps:
- Preheat the oven to 350 degrees F.
- Fry the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving the drippings, and drain it on paper towels. Crumble and set aside.
- Add the onion to the pan with the bacon drippings and saute until softened, a couple minutes. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon, and mix well.
- Pour the beans into a 3-quart casserole and bake, uncovered, for about 45 minutes.
ANITA'S CHEATER BEANS
Steps:
- In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes. Then add the onions and cook until the bacon is cooked but not crisp and the onions are translucent, another couple of minutes. Do not drain the bacon grease because it gives the beans a good taste. Add the beans, peppers, tomatoes, garlic and 1 1/2 cups water, and cook for 10 to 15 minutes. Add some salt and pepper and the cilantro and remove from the heat.

- Cut bacon into bite size pieces. Cook bacon, drain on paper towels, set aside. Note: Don't let it get too crispy. Meanwhile mix all the remaining ingredients in a 9"x13" baking dish or a 3 quart casserole. Add in reserved bacon, and mix again. Bake uncovered for 1 hour at 350°F. Let stand 1/2 to 1 hour to cool prior to serving.

- Drain soaking liquid from beans, and place them in a Slow Cooker.
- Stir ketchup, water, molasses, onion, mustard, salt, bacon, and brown sugar into the beans until well mixed.
- Cover, and cook on LOW for 8 to 10 hours, stirring occasionally if possible, though not necessary.

These are just delicious,and since you start with canned beans I call them cheater beans. Must be the molasses and brown sugar and bacon, because this is one of my favorite sides. I even eat these as a snack with brad and butter.

Steps:
- 1. Drain the juice that is floating on top of beans, unless you like them soupy.
- 2. Spray a large casserole with non stick spray
- 3. In a large bowl combine everything except bacon.
- 4. Pour bean mixture in prepared casserole, cover with bacon strips.
- 5. Bake in a preheated 350 degree oven for 1 hour, or until bubbly and bacon is crispy.

- Heat the olive oil in a heavy skillet over a medium-high heat. When the oil starts to ripple, add the onions and cook, stirring until they turn transparent. Turn the heat to medium low and cook stirring occasionally, until golden, about 8 minutes.2. Turn the heat up to medium-high and add the tomato paste. Cook stirring for 1 minute until it turns a deep orangey red, taking care not to let it burn. Stir in the molasses, then add the diced tomatoes and the chipotle pepper or smoked paprika. Mix well. Cook for about 15 to 20 minutes or until the sauce has reduced by about a third. Add salt to taste.
- Cook the beans gently for about 20 minutes, adding a little more apple juice if they start to look too dry. When they are ready, add a little more vinegar if desired, and take out the chipotle pepper. Serve.
