Cheddar-and-Herb Boxty image

Boxty are Irish potato pancakes. They're often served for brunch, but they taste great with corned beef.

3 tablespoons unsalted butter, plus more if needed
1 large onion, finely chopped
Kosher salt
2 pounds russet potatoes, peeled and chopped
1/4 cup milk
1 large egg yolk
1/3 cup all-purpose flour, plus more for dusting
1/2 cup shredded Irish cheddar cheese (about 2 ounces)
3 tablespoons finely chopped fresh parsley
Freshly ground pepper
Finely chopped fresh chives, for topping

Steps:

  • Melt 2 tablespoons butter in a medium skillet over medium heat. Add the onion, season with salt and cook, stirring occasionally, until golden brown and very soft, 25 to 30 minutes. Let cool.
  • Meanwhile, place the potatoes in a saucepan, cover with water by 1 inch and season with salt. Bring to a boil, then reduce the heat and simmer until tender, 10 to 12 minutes. Drain, then transfer to a large bowl, add the milk and mash until smooth. Let cool at least 30 minutes.
  • Preheat the oven to 250 degrees F and line a baking sheet with parchment paper. Add the cooked onion, egg yolk, flour, cheese, parsley, 1 teaspoon salt and a few grinds of pepper to the potatoes; stir until combined. Scoop 1/4 cupfuls of the potato mixture onto a lightly floured surface and form into twelve 3-inch pancakes.
  • Melt the remaining 1 tablespoon butter in a large nonstick skillet over medium-high heat. Working in batches, cook the pancakes until golden brown on the bottom, about 4 minutes. Gently flip, adding more butter to the pan if necessary, and continue cooking until browned on the other side, 3 to 4 more minutes. Transfer to the prepared baking sheet and keep warm in the oven until ready to serve. Top with chives.

2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground pepper
1 stick cold unsalted butter, cut into 1/2-inch pieces
1/2 cup heavy cream, plus more for brushing
2 large eggs
4 ounces sharp cheddar, shredded (1 cup)
1/2 cup thinly sliced scallions (from 4 to 6), plus more for sprinkling
2 tablespoons fresh dill sprigs, plus more for sprinkling

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with parchment. In a large bowl, whisk together flour, baking powder, salt, and pepper. Toss butter in flour mixture to evenly coat, then press between your fingers until mixture has the texture of coarse meal, with a few pea-size pieces remaining. In another bowl, whisk together cream and eggs.
  • Make a well in flour mixture; add egg mixture, cheddar, scallions, and dill. Stir together with a fork until dough begins to form but mixture is still crumbly. Turn out onto a lightly floured surface; knead just to combine (do not overwork). Pat out 1/2 inch thick. With a floured 2 3/4-inch biscuit cutter, cut out rounds, as closely together as possible; place on prepared sheet. Gather scraps; pat out again and repeat.
  • Brush tops with cream; sprinkle with more dill and scallions. Bake, rotating sheet halfway through, until golden brown, 23 to 25 minutes. Let cool completely.

1/4 lb about 4 thick slices bacon, coarsely chopped
4 cups all-purpose flour, plus additional for surface and cutting dough
1 tablespoon baking powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cayenne
2 teaspoons kosher salt
1 cup cold unsalted butter, cut into small cubes
2 cups slightly packed coarsely grated cheddar cheese
1/3 cup finely chopped chives
2 tablespoons packed thyme leaves
1 1/2 cups cold buttermilk, well-shaken
1/4 cup maple syrup, divided
maldon salt
fresh ground black pepper

Steps:

  • Preheat oven to 425 degrees.
  • Add bacon to a medium skillet and place over medium-high heat. Cook, stirring, until bacon is crispy and fat is rendered, about 7 minutes. Using a slotted spoon, remove bacon to a paper towel-lined plate. Brush a 9" x 13" quarter sheet pan with bacon fat from the skillet and line with parchment paper. Brush parchment with additional bacon fat and set aside. Reserve remaining bacon fat.
  • In a large bowl, combine flour, baking powder, baking soda, cayenne, and salt. Add butter and using a pastry blender or two knifes, cut butter into flour until butter is pea-sized. Using your hands, begin to work the mixture with the tips of your fingers, breaking up the butter into smaller pieces and incorporating the flour until the mixture resembles coarse meal. Add cheddar, chives, thyme, and bacon and mix to distribute.
  • Combine buttermilk, 1 tablespoon reserved bacon fat, and 2 tablespoons maple syrup. Add wet ingredients to dry and mix until just incorporated. Turn mixture out on a lightly floured surface and knead 2-3 times until dough sticks together. Do not overwork.
  • Pat into a 7" x 11" rectangle, about 1" thick, using flour under surface to prevent sticking as necessary. Using a floured knife, cut into 12 squares, three by four. Transfer to prepared sheet pan, spacing squares closely together but not touching.
  • Combine 1 tablespoon reserved bacon fat with remaining 2 tablespoons maple syrup. Brush tops with mixture and sprinkle with Maldon salt and black pepper. Transfer to oven and bake until tops are golden brown and biscuits are just baked through, about 25-30 minutes. Tent with foil during baking if tops are too brown. Remove from oven and let cool slightly before serving.

1 cup (2 sticks) cold unsalted butter, cut into small pieces, plus more for baking sheet
1/2 cup cold shortening
1/2 cup minced scallions
1/4 cup minced fresh flat-leaf parsley
2 cups grated sharp cheddar cheese
1 1/2 cups buttermilk

Steps:

  • Heat oven to 425 degrees. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Using your hands or a pastry cutter, cut in butter with the dry ingredients until the mixture is coarse and crumbly. Then cut in the shortening, and mix in the scallions, parsley, and grated cheddar cheese.
  • Make a well in the center of the flour mixture, pour in buttermilk, and stir with a fork just until dough comes together. Do not overmix. Turn dough onto a lightly floured surface, and knead gently 6 to 8 times.
