CHEDDAR PARMESAN POTATOES
People in my part of Tennessee love potato dishes! This one tickles my fancy so much I couldn't help sharing it. I'm a widow with five grown children and eight grandchildren. I make these potatoes when they come to visit for family suppers and holidays. Most often, I serve them alongside meat and vegetables-but, with the cheese, they could be a main dish all by themselves.

- In a saucepan, melt butter over low heat. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Add the salt, cheddar cheese and Parmesan cheese; stir until cheese is melted. Add potatoes; stir gently to mix. , Place in a greased 2-qt. baking dish. Sprinkle bread crumbs on top. Bake, uncovered, at 350° for 30-35 minutes.

- Microwave 1 1/2 pounds small Yukon Gold potatoes, turning halfway through, until tender, 10 to 12 minutes; let cool slightly. Break into chunks. Toss with 2 tablespoons olive oil, 2 smashed garlic cloves, 3/4 teaspoon kosher salt and a few grinds of pepper. Roast on a baking sheet at 450 degrees F, stirring once, until browned and crisp, about 30 minutes. Sprinkle with shredded sharp cheddar and chopped chives.
TRIPLE CHEDDAR-PARMESAN POTATO CASSEROLE
The triple-cheddar cheese baked into this potato casserole makes it cheesy. And the Parmesan and bacon crumbles on top? Why, that's just gilding the lily.

- Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
- Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups Shredded Triple Cheddar Cheese; cook and stir 1 min. or until melted. Stir in mustard.
- Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
- Bake 25 to 30 min. or until heated through. Top with remaining cheeses and bacon; bake 5 min. or until cheese is melted.

OVEN ROASTED PARMESAN POTATOES
I have tried a lot of good roasted potato recipes, but I keep coming back to this one. I've never found one I like better! These are crispy on the outside, and soft and creamy on the inside.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
- Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
- Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan.
- Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.

PARMESAN POTATOES AU GRATIN
This recipe represents my philosophy of cooking to its best - cooking with love. A good test to see if you have enough cream in the recipe is to gently press on the top of the layers (once finished). If there is enough cream, you should see it coming out on the sides, but not overflowing. Letting the au gratin rest is very important . . . even though it is so delicious that you would want to jump right in. - Preheat oven to 325°. Combine the first five ingredients. Layer a third of the potatoes and 2/3 cup cheese mixture in a greased 8-in. square baking dish; repeat layers. CHEDDAR PARMESAN POTATOES
Nice cheesy potatoes, a little better than au gratin. Real comfort food. Prep time includes time to cook the potatoes.

- In a saucepan, melt the 1/4 cup butter over low heat.
- Add the flour and whisk until smooth.
- Add the milk slowly, stirring until the mixture thickens.
- Remove from heat.
- Add the salt and the cheeses, stirring until they melt.
- Fold in the potatoes, stirring gently until coated.
- Place the mixture in a buttered 2-quart baking dish.
- Toss the melted tbsp of butter with the breadcrumbs and sprinkle evenly over the top.
- Bake, uncovered, at 350 degrees F for 30-35 minutes, until lightly browned and bubbly.
WHITE CHEDDAR AND PARMESAN POTATO GRATIN
A long time family favorite! To save time saute the onions and garlic well in advance or even a day ahead and refrigerate. A word of advice...oven to table only with this dish, the cheese and cream will break down and become oily if you reheat it.

- Set oven to 375 degrees.
- Butter a 13 x 9-inch glass baking dish.
- Saute the onions and garlic in some oil or butter until soft (about 5-6 minutes) set aside.
- In a small bowl, whisk together the rosemary and whipping cream.
- Place HALF of the potatoes in the dish, overlapping slightly.
- Sprinkle with salt and pepper, then about 1-1/4 cups white cheddar cheese, then all of the onion/garlic mixture, then 1/4 cup the Parmesan cheese.
- Top with remaining potatoes then more salt and pepper.
- Pour the cream over the potatoes and top remaining 1/4 cup Parmesan cheese, then top with remaining cheddar.
- Cover loosley with foil and bake about 1 hour.
- Uncover and bake about 30-40 minutes or until the potatoes are fork-tender.
- Let sit for about 10 minutes before serving.

THREE CHEESE GARLIC SCALLOPED POTATOES
If you love cheese and love potatoes you'll adore this delicious recipe! You can use any three cheeses you like, but I find using a sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced provolone (because it melts very well) are the best! Takes time to cook, but the result is so yummy and the smell is intoxicating!

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
- Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. - Trim the ends of the potatoes, then slice into ¼-inch thick rounds.
