RITZ CRACKER MEATLOAF

This easy to make beef meatloaf recipe is so flavorful from buttery, salty Ritz crackers instead of breadcrumbs!

1 package (2 ounces) dry onion soup mix
1 cup crushed Ritz crackers (about 20 crackers)
1 egg, beaten
1/4 cup whole milk
2 tablespoons ketchup
1 tablespoon mustard (dijon, yellow or spicy brown)
1/2 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 1/2 pounds ground beef or meatloaf mix

Steps:

  • Preheat the oven to 350 degrees.
  • Add the soup mix, egg, crackers and milk to a large bowl. Mix together and let sit for 5 minutes for the milk to absorb. Then stir in the ketchup, mustard, salt, pepper, garlic powder and Worcestershire sauce.
  • Add the ground beef to the bowl and mix gently to combine. Don't overwork the meat because you'll end up with a tougher meatloaf.
  • Spray a loaf pan with cooking spray and lightly add the meatloaf mixture, don't pack the meatloaf mix into the pan.
  • Bake for 40-45 minutes until the beef is cooked through and no longer pink. Let the meatloaf rest for 5 minutes, turn out of the loaf pan, slice and serve.

½ cup crushed buttery round crackers
¾ cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
¼ cup ketchup
2 tablespoons steak sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan.
  • Bake in preheated oven until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, 45 to 60 minutes.

1/2 cup yellow onion ((finely diced))
1/4 cup green bell pepper ((finely diced))
3 eggs
4 oz sharp cheddar cheese
1/4 cup whole milk
Ritz crackers ((2 sleeves))
1 tsp each, salt & pepper
1/2 cup ketchup
1/2 cup brown sugar
1 Tbsp yellow mustard
1 tsp Worcestershire sauce

Steps:

  • Preheat your oven to 350°F (176°C).
  • In a small bowl combine the glaze ingredients, whisk till smooth. Set aside for later.
  • In a large mixing bowl add the ground beef, onion, green pepper, eggs, cheese, milk, crushed Ritz crackers, salt, and pepper. Using your clean hands thoroughly combine all ingredients.
  • Place meatloaf mixture onto a baking sheet lined with parchment paper and form it into a loaf shape.

1 1/2 sleeves of crushed Ritz crackers (48 crackers total)
4 oz. shredded sharp cheddar or Colby cheese
3 eggs
1/2 cup milk
1 tsp. salt
1/4 tsp. black pepper
1/2 to 3/4 cup ketchup
2 tbsp. brown sugar
1 tsp. mustard

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a small bowl, combine the ketchup, brown sugar, and mustard. Place to the side. This will be used later as the topping.
  • In a large bowl, combine the eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper, salt and black pepper. Mix well.
  • Add in the ground beef. Mix well just to combine. Do not over mix.
  • Form into a loaf and place inside a baking pan or baking sheet lined with foil or parchment paper.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Remove from the oven and spread the topping over the meatloaf.
  • Bake for an additional 30 to 40 minutes or until the center is 160 degrees Fahrenheit.

I saw this recipe on a TV show on Amish cooking in the 1980s, and I've adapted it to suit our tastes. The Swiss cheese and bacon make it very satisfying on cold fall and winter evenings.

1 bacon strip, cut into thirds
1 egg, lightly beaten
1/3 cup crushed butter-flavored crackers (about 8 crackers)
5 tablespoons shredded Swiss cheese, divided
4-1/2 teaspoons chopped onion
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon rubbed sage
1/8 teaspoon pepper
1/2 pound lean ground beef

Steps:

  • In a skillet, cook bacon over medium heat for 2 minutes on each side or until cooked but not crisp. Drain on a paper towel; set aside. , In a bowl, combine the egg, crackers, 4 tablespoons cheese, onion, garlic, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into a loaf and place in a greased 5-3/4x3x2-in. loaf pan. Place bacon pieces over top. Bake, uncovered, at 350° for 30 minutes.
