KALE FLATBREAD BITES
Every party needs pizza. This thin-crust option - layered with a punchy base, crunchy kale, and melty mozzarella - is dressed to impress. Large pieces of dressed lacinato kale are lightly pressed onto the cheese-covered dough for a stunning look.

Steps:
- Preheat oven to 450°F with rack in lowest position. Toss together kale, salt, pepper, and 2 tablespoons oil in a large bowl. Combine sour cream and mustard in a separate bowl, stirring until smooth.
- Brush a large, rimmed baking sheet with remaining 1 tablespoon oil. Place dough on a work surface and flatten with your palm. Place dough on baking sheet; stretch with your fingertips until it reaches all corners of baking sheet (or shape into a large oval).
- Spread sour cream mixture over dough, reaching all the way to edges. Sprinkle evenly with cheese. Top with kale, pressing gently into dough.
- Bake until crust is golden brown around edges and kale is browned in spots, about 20 minutes. Squeeze lemon wedges over flatbread to taste. Cut flatbread into 24 pieces. Serve warm or at room temperature.
CHEESE AND KALE FLATBREAD
Out of all green veggies, kale is undoubtedly one of the healthiest you can try. It's rich in vitamins, antioxidants, and has lots of individual benefits. You can serve it in many salads, but today we've prepared a delicious flatbread with it. To flavor things up a bit, we've also used two types of melted cheese into the mix and we must say, the result is delicious!

Steps:
- Thinly slice the olives.
- Add the sugar and yeast in a small bowl. Add milk and gently mix to dissolve the yeast.
- Add the flour into your food processor.
- Add the wet yeast and turn on the mixer.
- Slowly pour the flour and olive oil while mixing.
- Mix until the ingredients combine into a smooth, sticky dough.
- Add the sliced olives and mix them into the dough.
- Cover the dough and let it rest for 30 minutes.
- Heat a skillet over medium heat. Add the butter and melt it. Add the rosemary sprig and leave it in the pan for 1 minute.
- Take it out and pour the heavy cream. Reduce the heat and add the mozzarella and Cheddar. Stir until the mixture is smooth and thick, and bring it to a fondue-like consistency. Season with salt and let it cool.
- Preheat the oven to 360 degrees F/180 degrees C.
- Dust your working space with flour.
- Level the dough with a rolling pin, making it as thin as you like. We prefer it around 0.2 inches (0.5 cm) thick.
- Line a baking tray with parchment paper and place the dough on top. Evenly spread the cheese mixture over the dough.
- Top it with kale and chili flakes.
- Bake it for 25 minutes!

KALE FLATBREAD
My husband loves this recipe. It's another great way to incorporate Kale. Most of the time we eat this as a vegetarian Pizza only.

- 1.In large skillet over medium-high, heat 2 tablespoons of olive oil. Add in garlic, onion, salt & pepper. Stir occasionally until softened, or about 4 minutes. 2.Add kale de stemmed and the leaves cut up. Not all of it will fit, so toss frequently and add more when there's room in the skillet. Cook until softened, and move to bowl to cool and drain.
- 3.Lightly oil baking sheets, and place rolled-out dough on top. Brush dough with oil. Add cheese, toppings and kale mixture. add other desired toppings. You can add marinara sauce and pesto which I love and fresh herbs. 4.Bake for 15-18 minutes at 450° F.
- Cut in squares and serve.

- In a medium skillet, heat 2 teaspoons olive oil. Add the garlic and cook for 2 minutes. Add the chopped kale and fresh lemon juice. Season with salt and black pepper and cook until kale is tender and wilted, about 3-4 minutes. Remove from heat.
- Place the Naan flatbreads on a large baking sheet. Brush each flatbread with a little bit of olive oil. Sprinkle chunks of goat cheese evenly over the breads. Top with cooked kale and lemon slices. You will want 3-4 lemon slices for each flatbread. Sprinkle crushed red pepper over the flatbreads, if using.
- Place baking sheet in preheated oven and cook for 12-14 minutes, or until cheese is melted. Remove from oven and cut into pieces. Serve warm.
