- In a large pot, cover potatoes by 2 inches with salted water. Bring to a boil; reduce to a simmer and cook until potatoes are tender, about 12 minutes. Drain thoroughly and pass potatoes through a ricer or food mill into pot.
- Over low heat, add butter and stir until melted. Continue to cook, stirring constantly, until potatoes are stiff, about 1 minute. Gradually add cream, stirring constantly to combine. Using a rubber spatula, pass potatoes through a fine-mesh sieve. Season with salt and pepper.

- On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
- Cut the potatoes into 1-inch (2 cm) cubes.
- Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
- In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
- Remove the pot from the heat and strain the cream through a fine mesh sieve.
- Drain the potatoes in a colander and transfer back to the pot.
- Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
- Add the cubed cold butter and salt. Stir to combine.
- Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
- Top with freshly ground black pepper and sprinkle with chives and serve.

This is a different spin on good old mashed potatoes that we absolutely love. A friend's father is the cook in their family and he shared this recipe with me but not the exact amounts. I made it as I thought our family would like it and it has proven to be a real comfort dish to us.

- Cook potatoes and mash with milk to desired consistency. In large fry pan or heat proof baking dish melt 3 tablespoons of butter and saute 1 small chopped green pepper and 1 small chopped onion until wilted. Add to mashed potatoes and add 1/2 cup of grated cheddar and 1/2 cup of grated mozzarella. Fold all ingredients with salt and pepper to taste. Place in greased baking dish and bake at 350 for 1/2 hour.
