So good with a big mug of steaming hot, sweet tea! I sometimes like to serve these with pickled onions on the side, too. My favorite pickles to use for this are the wonderfully crisp and fresh-tasting bread & butter pickles sold at Trader Joe's.

Ingredients

2 slices whole wheat bread
mayonnaise, to taste (I just spread thinly on each slice)
mustard, to taste (whatever kind you like, I like yellow or spicy stone-ground)
1 -2 slice cheddar cheese (better with a at least a medium-sharp cheddar, if not sharp cheddar)
1/4 cup bread and butter pickles, drained (or to taste)

Steps:

Spread mayonnaise and mustard on bread. Trim cheese slices to fit bread and place on one slice. Lay pickles over cheese and top with second slice of bread.
This is a little easier to eat if cut in half, since the pickle slices tend to want to escape.

This sandwich can be lunch, a snack, or a late-night thing. Eat it with potato chips and lemonade; it's also great with a simple green salad for dinner.

Ingredients

12 ounces Gruyère, Swiss cheese, or sharp cheddar, sliced, divided
8 slices sourdough bread
6 dill pickles, sliced crosswise 1/4-inch thick
6 ounces thinly sliced salami, such as Genoa
6 tablespoons unsalted butter, room temperature

Steps:

Divide half of cheese among 4 slices of bread. Top with pickles, salami, and remaining cheese. Close sandwiches and spread half of butter evenly over top of bread slices.
Heat a large skillet, preferably cast iron, over medium-low heat. Place sandwiches, buttered side down, in skillet. Spread remaining butter over top of bread. Cook, pressing down with a spatula to encourage melting and turning once, until cheese is melted and bread is golden brown and crisp, 5-7 minutes.

2 slices bread, white works best or 1 roll, again white works best
1 tablespoon branston pickle
3 slices medium cheddar, thickly cut or 1/4 cup medium cheddar, grated

Steps:

Place the cheese on bread or roll.
Spread bread or roll with as much pickle as you desire (has to be Brandeston to get the full effect) the more you add, the better the taste.
Put top piece of bread on.
Cut into a diagonal triangle.
Enjoy.
