One-Pot Mac 'n' Cheese image

This one-pot wonder has humble beginnings: just milk and macaroni. As the pasta cooks, the starch released helps thicken the milk to make the perfect base for a sauce. The cheeses and seasonings are stirred in at the very end, and everything comes together magically.

Number Of Ingredients 10

4 cups whole milk
3/4 pound elbow macaroni (about 3 cups)
8 ounces mild Cheddar, shredded (about 3 cups)
3 ounces part-skim mozzarella, shredded (about 1 cup)
2 ounces cream cheese, cut into small pieces
2 tablespoons unsalted butter, cut into small pieces
1 teaspoon Dijon mustard
Large pinch cayenne pepper
Large pinch freshly grated nutmeg
Kosher salt

Steps:

  • Put the milk and macaroni in a medium saucepan. Bring the milk to a boil over medium heat, stirring frequently to keep the macaroni from clumping, then cook, stirring frequently, until the macaroni is tender and the milk has thickened to the consistency of heavy cream, 4 to 5 minutes. Remove the saucepan from the heat, add the Cheddar, mozzarella, cream cheese, butter, mustard, cayenne, nutmeg and 1 1/2 teaspoons salt, and stir until smooth, thick and creamy. Serve hot. (The dish will thicken as it cools; thin it out with a little hot water if desired.)

Steps:

  • In a large pot on medium-high heat, gently heat the milk to a simmer.
  • Add in the elbow macaroni. Cook until the pasta is tender.
  • Once the noodles are cooked, turn off the heat. Add in the butter, cheddar, salt, and pepper. Fold these ingredients with the pasta until the cheese and butter melt into the milk to create a thick sauce.
  • Sprinkle with parsley and serve!

½ teaspoon salt
8 ounces seashell pasta
1 cup whole milk
4 cups shredded Cheddar cheese
1 cup shredded Parmesan cheese
¼ teaspoon ground black pepper

Steps:

  • Pour water and salt into a medium pot and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the water has cooked down a bit, about 5 minutes.
  • Stir in the milk, and continue boiling for another 5 minutes. Add the Cheddar, Parmesan, pepper, and mustard; stir until the cheese melts and the sauce is thick and creamy. The starch from the pasta thickens the sauce as the pasta cooks.

4 cups beef broth
16 oz fusilli pasta
3 cups shredded cheddar cheese
½ cup milk
green onion, sliced, to serve

Steps:

  • In a large pot over a medium-high heat, add ground beef, onions, garlic, salt, pepper, worcestershire sauce, and ketchup. Break up the beef to incorporate the seasonings and cook until browned, about 6-7 minutes.
  • Pour in the beef broth and one cup of water and bring to a simmer.
  • Add the pasta and simmer for 20 minutes or until the pasta is cooked throughout and the broth has cooked down, stirring occasionally.
  • Pour in the milk and cheese. Stir until the cheese has melted.

2 pounds ground beef
1 large onion, chopped
1 garlic clove, minced
1 jar (14 ounces) spaghetti sauce
1 can (14-1/2 ounces) stewed tomatoes
1 can (4 ounces) mushroom stems and pieces, drained
8 ounces uncooked medium pasta shells
2 cups sour cream, divided
6 ounces sliced provolone cheese
6 ounces sliced part-skim mozzarella cheese

Steps:

  • In a large skillet, cook the beef, onion and garlic over medium heat until no longer pink; drain. Stir in the spaghetti sauce, tomatoes and mushrooms. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. , Meanwhile, cook pasta according to package directions; drain and rinse with cold water. Spoon half of shells into an ovenproof Dutch oven. Layer with half of the meat mixture. Spread with 1 cup sour cream; top with provolone cheese. I got this recipe from a neighbor many years ago. It's great for a crowd as it makes a lot! You can use any small pasta shape you have on hand. Definitely a yummy, indulgent treat.

2 lbs lean ground beef
2 medium onions, chopped
2 large garlic cloves, chopped
1 (32 ounce) jar spaghetti sauce (your favorite)
1 (1 lb) can stewed tomatoes
2 (3 ounce) cans sliced broiled mushrooms
8 ounces shell macaroni
1 1/2 pints sour cream
1/2 lb sliced provolone cheese
1/2 lb sliced mozzarella cheese

Steps:

  • .Cook ground beef in a large,deep pan until brown, stirring to break up meat. Drain off excess fat.
  • Add onions, garlic, spaghetti sauce, stewed tomatoes and undrained mushrooms; mix well. Simmer 20 minutes until onions are soft.
  • Meanwhile cook macaroni shells until al dente; drain and rinse with cold water.
  • Pour half the shells into a deep casserole. Cover with half the tomato-meat sauce. Spread half the sour cream over sauce. Top with slices of provolone cheese.
  • Repeat, ending with slices of mozzarella cheese.
  • Cover casserole.
  • Bake at 350 degrees for 35 to 40 minutes.
  • Remove cover; continue baking until mozzarella melts and browns slightly.
