CHEESE STUFFED TURKEY SLIDERS
Burgers don't always need to be a splurge! Try these flavorful cheese-stuffed turkey sliders for a guilt-free way to get your burger fix.

Steps:
- Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion; cook 6 to 8 minutes, stirring occasionally, until softened and lightly browned. Remove from skillet to bowl; cover to keep warm.
- In large bowl, gently mix turkey, bread crumbs, milk, Worcestershire sauce, mustard and pepper with fork until well combined. Shape mixture by heaping tablespoonfuls into 20 balls. Flatten each ball into 3-inch patty. Cut each cheese slice in half crosswise; place 1 piece of cheese in the center of each of 10 patties. Top each with another patty; press edges together to seal.
- Heat same skillet over medium-high heat. Add patties. Cover; cook 4 to 6 minutes, turning once, until turkey is no longer pink. Let stand 2 minutes.
- On each bun bottom, place about 1 tablespoon onion, 1 burger, 1 tomato slice and 1 pickle chip. Cover with bun tops.

- In a small bowl, combine turkey, red onion, green onions, egg, hamburger seasoning, Worcestershire sauce and cumin, mixing lightly but thoroughly. Shape into twelve 1/2-in.-thick patties. Grill burgers, covered, over medium heat or broil 4 in. from heat 3-4 minutes on each side or until a thermometer reads 165°., Top with cheese; grill, covered, 30-60 seconds longer or until cheese is melted. Mix mayonnaise and mustard; spread on roll tops. Layer roll bottoms with burger, lettuce and onion. Replace tops.

Steps:
- Add ground beef, salt, and pepper to a large bowl. Combine until the meat is evenly seasoned.
- Roll into 16 meatballs and set aside.
- Cut each cheddar cheese block into 8 cubes (totaling 16 cubes).
- Press the cheddar cheese cube into the meatball and wrap the meat around it, completely covering the cheese.
- Preheat a skillet on medium heat for 10 minutes. After preheated, carefully coat with a light layer of oil with a high smoke point (we used canola oil).
- Add sliders to the pan, frying on the first side until the bottom is browned and crisp and the sides begin to brown (about 2-4 minutes, depending on the desired doneness). Flip and finish cooking on the other side.
- Serve immediately on Hawaiian sweet rolls with your favorite burger garnishes. (We added Roma tomatoes, red onion, lettuce, and Sriracha mayo.)

- Heat oven to 350°F. Line 15x10x1-inch pan with cooking parchment paper.
- Separate dough into 8 biscuits. Cut each biscuit in half crosswise to make 2 halves. Press each piece into 5x2 1/2-inch rectangle. Place 1 piece of cheese on one half of each rectangle. Divide turkey among biscuits, and place on cheese, folding pieces of turkey if needed to fit biscuit half. Top each with second piece of cheese. Place 1 heaping teaspoon cranberry sauce on each biscuit. Fold dough over filling (do not seal); place on pan in 4 rows by 4 rows. Brush tops with melted butter.

- Using a serrated knife, cut the entire slab of rolls in half, carefully trying to keep the cut even and in the middle. Remove the top half of rolls and set aside. Gently tear the rolls into 4 columns of 3 rolls.
- Place turkey slices evenly over the bottom of the rolls, then repeat with cheese (I always leave a few without cheese as our youngest doesn't like melty cheese!) Replace the tops on the rolls, set aside to make the sauce.

- In a small bowl, combine melted butter with Dijon mustard, honey, Worcestershire Sauce, poppy seeds, and dried minced onion. Whisk to combine. Set aside.
- Pull apart the rolls, or slice them if they aren't already sliced. If you are slicing them yourself, slice the tops off the whole sheet of rolls at the same time and carefully set them aside until ready to use. Lay the bottom halves of the rolls in a 9" x 13" casserole dish or jelly roll pan (I always use a 9" x 11.5" jelly roll pan).
- Spread a thin layer of mayonnaise on the bottom rolls. Layer on the turkey and cheese slices, then carefully place the bun lids on top of the cheese slices. Pour the glaze evenly over the top of all of the sliders.
