1 medium head of cauliflower
2 Tbsp heavy cream
2 Tbsp butter
1/3 cup shredded sharp cheddar
4 egg whites
salt & pepper to taste
oil for frying

Steps:

  • Clean and trim the cauliflower, adding the florets to a microwave safe bowl. Add the cream and butter to the bowl. Microwave for 5 minutes.
  • Add the cauliflower and cheese to a magic bullet or food processor and blend until still chunky - kind of like a cooked oatmeal consistency. Season with salt and pepper.
  • Chill for at least half an hour.
  • Whip the egg whites to a stiff peak. Fold 1/3 of the egg whites into the cauliflower mixture to lighten it up. Then fold the cauliflower mixture into the rest of the egg whites and gently mix until combined.
  • For best results, chill for another half hour or they won't hold their shape as well.
  • Fit a pastry bag with a round or star tube with about a 3/4 inch opening. Spray the inside of the bag with nonstick spray. Gently squeeze out 1 inch sections onto a greased cookie sheet, cutting with a butter knife as you go.
  • When finished, bake in a 375 degree oven for 10-12 minutes (or longer if you're skipping the frying) until puffed and slightly browned.
  • Remove from the oven and serve - or heat 1/4 inch of oil in a saute pan and when it's very hot add the tots. It doesn't need long, a minute per side to turn them golden brown and crispy.
  • Serve immediately.

1/4 cup Avocado oil ((or any oil; divided))
1 large Egg
1 1/2 cup Mozzarella cheese
2 cloves Garlic ((minced, optional))
3/4 tsp Sea salt

Steps:

  • Stir fry cauliflower rice in 2 tbsp (30 mL) oil in a large saute pan or wok over medium-high heat, until soft and lightly browned, with no moisture left in the pan.
  • Meanwhile, whisk the egg in a large bowl. Mix in the mozzarella, garlic, and sea salt.
  • When the cauliflower rice is done, stir it into the bowl right away while it's hot. It will melt the cheese in the bowl and make the mixture sticky.
  • Use a small cookie scoop to pick up balls of the "dough". Form small tater tot sized patties and flatten slightly. (Make sure they are not too thick so that they'll cook through.)
  • Wipe the pan lightly with a paper towel to get rid of any cauliflower rice pieces.
  • Heat the remaining 2 tbsp (30 mL) avocado oil in the pan over medium heat. Add the tater tots in a single layer, trying not to have them touch, and fry for about 2 minutes, until golden on the bottom. Flip and repeat until golden on the other side. Transfer to paper towels to drain.
  • Repeat with all tater tots. (You may need to add more oil between batches.)

1 large head cauliflower (2-3/4 to 3 lb.)
3 Tbs. olive oil
Kosher salt
1 cup coarsely grated sharp Cheddar (about 3 oz.)
2 Tbs. finely chopped fresh flat-leaf parsley
1-1/2 tsp. Aleppo pepper
1-1/2 tsp. granulated garlic
1 tsp. granulated onion
1/2 cup finely grated Parmigiano-Reggiano (about 2 oz.)
2 large eggs, lightly beaten with 2 Tbs. water
1-1/2 cups panko (about 3-1/2 oz.)
Sriracha mayonnaise or ketchup, for serving

Steps:

  • Position a rack in the upper third of the oven, and heat the oven to 400°F.
  • Cut the florets from the cauliflower, and discard the core. Coarsely chop the florets into 1/2-inch pieces. On a large rimmed baking sheet, toss the cauliflower with 2 Tbs. of the oil and 1 tsp. salt, then spread into an even layer. Roast until the cauliflower is mostly tender and golden in places, tossing once halfway through, about 40 minutes total. Remove from the oven, and let cool completely, about 20 minutes.
  • Put the cauliflower, Cheddar, parsley, Aleppo pepper, garlic, and onion in a food processor, and pulse until combined, about 10 pulses.
  • Scoop out about 1 Tbs. of the cauliflower mixture, and form into a tater-tot shape, 1-1/2 inches long by 1 inch in diameter. Put on a plate, and repeat with the rest of the mixture. Refrigerate for 15 minutes. Put the Parmigiano, egg mixture, and panko on three separate rimmed plates, and set aside. Brush a large rimmed baking sheet with the remaining 1 Tbs. oil. Gently dredge the tots first in the Parmigiano, then the egg, then the panko. Transfer to the prepared baking sheet. Bake until golden-brown, rotating the pan halfway through, 26 to 30 minutes total. Serve with the Sriracha mayo.

2 medium carrots (about 8 1/2 ounces), peeled, coarsely chopped
8 ounces cauliflower florets
5 tablespoons vegetable oil, divided
3/4 teaspoon kosher salt, divided
1/2 cup shredded Parmesan (about 1 ounce)
1/2 cup shredded sharp cheddar (about 1 ounce)
1 garlic clove, finely chopped
3 tablespoons chopped chives
1/4 teaspoon freshly ground black pepper
1 1/2 cups panko (Japanese breadcrumbs), divided
Nonstick vegetable cooking spray
1 cup all-purpose flour
3 large eggs
Ketchup, for serving

Steps:

  • Pulse carrots and cauliflower in a food processor (or grate carrot on smallest holes and cauliflower on largest holes of a box grater) until rice-like in texture. Transfer to a large heatproof bowl and toss with 1 Tbsp. oil and 1/4 tsp. salt. Cover with plastic wrap and microwave on high 3 minutes. Carefully remove plastic wrap and let cool slightly.
  • Meanwhile, mix cheeses, garlic, chives, pepper, 1/2 cup panko, and remaining 1/2 tsp. salt in a medium bowl. Stir in carrot mixture until well combined.
  • Spray a rimmed baking sheet with nonstick spray. Using your hands, roll tablespoonfuls of carrot mixture into tater-tot shapes. Transfer to prepared sheet, then chill at least 10 minutes.
  • Place flour in a shallow baking dish. Mix remaining 1 cup panko and 4 Tbsp. oil in another shallow dish. Lightly beat eggs in a shallow bowl. Working in batches, toss tots in flour, then dredge in egg, shaking off excess, then coat in panko mixture. Return to baking sheet and chill at least 10 minutes or up to 1 hour.
  • To Bake:
  • Arrange a rack in center of oven and preheat to 425°F. Set a wire rack inside a rimmed baking sheet. Spray with nonstick spray, then transfer tots to rack. Bake tots until deep golden brown and cheese is melted (check by piercing a tot with a paring knife), 22-25 minutes. Serve immediately with ketchup.
  • To Fry:
  • For extra-crispy tots, fill a large, deep-sided skillet with 1" vegetable oil and heat over medium to 350°F. Working in batches, fry tots, flipping halfway through, until golden brown and crispy, about 2 minutes per batch. Using a slotted spoon, transfer to a paper towel-lined platter or baking sheet. Serve immediately with ketchup.

  • Tot mixture can be formed but not breaded 1 day ahead; cover loosely with plastic and chill.

½ cup bread crumbs
½ cup shredded Parmesan cheese
1 egg
1 egg white

Trust Ina Garten to take two big food trends - cauliflower and toast - and combine them into something completely fresh. This recipe, adapted from her 2018 cookbook, "Cook Like a Pro," is a bit like an open-face grilled cheese sandwich with a nutty layer of roasted cauliflower, and spiked with nutmeg and paprika. We made it vegetarian by leaving out the prosciutto, and also lightened up on the cheese. It makes a vegetarian dinner with soup and salad, or a good snack with drinks.

1 head cauliflower, leaves and thick core removed
1/4 cup olive oil

6 slices rustic sourdough-type bread

Steps:

  • Heat the oven to 400 degrees. Cut the cauliflower into 1/2-inch clusters. Transfer to a sheet pan and toss with the oil, red-pepper flakes, 1 teaspoon salt and 1/2 teaspoon pepper. Spread florets out into a single layer and roast, stirring every 10 minutes, until tender and browned in spots, 25 to 30 minutes.
  • Meanwhile, stir ricotta or mascarpone in a large bowl until smooth and fluffy. Mix in Gruyère, nutmeg, 1 teaspoon salt and 1/2 teaspoon pepper and set aside. In a toaster, toast the bread until golden.
  • When cauliflower is done, remove from the sheet pan and set aside to cool. Line the pan with foil and reduce the oven to 375 degrees.
  • Arrange the toasts on the lined sheet pan. Stir the cauliflower into the ricotta mixture, then divide among the toasts, spreading to the edges. Dust with Parmesan and paprika. (Recipe can be made up to this point and held at room temperature for up to 2 hours.)
  • Bake until toast edges and topping are browned, 10 to 15 minutes. (If desired, broil 2 to 3 minutes to brown and melt the top.) Let cool slightly. Sprinkle with herbs, if using, then cut into halves or quarters and serve immediately.
