CHEESY BAKED GRITS
I had this at a party at a colleague's house. I've loved cheese grits for years, but these are by far the best I've ever had.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
- Bake 1 hour in the preheated oven, until firm.

- Bring water and salt to a boil in a saucepan. Whisk in grits, reduce heat to medium-low, and cook until thickened, 5 to 6 minutes. Remove from heat.

BAKED CHEESE GRITS

- Preheat the oven to 350 degrees F. Butter a deep casserole dish.
- Bring the chicken broth, milk, 1 1/2 teaspoons salt and cayenne to a boil in a medium saucepan. Slowly whisk in the grits and lower the heat to a simmer. Cover and cook, stirring occasionally, until thick, about 30 minutes.
- Remove from the heat and stir in the Cheddar and pepper-jack cheeses and butter until melted and smooth; cool slightly. Stir in the eggs and transfer the mixture to the prepared casserole dish. Smooth the top of the grits and then bake until just set and lightly brown, about 1 hour. Let rest for at least 5 minutes. Scatter with the scallions, if using, and cut into squares.
CHEESY ROASTED GARLIC GRITS

- Preheat the oven to 400 degrees F.
- Trim the top off the garlic, drizzle with oil and sprinkle with salt and pepper. Seal the garlic in aluminum foil, place on a baking sheet and roast until the cloves are golden and super soft, 20 to 30 minutes. Squeeze the cloves out, add a pinch of salt and smear with a knife on a flat surface to form a paste. Reserve.
- Bring the stock to a simmer. Slowly add the grits in small batches, whisking the whole time. Cook, whisking often, until the grits are creamy and tender, 20 to 30 minutes.
- Remove the grits from the heat and stir in the roasted garlic paste, white Cheddar and cream. Adjust the seasoning with salt and pepper. Carefully ladle the grits into the ramekins on a baking sheet. Top each ramekin with a slice of yellow Cheddar so the slice just comes over the sides of the ramekin. Bake until the cheese is gooey and bubbly, 2 to 3 minutes. Top with freshly ground black pepper and serve!

- Preheat oven to 350 degrees.
- Butter or oil spray a 1-1/4 quart baking dish.
- Prepare quick or instant grits to yield 4 cups cooked grits.
- Remove pan from heat. Add salt,pepper, butter, cheese and milk and stir until cheese and butter have melted.
- Add garlic, onion, hot sauce and optional green chilies and stir until mixed.
- Fold in beaten eggs.
- Pour into baking dish and bake 40-45 mins or until top has set and lightly puffed.

- Adjust an oven rack to the lower-middle position; preheat oven to 350°.
- Lightly coat a 13 x 9 inch baking dish with vegetable oil spray.
- Melt the butter in a large saucepan over medium heat.
- Add the onion and salt; cook until softened, about 5 minutes.
- Stir in the water, milk, and hot sauce; bring to a boil.
- Pour the grits into the boiling liquid in a very slow stream while whisking constantly in a circular motion to prevent clumping.
- Cover and decrease heat to low.
- Cook, stirring often and vigorously (make sure to scrape the corners of the pot), until the grits are thick and creamy, 10-15 minutes.
- Off the heat, whisk in 1/2 cup of the cheddar, the eggs, and pepper.
- Pour the mixture into the prepared baking dish, smooth the top, and sprinkle with the remaining cheese.
- Bake until the top is browned and the grits are hot, 35-40 minutes.
- Cool for 10 minutes before serving.
