Steps:

  • Beat eggs, milk, and seasoned salt together in a large bowl.
  • Stir in ham, cheese, and onion.

Or make it vegetarian by omitting the meat and adding mushrooms and extra veggies like bell peppers or tomatoes.

8 large eggs
1 cup milk (I used unsweetened cashewmilk)
1/2 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1 1/2 cups shredded cheddar cheese, divided
8 ounces diced cooked ham (bacon or sausage may be substituted)
1/4 cup green onions, sliced into thin rounds, plus more for garnishing to taste

Steps:

  • Preheat oven to 350F and spray an 8-inch square baking dish with cooking spray; set aside.
  • To a large bowl add the eggs, milk, salt, pepper, and whisk to combine.
  • Add 1 cup cheese, ham, green onions, and stir to combine.
  • Pour mixture into prepared baking dish.
  • Evenly sprinkle with remaining 1/2 cup cheese.
  • Bake for about 55 to 60 minutes (I baked 58 minutes), or until eggs are cooked and omelet is set. Because all ovens and pans vary, start checking at 40 minutes and bake until done.
  • Garnish with green onions to taste and serve immediately. Omelet is best warm and fresh but extra will keep airtight in the fridge for up to 4 days; reheat gently.

2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
  • Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.

1/4 cup butter or 1/4 cup margarine
1 medium onion, finely chopped
1 small green bell pepper, seeded and chopped
3 cups shredded cheddar cheese, divided
1 (12 ounce) can sliced mushrooms, well drained
2 -3 cups cooked cubed ham
12 large eggs, beaten (or use extra-large eggs)
1/4 teaspoon baking powder (yes! baking powder)
1/2 cup half-and-half cream
1/2 teaspoon ground black pepper (or to taste)
1/2 teaspoon seasoning salt or 1/2 teaspoon white salt
1 dash Tabasco sauce (optional and to taste) or 1 dash hot sauce (optional and to taste)

Steps:

  • Set oven to 375 degrees F.
  • Butter a 13 x 9-inch baking dish.
  • Sprinkle 1-1/2 cups cheddar cheese, mushrooms and ham on the bottom of the baking dish; set aside.
  • Melt butter in a skillet over medium heat; add in onion and green bell pepper and cook until softened (about 3-4 minutes) then sprinkle the mixture on top of the ham in the baking dish.
  • In a bowl whisk the eggs with baking powder cream, salt, pepper and Tabasco until well blended; pour over the ingredients in the dish (do not stir).
  • Bake uncovered for 25-30 minutes or until the eggs are no longer runny and the center is set and top is slightly browned.
  • Sprinkle top of the casserole with 1-1/2 cups cheddar cheese, you may stick the pan back in the oven for a couple of minutes to melt the cheese or the cheese will still melt is sprinkled on right our of the oven.
  • Cool then cut into squares.
