This Easy Cheesy Cauliflower Casserole makes the perfect side dish. Cauliflower never tasted so good, a delicious creamy centre with a crunchy lightly buttered topping.

1 tablespoon butter (melted)
¼-⅓ cup bread crumbs
½ tablespoon parsley freshly chopped
3 medium potatoes (chopped) ((400 grams))
1 small cauliflower (broken into florets)( or 3 1/2 cups) ((350 grams))
½ tablespoon parsley freshly chopped
1 large egg (beaten)
1 cup firm mozzarella, gruyere or fontina cheese (shredded) ((100 grams))
¼ cup freshly grated parmesan cheese ((25 grams))
2 dashes pepper
salt to taste

Steps:

  • Pre-heat oven to 350F (180 C). Lightly drizzle a medium baking dish with olive oil.

A comforting cauliflower cheese bake with a difference. Cauliflower and waxy baby potatoes in a cheese and spinach sauce topped with mozzarella and baked until golden. Vegetarian and vegan recipe.

Number Of Ingredients 11

1 kg waxy potatoes / 2 lb 2 oz (whole if they are small or cut in half if they are a little bigger, no need to peel them)
1 medium cauliflower, cut into florets
650 ml / 2 ¾ cups milk (soya or nut milk)
3 tbsp butter (dairy or vegan)
45 g / ½ cup plain flour
150 g / 5 oz cheddar (if using vegan cheddar add vegan parmesan or nooch for extra flavour)
1 tsp English mustard powder
a generous handful of fresh spinach
a pinch of salt
a good grinding of black pepper
a good handful of grated mozzarella (dairy or vegan)

Steps:

  • Preheat the oven to 200c fan/220c/425f/gas mark 7.
  • Steam or boil your potatoes and cauliflower. The potatoes will need 15-20 minutes until tender, but the cauliflower will only need 10 minutes. While the veg is cooking, make the sauce.
  • Melt the butter in a pan, then add the flour and mustard and mix in. Gradually add the milk a little at a time, over a low heat, whisking until it thickens then add more. Keep gradually adding and whisking until thick and glossy. You want to let it bubble towards the end to cook out the flour.
  • Add in the grated cheddar and whisk until melted, then stir in the spinach. It will start to wilt quickly. Season with salt and pepper
  • Pour the vegetables into one or two baking dishes, depending on how big they are, then pour over the cheese sauce and top with the mozzarella.
  • Bake for 20 minutes until golden and bubbling.
  • Enjoy!

A fantastic one-dish meal, our egg casserole with spinach and potatoes is naturally gluten-free and vegetarian, making it perfect for a gathering with mixed dietary needs. And while it is special enough to serve at a holiday brunch, the fact that you can prep it all the night before means that it is easy enough for everyday mornings, too.

3 tablespoons unsalted butter, plus more, softened, for brushing
1 onion, chopped (2 cups)
Kosher salt and freshly ground pepper
1 pound curly-leaf spinach, thick stems removed, sliced (8 packed cups)
2 teaspoons fresh thyme leaves
1 pound Yukon Gold potatoes, peeled and cut into a 1/2-inch dice (3 cups)
1 1/2 cups whole milk
12 large eggs
Scant 1/4 teaspoon freshly grated nutmeg
6 ounces fontina, coarsely grated (2 cups)

Steps:

  • Preheat oven to 375°F. Brush a 2-quart baking dish with butter. Melt butter in a large skillet over medium-high heat. Add onion and 1/2 teaspoon salt; cook, stirring occasionally, until golden in places, 5 to 7 minutes. Add spinach and thyme; cook until spinach wilts and darkens slightly, about 5 minutes. Add potatoes and milk; season with pepper.
  • Simmer until milk thickens and reduces slightly and potatoes are easily pierced with the tip of a knife but still retain their shape, about 5 minutes. Remove from heat; let cool completely. Meanwhile, in a large bowl, whisk eggs with 1 1/2 teaspoons salt and nutmeg. Stir cooled potato mixture and half of cheese into eggs.
  • Transfer to prepared baking dish and cover with parchment-lined foil. (If assembling the day before, wrap the dish with plastic wrap and refrigerate until ready to bake). Bake casserole, covered, 30 minutes. Uncover, sprinkle evenly with remaining half of cheese, and continue baking until set and golden brown in places, 15 to 25 minutes more (if the top is browning too quickly, tent with foil). Let cool slightly before serving.

1 tablespoon unsalted butter, plus more for dish
1 1/2 pounds Yukon Gold potatoes (about 6 medium), peeled and sliced 1/2 inch thick
Salt and pepper
1 small head cauliflower (about 2 pounds), sliced 1/2 inch thick
1 tablespoon fresh thyme leaves
1 1/2 cups shredded sharp cheddar (6 ounces)
1/3 cup chicken broth

Steps:

  • Preheat oven to 450 degrees. Butter a 2-quart baking dish. In a large pot, cover potatoes with cold salted water by 2 inches. Bring to a boil, then add cauliflower and cook at a rapid simmer until potatoes are just cooked through and cauliflower is crisp-tender, about 10 minutes. Drain in a colander and let sit 5 minutes.
  • Place half the potatoes and cauliflower in dish, sprinkle with half the thyme and cheddar, and season with pepper. Repeat to make a second layer. Add broth and dot top with butter. Bake until cheese is deep golden and bubbling, 15 to 20 minutes.

2 large potatoes, peeled and chopped
1 head cauliflower, cut into florets
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup heavy cream
1 cup shredded Swiss cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • In a pot with enough water to cover, boil the potatoes 10 minutes, or until tender but still firm. Drain, and set aside.
  • In a pot, place the cauliflower in a steamer basket over boiling water. Steam 5 minutes, until tender but still firm. Set aside.
  • Melt the butter in a saucepan over medium heat, and whisk in the flour. Gradually stir in the heavy cream until thickened. Remove from heat, and mix in 1/2 cup Swiss cheese until melted. Season with salt and pepper.
  • Arrange the potatoes and cauliflower in the prepared casserole dish. Pour the cream sauce over the potatoes and cauliflower, and sprinkle with the remaining Swiss cheese.
  • Bake 20 minutes in the preheated oven, or until bubbly and lightly browned.

This is the best spinach recipe I've ever tasted! It's cheesy and delicious. I use the leftovers--if there are any--to make small appetizer turnovers using phyllo dough. I'm often asked for the recipe.

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded Monterey Jack cheese
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 cup sour cream
1/2 cup grated Parmesan cheese

Steps:

  • In a large bowl, combine all of the ingredients. Transfer to a greased 11x7-in. baking dish. Bake, uncovered, at 325° for 25-30 minutes or until edges are lightly browned and bubbly.

  • Preheat the oven to 400 degrees F. Grease a 2.5 quart round baking dish or 9x13 rectangular baking dish and set aside. If using a round baking dish, the broth may not get as evenly absorbed as it would in a flatter, rectangular dish. This is not a problem when it comes to taste, but keep it in mind when choosing how you want to bake the casserole.
  • Place the sliced potatoes in a large pot and cover with salted water. Make sure you cover the potatoes by at least a couple of inches, so that there is room in the pot for the cauliflower to cook too. Bring the pot with the potatoes to a boil, add in the cauliflower florets, and cook for 8 to 10 minutes until the potatoes are tender. Drain and set aside to cool.
  • When the veggies are cool enough to handle, make a base layer of the veggies in the greased dish. Sprinkle with some of the cheese and chives, and season generously with salt and pepper. Repeat with another layer or two until all of the ingredients have been used. For a little extra flavor, consider adding pats of butter or drizzles of olive oil to each layer. Pour the vegetable broth into the dish.
  • Bake for 20 to 25 minutes until the cheese is bubbling and the veggies are golden brown. Remove from the oven and garnish with more fresh chives as desired.
