Cheesy Chicken Potato Bake without cream, a fabulous one-pan dinner idea that everybody gets to enjoy. Big on flavours, with a subtle garlic kick, this hearty casserole ticks all the boxes when it comes to an easy family meal.

4 large potatoes
2 chicken breasts
2 tbsp olive oil
2 tsp paprika
2 tsp garlic granules
1/4 tsp salt
1/8 tsp black pepper
1 cup grated cheddar cheese
1 tbsp butter
2 tbsp chopped parsley

Steps:

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • Peel and chop the potatoes into cubes, add the olive oil, one teaspoon of paprika, one teaspoon of garlic granules, a pinch of salt and pepper, and toss well to coat.
  • Arrange the potatoes onto an oven-proof dish, and bake for 20 minutes.
  • Cut the chicken breasts into chunks, add add the remaining olive oil, salt, pepper, paprika and garlic granules.
  • Add the chicken pieces to the potatoes together with the butter cut into small cubes, and bake for a further 35-40 minutes or until the chicken is cooked through and the potatoes are tender.
  • Mix the potatoes and chicken now and then to make sure they bake evenly.
  • Top with grated cheese, and bake for 5 more minutes so that the cheese can melt.
  • Remove from the oven and garnish with fresh parsley.

I was messing around in my kitchen one day when I was hungry and came up with this using what I already had. It's cheap, easy, and delicious! Top with extra cheese and bacon bits.

¼ cup onion, diced
1 tablespoon bacon grease
3 cups 1-inch potato chunks
2 cups chicken broth
1 cup water
3 tablespoons butter
3 tablespoons flour
1 cup milk
3 ounces shredded Cheddar cheese
1 ½ cups shredded cooked chicken

Steps:

  • Heat bacon grease in a stockpot over medium-high heat. Saute onion in hot grease until soft, about 4 minutes.
  • Stir potato chunks with the onion. Pour chicken broth and water over the potato mixture. Bring the liquid to a boil and cook until the potatoes are tender but not mushy, about 15 minutes.
  • Melt butter in a small saucepan over medium heat. Stir flour into the butter and cook, stirring constantly, until completely moistened, about 1 minute. Pour milk into the saucepan while continuing to stir; cook until thickened, about 3 minutes more. Sprinkle cheese over the milk mixture; cook and stir until the cheese is melted smoothly into the mixture, 2 to 3 minutes more.
  • Stir the cheese mixture and cooked chicken into the liquid in the stockpot; cook just until the chicken is heated through, about 4 minutes.

6 green onions, sliced, greens and whites separated
3 cups shredded cooked chicken
1 cup barbecue sauce
1/2 cup shredded sharp Cheddar cheese (2 oz)

Steps:

  • Make potatoes as directed on pouch for stovetop directions. Cover and keep warm.
  • Meanwhile, in 10-inch nonstick skillet, melt 1 tablespoon butter over medium-high heat. Add carrots and green onion whites. Cook 2 to 3 minutes, stirring occasionally, until softened. Add chicken and barbecue sauce; cook 2 to 3 minutes or until mixture is hot. Remove from heat.

4 russet potatoes
oil
2 shredded chicken breasts
1 ½ cups cheddar cheese
4 oz cream cheese
½ cup spinach, cooked
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400ºF (200ªC).
  • Debone, remove skin, and shred rotisserie chicken.
  • Brush potatoes with oil and sprinkle with salt and pepper.
  • With a fork, poke several sets of holes on the front and back of the potato.
  • Bake for 40-45 minutes or until inside is cooked.
  • Once potatoes are cooked and cool enough to handle, slice down the center lengthwise, and, using a spoon, scoop out the centers to form a bowl.
  • In a large bowl, combine the chicken, scooped out potato, ½ cup (50 g) of cheddar, cream cheese, and spinach. Stir until combined.
  • Evenly distribute the filling between the potato skins and sprinkle the tops with the remaining cheddar.

8 chicken thighs , skin on
85g garlic & herb soft cheese
500g new potato , halved
4 medium tomatoes , halved
1 garlic clove , crushed
large pinch caster sugar
6 thyme sprigs, leaves stripped from 4
olive oil , to drizzle

Steps:

  • Heat oven to 200C/180C fan/gas 6. Carefully lift the skin on the chicken thighs and spread the soft cheese between the skin and flesh. Sit the chicken in a roasting tin, skin-side up, and surround with the potatoes and halved tomatoes, cut-side up.
  • Scatter the tomatoes with the garlic and a light sprinkling of sugar (this helps to bring out their natural sweetness). Scatter the thyme leaves and sprigs over the tin, season and drizzle with oil. Roast for 45 mins until the chicken and potatoes are cooked through with crisp, golden skin.

My mother made this recipe recently and I really enjoyed it. I'm all about recipes that are easy (which this one is) and don't have a ton of ingredients. It's very easy to fit this recipe into any busy schedule, plus the slow cooker does most of the work for you. I'm sure this recipe could be modified for the oven, but I haven't tried doing that yet. The chicken can be browned prior to using it in this recipe, but I usually just add it to the slow cooker as is.

3 -4 lbs potatoes
4 boneless chicken breasts
1 (2 2/3 ounce) package country gravy mix
1 (10 3/4 ounce) can condensed cheddar cheese soup
1 medium onion
2 cups water
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray the bottom of the slow cooker.
  • Peel and thinly slice the potatoes and place them along the bottom of the slow cooker.
  • Slice the onion and place the slices on top of the potatoes.
  • Then, place the chicken breasts on top of the onions.
  • Combine the country gravy mix, the cheese soup, and the water together.
  • Add salt and pepper (to taste) to the soup mixture.
  • Pour soup mixture over the top of the chicken and other ingredients.
  • Cook on low for 6-7 hours then serve.
