3 cups shell noodles (uncooked )
3 tablespoons butter
⅓ cup red bell pepper (diced)
1 onion (finely diced)
½ teaspoon seasoning salt
1 teaspoon chili powder
10 ¾ ounces cream of chicken soup (condensed)
1 ⅓ cups milk
3 cups sharp cheddar cheese (shredded, divided)
⅓ cup parmesan cheese (shredded)
4 ounces mild green chiles
3 cups cooked chicken

Steps:

  • Heat oven to 375°F.
  • Cook shells al dente according to package directions.
  • Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
  • In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
  • Spread into a 9x13 casserole dish. Top with remaining cheese.
  • Bake 30-35 minutes or until hot and bubbly.

I made this recipe up one night when I found a recipe calling for frozen pasta vegetable mix. This is much more economical and much tastier. Even my husband who does not like vegetables loves it.

1 lb boneless skinless chicken
1 (2 lb) box rotini pasta
1 (10 1/2 ounce) can fat-free cream of chicken soup
1 lb Velveeta reduced fat cheese product, cubed
1/4 cup skim milk
1 (10 ounce) package california-blend frozen vegetables (broccoli or cauliflower or carrot mix) or 1 (10 ounce) package your favorite vegetables

Steps:

  • Cook chicken breast (I use my George Foreman Grill cooks them fast and without any added fat).
  • Chop chicken up into small bite-size pieces.
  • Cook Rotini as directed on box.
  • Cook vegetables until tender then drain.
  • In large sauce pan blend together soup, milk and cheese stir until melted.
  • Add in the chicken pasta and vegetables.
  • Pour into Pam sprayed 9x13-inch baking pan.
  • Cover with foil.
  • Bake 35-45 minutes at 350°F.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Heat olive oil in a large skillet on medium-high heat. Toss in chicken, onion powder, garlic, 1 teaspoon salt, and black pepper. Cook and stir until chicken is no longer pink in the center and the juices run clear, about 7 minutes. Reduce heat to low.
  • Whisk chicken broth and flour together in a bowl until well blended. Pour over the chicken in the skillet.   • Once the chicken has browned on both sides, add chicken broth, water, and pasta to the pot.
  • Stir all ingredients, cover the pot with a lid, and bring to a boil. When it begins to boil, uncover and stir. Bring the heat to low, stir, then cover and let simmer for 20 minutes.
  • After 20 minutes has passed, uncover and add in the broccoli. Stir continually as the broccoli steams until the rest of the liquid evaporates.
  • Add milk and cheddar cheese and stir until the cheese melts and you have a smooth cheese sauce.
  • Add salt and pepper (to taste), cayenne, and nutmeg. Stir once more, then you're ready to serve.

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. Stir in onion, bell pepper, poblano and jalapeño chiles; cook about 6 minutes or until vegetables are softened. Stir in flour and taco seasoning mix; cook and stir 1 minute. Gradually beat in broth with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute.   • To freeze: Line 13x9-inch (3-quart) glass baking dish with foil, making sure foil is as smooth as possible, as wrinkled foil may get stuck in sauce during freezing process. Leave enough overhang to lift casserole out of dish. Spray foil with cooking spray. Cover and refrigerate sauce 30 to 40 minutes before assembling casserole. Mix sauce with cooked pasta, chicken, frozen corn and beans; spread in lined baking dish (do not add enchilada sauce); cover tightly with another layer of foil. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Remove foil, and transfer to 13x9-inch (3-quart) glass baking dish sprayed with cooking spray. Cover and thaw in refrigerator until completely thawed, at least 48 hours. Heat oven to 350°F.
