Anxious to utilize my herb garden, I took advantage of my favorite biscuit recipe -- excellent with chicken and salad!

2 cups flour
4 teaspoons baking powder
3 tablespoons white sugar
½ teaspoon salt
½ teaspoon cream of tartar
½ cup butter or margarine
¾ cup milk
½ cup shredded Cheddar cheese
1 tablespoon chopped fresh thyme

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a medium bowl, stir together the flour, baking powder, sugar, salt and cream of tartar. Cut in butter using a pastry cutter or a fork until it is the size of peas. Make a well in the center of the mixture and measure the milk, cheese and thyme into the bowl. Gently mix until a soft dough forms.
  • Roll or pat out on a floured surface to 3/4 inch thick. Cut into circles and place on a baking sheet.
  • Bake for 10 minutes in the preheated oven, or until the bottoms of the biscuits are golden brown.

Nonstick cooking spray, for the baking sheet
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, cut into small cubes and chilled
1 1/2 cups freshly grated sharp Cheddar
2 tablespoons minced fresh curly parsley
1 1/4 cups buttermilk
Flakey sea salt, such as Maldon

Steps:

  • Preheat oven to 450 degrees F. Grease a baking sheet with cooking spray.
  • Whisk together flour, baking powder, sugar, garlic powder and salt in a large bowl. Add butter to mixture and use a pastry cutter or two knives to blend until the mixture resembles a coarse meal. Stir in cheese and parsley. Add buttermilk and stir until just combined.
  • Use a large ice cream scoop to drop biscuits onto the prepared baking sheet. Sprinkle with flakey sea salt. Bake until golden brown, 15 to 18 minutes. Serve immediately.

I wanted to capture the flavor of cheese biscuits from a popular restaurant. So I took my favorite buttermilk biscuit recipe and added to it.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon garlic powder
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2/3 cup buttermilk
1/3 cup canola oil
Additional Parmesan cheese, optional

Steps:

  • In a large bowl, combine the first five ingredients. Add cheeses. , In a small bowl, combine buttermilk and oil. Stir into dry ingredients just until moistened. Drop by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Sprinkle with additional Parmesan cheese if desired. , Bake at 450° for 10-12 minutes or until golden brown. Serve warm.

GARLIC BUTTER TOPPING:
2 1/2 cups all-purpose baking mix (such as Bisquick)(I used Great Value brand)
1/2 stick (1/4-cup) cold salted butter
1 cup cheddar cheese, shredded (I hand shredded half an 8-ounce block of mild cheddar)
3/4 cup milk (I used 2%)
1/8 to 1/4 teaspoon garlic powder
Pinch of cayenne pepper, optional
2 tablespoons salted butter
1/4 teaspoon garlic salt
1/2 teaspoon dried parsley flakes

Steps:

  • Preheat oven to 450° F. Lightly grease or line a baking sheet with parchment paper and set aside. In a medium mixing bowl, use a pastry cutter to cut the butter into the baking mix until there are small chunks of butter about the size of peas. Stir in the cheddar cheese and garlic powder. Using a large fork or spoon, lightly stir mixture together while drizzling in the milk, only until the mixture is combined. Do not overmix as it will result in tough biscuits. Drop 1/3 cup portions of the dough onto the baking sheet (I used an ice cream scoop). Bake for 12 to 14 minutes, or until the tops of biscuits are beginning to lightly brown. Make the Garlic Butter while the biscuits are baking by melting butter is a small bowl in the microwave. Stir in garlic salt and parsley.
