1 cup shredded Cheddar cheese, divided
½ cup shredded Swiss cheese
2 tablespoons all-purpose flour, divided
½ cup diced cooked ham
2 tablespoons honey mustard
1 ¼ cups half-and-half
5 eggs, beaten
¼ cup green onions
¼ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Press pie pasty into the bottom of a 9-inch pie plate.
  • Bake pie crust in preheated oven for 5 minutes, use a fork to poke holes into the crust, and continue cooking until lightly browned, about 5 minutes more.
  • Reduce oven heat to 350 degrees F (175 degrees C).
  • Mix 1/2 cup Cheddar cheese, Swiss cheese, and 1 tablespoon flour in a bowl; spread over the warm pie crust.
  • Stir ham and honey mustard together in a bowl to coat the ham completely; spoon over the cheese mixture.
  • Mix half-and-half, eggs, green onions, 1 tablespoon flour, and salt together in bowl. Pour mixture carefully over the ham layer; top with remaining Cheddar cheese.

1 cup cubed ham
1 (8 or 9-inch) premade pie shell in foil pan
1 cup shredded Colby and Monterey jack cheese blend (recommended: Kraft)
3 eggs
1 cup milk
1 teaspoon all-purpose seasoning (recommended: McCormick)

Steps:

  • Preheat oven to 400 degrees F.
  • Place potatoes and rosemary in a microwaveable dish. Cover with a damp paper towel and microwave for 2 minutes, until almost cooked through.
  • Cover the bottom of the premade pie shell with potatoes, ham, and cheese. Place on a cookie sheet and set aside.
  • In a medium bowl, whisk together eggs, milk, and seasoning and pour into the pie shell.

1/2 cup butter
1 jar (5 ounces) process sharp cheese spread
1 cup all-purpose flour
2 tablespoons water
FILLING:
1 large egg
1/2 cup milk
1/4 teaspoon salt
1/2 cup finely chopped ham
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a small bowl, cut butter and cheese spread into flour until well blended. Add water and toss with a fork until a ball forms. Refrigerate for 1 hour. Press tablespoonfuls onto the bottom and up the sides of greased miniature muffin cups. , In a bowl, beat the egg, milk and salt. Stir in ham and cheese. Spoon a rounded teaspoonful into each shell. 1/2 recipe Cream Cheese Pastry
2 cups Jarlsberg cheese, grated
1 heaping cup cubed ham (.56 ounce)
4 eggs
2 cups half and half
1/2 teaspoon Coleman's dry mustard
1/4 teaspoon Worcestershire sauce
Couple dashes hot sauce, such as Tabasco
Parmesan, grated
Pinch freshly grated nutmeg

Steps:

  • Preheat oven to 400 degrees.
  • Roll pastry into a 9-inch disc and press into pie pan. Cut off loose ends and crimp edge using your thumbs and forefingers. Scatter cheese over bottom and top with ham.
  • Whisk eggs, cream, mustard, Worcestershire, and hot sauce together in a bowl. Pour over cheese and ham, stirring slightly to distribute egg mixture through cheese.
  • Top with Parmesan and grated nutmeg.
  • Bake for 40 minutes. Tent top with foil if baking to brown. Let rest at least 30 minutes before cutting and serving.

2 cups shredded sharp cheddar cheese

Steps:

  • Preheat oven to 400°. Unroll pie crusts into two 9-in. pie plates; flute edges. Line unpricked pie crusts with a double thickness of heavy-duty foil. Fill with pie weights, dried beans or uncooked rice. Bake until light golden brown, 10-12 minutes. Remove foil and weights; bake until bottom is golden brown, 3-5 minutes longer or Cool on wire racks., Divide ham, cheese and onion between shells. Nonstick cooking spray, for the muffin pan
3 strips thick-cut bacon, chopped
5 cups cornflakes, lightly crushed
1 1/2 cups grated white sharp Cheddar
1 tablespoon unsalted butter
1/2 Vidalia onion, diced
1 teaspoon ground mustard powder
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon freshly cracked black pepper
1 bunch collard greens, stemmed and finely chopped (about 3 cups)
1 cup half-and-half
4 large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Heavily spray a 12-cup nonstick muffin pan with nonstick cooking spray.
  • Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 6 minutes. Remove the bacon to a plate with a slotted spoon and pour 2 to 3 tablespoons of the bacon fat (see Cook's Note) into a large, heatproof bowl. To the bacon fat, add the crushed corn flakes and Cheddar. Stir the mixture together until it starts to clump. Press the mixture into the cups of the prepared muffin pan. Bake until lightly browned, about 5 minutes. Remove and cool slightly on a baking rack in the pan.
  • Return the skillet to medium-high heat and add the butter. Once the butter is melted, add the onions and cook until softened and starting to brown, 3 to 4 minutes. Sprinkle on the mustard, salt, paprika and pepper. Stir the collard greens into the onion mixture. Continue cooking the greens, stirring occasionally, until wilted, 5 to 6 minutes. Set aside to cool slightly.
  • Whisk together the half-and-half and eggs, then stir in the greens. Pour some of the egg mixture into each crust in the pan to come about three-quarters of the way up and sprinkle on the bacon. Bake until the egg has set and doesn't jiggle, 15 to 20 minutes. Set the mini quiches on a baking rack for 10 minutes to cool. Serve warm or at room temperature.
