Whip up these speedy nachos for a casual get-together with friends. Crispy tortilla chips are loaded with salsa, cheese, spring onions, chilli and other toppings.

175g packet plain tortilla chips
225g jar salsa
a few sliced spring onions
a good chunk of cheese
a pinch of crushed chilli flakes
soured cream or guacamole (optional)

Steps:

  • Tip tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.
  • Grate over a good chunk of cheese (fontina is perfect, but cheddar will do). Add a pinch of crushed chilli flakes, then put under a hot grill for about 3 minutes to melt the cheese. Serve with soured cream or guacamole (optional).

¾ cup water
1 (18 ounce) package restaurant-style tortilla chips

1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.

2 teaspoons vegetable oil
1 small onion, chopped fine
3 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 teaspoon salt
1 lb 90% lean ground beef
2 tablespoons tomato paste
1 teaspoon brown sugar
1 medium canned chipotle chili, chopped, plus 1 teaspoon adobo sauce
1/2 cup water
2 teaspoons lime juice
9 1/2 ounces tortilla chips
4 cups shredded monterey jack pepper cheese
2 jalapeno chiles, sliced into thin rings (medium)

Steps:

  • Adjust oven rack to middle position and heat oven to 400 degrees.
  • For the beans: Pulse ingredients in food processor until smooth. Transfer to bowl and cover with plastic wrap.
  • For the beef: Heat oil in large skillet over medium heat until shimmering. Cook onion until softened, about 4 minutes. Add garlic, chili powder, cumin, oregano, and salt and cook until fragrant, about 1 minute. Add beef and cook, breaking meat into small bits with wooden spoon and scraping pan bottom to prevent scorching, until no longer pink, about 5 minutes. Add tomato paste, sugar, chile, and adobo sauce and cook until paste begins to darken, about 1 minute. 1 garlic clove, Minced

2 scallions, Sliced Thinly

1 cup guacamole
1/4 teaspoon dried oregano
1 cup salsa
1/4 teaspoon cayenne
1 cup sour cream
1/8 teaspoon salt

Steps:

  • Heat the oil in a medium skillet over medium heat until shimmering. Add the onion and cook until softened. Add the garlic, spices, and salt. Cook until fragrant. Add the ground beef and cook until done.
  • Heat oven to 400°, spread half of the chips in an even layer in a 9x13 baking dish. Sprinkle half of the beef mixture evenly over the chips and then sprinkle with 2 cups of the cheese. 2 pounds ground beef
2 large onions, chopped
2 large green peppers, chopped
2 cans (28 ounces each) diced tomatoes, undrained
2 cans (16 ounces each) hot chili beans, undrained
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (11 ounces each) whole kernel corn, drained
2 cans (8 ounces each) tomato sauce
2 envelopes taco seasoning
2 packages (13 ounces each) spicy nacho-flavored tortilla chips
4 cups shredded cheddar cheese

Steps:

  • In a Dutch oven, cook the beef, onions and green peppers over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). , In each of 2 greased 13x9-in. baking dishes, layer 5 cups of chips and 4-2/3 cups of meat mixture. Repeat layers.
