You're going to love this cheesy seafood enchiladas recipe! Corn tortillas lightly fried, then filled with shrimp, crab, and corn, then topped off with a creamy chipotle sauce. The ultimate dinner option perfect for Cinco de mayo or year-round.

4 tbsp butter
1/4 cup all purpose flour
2 cups lobster stock (or chicken stock )
1 cup heavy cream
1 chipotle pepper in adobo sauce
3 tbsp adobo sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cumin
salt and pepper to taste
1 lb crab
1/2 lb shrimp (peeled and deveined)
1/2 tsp chili powder
1 tsp onion powder
1/2 tsp cumin
1/2 jalapeno pepper
1/2 cup corn (optional)
2 garlic cloves (finely minced)
1/2 onion (finely diced )
1/2 lime
salt and pepper to taste
oil
12 corn tortillas
2 cups shredded Mexican 4 cheese blend (or your favorite cheese)
1/2 cup pico de gallo (optional)
2 tbsp Mexican cream or sour cream (optional)
1/4 cup queso fresco (optional)

Steps:

  • Add some oil to a large skillet and cook over medium-high heat. Add the onions and jalapenos and cook for 3-4 minutes or until translucent. Stir in the spices and fresh garlic and cook for 30 seconds. Add the shrimp and cook the shrimp for 1-2 minutes or until the shrimp turn pink.
  • Fold in the corn and crab gently, add some fresh lime, and season with salt and pepper. In a separate skillet, add some butter and cook over medium-high heat. Once the butter melts, add the flour. Whisk the butter and flour and cook for 1-2 minutes.
  • Add the chipotle pepper and adobo sauce and cook for 20 seconds. Stir in the lobster stock and heavy cream. Mix well and reduce the heat to medium-low. Once the sauce thickens, season it with cumin, garlic powder, onion powder, salt, and pepper.
  • Add about 1/4 cup of sauce to a 9x13 casserole dish. Fry the corn tortillas in vegetable oil for 10 seconds on each side. Add about 2-3 tbsp of the shrimp and crab mixture to each tortilla and roll them up tightly. Place them seam side-down in the casserole and repeat with the remaining tortillas.
  • Place any left-over seafood on top of the rolled tortillas. Spoon chipotle cream sauce over the top of the rolled enchiladas and then cover with cheese. Bake at 375 degrees F for 20 minutes.

1 small onion, chopped
1/2 pound uncooked shrimp (31-40 per pound), peeled, deveined and chopped
1/2 pound red snapper fillet or other firm white fish, cut into 1-inch chunks
1-1/2 cups salsa verde
1 package (8 ounces) cream cheese, cubed
1 can (4 ounces) chopped green chiles
1/2 teaspoon salt
2 cups shredded Monterey Jack cheese, divided
12 corn tortillas (6 inches)
Fresh cilantro leaves or jalapeno pepper slices

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until crisp-tender, 3-4 minutes. Add shrimp and snapper; cook until shrimp turn pink, 5-7 minutes. Remove from pan., In the same pan, cook and stir salsa, cream cheese, chiles and salt over medium heat just until cream cheese is melted. Stir in 1 cup shredded cheese; remove from heat., Spread 1 cup cheese sauce into a greased 13x9-in. baking dish. Gently stir remaining cheese sauce into shrimp mixture. Place 1/3 cup shrimp mixture off center on each tortilla. Roll up and place in prepared dish, seam side down. Sprinkle with remaining cheese., Cover and bake until heated through and cheese is melted, 20-25 minutes. Sprinkle with cilantro before serving.

2 tablespoons salted butter
4 each jalapeno peppers, divided, or to taste
3 each poblano peppers, divided, or to taste
3 breast half, bone and skin removed (blank)s skinless, boneless chicken breasts, cut into large chunks
3 cloves garlic, minced
½ lime
1 (28 ounce) can green enchilada sauce (such as El Paso®)
10 each corn tortillas
2 cups shredded Mexican cheese blend
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Melt butter in large skillet over medium heat. Roughly chop 1 jalapeno pepper and 1 poblano pepper; add to the skillet with chicken and garlic. Squeeze lime over mixture and add lime rind to the skillet. Cook, covered, until chicken is no longer pink and juices run clear, stirring occasionally, 20 to 25 minutes. Remove from heat and let cool.
  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place remaining jalapeno and poblano peppers onto the prepared baking sheet.
  • Cook peppers under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Lower oven temperature to 375 degrees F (190 degrees C).
  • Chop cooked chicken into small pieces and place into a bowl. Add hot peppers to the bowl, cover, and let steam for 10 minutes. Peel skin from peppers, remove seeds, and slice.
  • Place small amount of enchilada sauce on the bottom of a 9x13-inch pan, just enough to cover the bottom. Place 5 tortillas on on top. Place 1/2 of the sliced poblano and jalapeno peppers on top of tortillas. Lay out 1/2 of the chicken and 1/2 of the Mexican cheese on top of the peppers. Spoon 1/2 of the remaining enchilada sauce on top of cheese layer. Repeat layering steps. Top with chopped cilantro.
  • Bake in the preheated oven until cheesy is melted and browning, about 25 minutes.

2 poblano chilis
½ lb tomatillos (3-4 large)
¼ white onion
1 jalapeño
2 green onions
2 cloves garlic
¾ packed cup cilantro leaves and stems
1 tsp ground coriander
1 tsp cumin
1 Tbsp fish sauce
½ c Mexican crema or sour cream
½ lb shrimp (peeled, deveined, and cut into large 1'' pieces)
1 ½ tsp kosher salt (plus more to season)
2 tsp black pepper
1 tsp cumin
1 Tbsp dried oregano
2 Tbsp oil
1 yellow onion (diced)
4 cloves garlic (minced or crushed)
5-6 green onions (minced)
½ lb crab meat (substitute extra shrimp)
6 oz about 2 cups shredded Jack cheese or Mexican cheese blend
6 6-inch corn tortillas (steamed or fried in oil)

Steps:

  • Preheat broiler. Arrange poblanos, tomatillos, onion, jalapeño, green onions, and garlic on a sheet tray. Broil until blistered, flipping once: 2 minutes per side for the green onion and garlic, 5-6 minutes per side for the peppers, tomatillos, and onion.
  • Once blistered, remove the tray from the oven. Transfer poblanos and jalapeño to a bowl and cover tightly to steam: Let all ingredients cool about 10 minutes.
  • Peel the blistered skin off and seed the the peppers, then add the poblanos, tomatillos, onion, jalapeño, green onion, and garlic to a blender, along with the cilantro, coriander, cumin, and fish sauce. Blend until mostly smooth, then add the crema. Blend until smooth and set aside.
  • Season the shrimp with salt, pepper, cumin, and oregano. Cover and refrigerate.
  • In a medium skillet, heat the oil over medium-high heat. Add the onion, garlic, and salt. Cook until softened, 8-10 minutes, then add the crab meat and green onion. Taste for salt and cook 5 minutes, then add the shrimp. Cook, stirring frequently, until shrimp are just cooked-5 minutes. Take off the heat and toss the seafood in about 1/2 cup of the sauce.
  • Preheat oven to 375 degrees.
  • Spread 1 cup of sauce down the center of a 7 1/2'' x 10 1/2'' baking dish (or a similar sized pan). Evenly divide about 1 1/4 cup of the cheese and the seafood filling into each tortilla, roll them up, and place them seam side down, centered in the pan. Pour the remaining sauce over and sprinkle with remaining cheese. Cover with foil and bake for 15 minutes. Remove the foil and bake 15 minutes more until cheese is melted and gooey.
  • Remove from the oven, garnish with cilantro and radish, and serve with pico de gallo, cotija cheese, cilantro, fresh lime juice, fresh acovado, black beans, or rice.

16 corn tortillas (6 inches)
2 medium tomatoes, chopped

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded part-skim mozzarella cheese, divided

Chopped fresh cilantro, optional

Steps:

  • Preheat oven to 350°. In a skillet, heat 1/2 cup oil over medium-high heat. In batches, fry tortillas until pliable (do not allow to crisp), about 10 seconds on each side. Drain on paper towels. Cover with foil to keep warm and softened., In a large skillet, heat remaining oil over medium-high heat. Add tomatoes, onions, garlic and cumin; cook and stir until onions are tender, 3-4 minutes. Add shrimp; cook until shrimp turn pink, stirring occasionally, 3-4 minutes. Stir in spinach; heat through., Place 1/4 cup shrimp mixture off center on each tortilla; top with 1 tablespoon cheese. 1 garlic clove, minced

2 cups cheddar cheese, shredded

1/2 teaspoon onion powder
1 (28 ounce) can green enchilada sauce

Steps:

  • Preheat oven to 350°F
  • Lightly coat with oil or cooking spray a large 9x13 baking dish.
  • In a large bowl combine, chicken, 1 1/2 cup of cheddar cheese, 1/1/2 cup of pepper jack cheese, diced green chillies, 2 cups of sour cream, garlic powder, chili powder and onion powder.
  • Mix until well combined.
  • To assemble, have a large bowl ready with the green enchilada sauce in it and a plate to roll the enchiladas on.
  • Take a flour tortilla and dip it into the bowl containing the sauce until it's all covered.
  • Then place on the plate and almost on the edge of one side of the tortilla add 1/4- 1/2 cup of the chicken filling depending on how full you want them to be.
  • Take the tortilla with the filling on it and roll it into a tube and lay in greased baking dish.
  • Repeat until you have either no room left in your pan or your out of filling.
  • With the remaining sauce pour over enchiladas and smooth out on top until there is a thin layer of sauce.
  • With the remaining 1/2 cup of sour cream spread evenly over the top of enchiladas.
  • Take remaining 1/2 cup of cheddar and 1/2 cup of pepper jack cheese and sprinkle evenly over top of enchiladas.
  • Cover with foil for the first 25 minutes of cooking.
  • Remove foil and bake for another 15-20 minutes until bubbly and cheese is melted on top.

1 lb lump crabmeat or 1 lb chopped imitation crabmeat
1 1/2 cups defrosted baby shrimp or 2 (4 ounce) cans baby shrimp
2 minced garlic cloves
2/3 cup sliced green onion
2/3 cup green enchilada sauce
1/3 cup loosely packed chopped cilantro
1 1/2-2 cups green enchilada sauce
1 cup sour cream
1 1/2 cups Mexican blend cheese or 1 1/2 cups monterey jack cheese
1 (10 count) package flour tortillas

Steps:

  • Combine first 6 ingredients, mix well.
  • Place about 1/2-2/3 c filling on tortilla and roll up.
  • Place seam side down in 9 by 13 pan.
  • Combine 1-1/2-2 c sauce and 1 c sour cream in sauce pan on stove till warm and well blended.
  • Spoon sauce over enchiladas, and sprinkle with cheese.
  • Bake in 350° oven till cheese is melted and it looks bubbly, approx 20-30 minute.
  • Garnish with sliced avocados.
