SIMPLE PASTA PIZZA

Steps:
- Bring a large pot of salted water to a boil over high heat. Cook the pasta according to package directions, about 10 minutes. Using tongs, remove the pasta to a large bowl. Add the parmesan cheese and the sauce and toss to combine. Allow to cool to room temperature for 10 minutes.
- Preheat the broiler to high.
- Heat a medium oven proof nonstick skillet over medium heat. Spray the pan evenly with nonstick cooking spray. Add 1 cup of mozzarella, the eggs and basil to the cooled pasta and toss well to coat. Add the pasta mixture to the hot pan, press down evenly and gently and cook for about 5 minutes or until the bottom is starting to set and turn golden. Sprinkle the top with the remaining 1/2 cup mozzarella cheese. Place the pan under the broiler and broil for 5 minutes or until the center of the pizza is completely firm. Allow the Pizza to cool for 5 minutes in the pan. Place a large rimmed plate or baking sheet over the pan and invert the pizza. Slice into wedges and serve with more sauce if desired.

- Preheat oven to 400°. Cook pasta according to package directions; drain. , In a large cast-iron or other ovenproof skillet, heat 1 teaspoon oil over medium heat. Add mushrooms, green pepper and onion; saute until tender. Remove with a slotted spoon and keep warm. Increase heat to medium-high. In same skillet, heat remaining oil. Spread pasta evenly in skillet to form a crust. Cook until lightly browned, 5-7 minutes., Turn crust onto a large plate. Reduce heat to medium; slide crust back into skillet. Top with pizza sauce, sauteed vegetables and olives; sprinkle with cheese and Italian seasoning. Bake until cheese is melted, 10-12 minutes.

PASTA PIZZA
Steps:
- Put a pizza stone in the oven (or an upside-down baking pan) and preheat the oven to 500 degrees F.
- Lay a large square of parchment paper on a work surface with the pizza dough on top. Pull and stretch the dough into a 14-inch round; poke the dough a few times with a fork. Use a pizza peel or a flat cookie sheet to transfer the parchment paper with the dough to the oven. Bake until pale golden, 5 to 6 minutes.
- Remove the pizza from the oven, drizzle with the olive oil and spread the tomato sauce on top, leaving a 1-inch border all around. Sprinkle with the mozzarella, then distribute the ham, pineapple and tortellini evenly all around. Return to the oven and bake until the crust is golden brown and the cheese is melted, 8 to 10 minutes more.
- Top the pizza with the torn basil, grated Parmesan and red pepper flakes. Cut into slices and serve immediately.

- Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
- Combine egg, milk, 1/2 cup of the mozzarella cheese, salt, and garlic salt in a large bowl. Stir in cooked spaghetti; mix well.
- Spread mixture into prepared baking dish. Bake in preheated oven for 15 minutes. Remove from oven and reduce temperature to 350 degrees F (175 degrees C).
- Spread sauce over spaghetti. Sprinkle with oregano, basil, and the remaining 1 1/2 cups mozzarella. Top with pepperoni, return to oven, and bake until cheese is bubbly and beginning to brown, about 30 minutes more. Let stand 5 minutes before cutting.

PASTA PIZZA
There are actually many variations you can create with this recipe, but this is the version I always come back to. I used to always make this with my leftover homemade tomato sauce, but we enjoyed it so much, I had to make it more often with store-bought sauce. It is like making a pizza with pasta, instead of dough, so you know the possibilities are endless.

- Preheat broiler.
- Cook ditali al dente in boiling, salted water according to package directions. Drain well.
- Meanwhile, in a 12-inch heavy skillet, heat butter and olive oil. Saute scallion and garlic until golden. Add drained dital to pan and turn to coat well. Cook for another 3 minutes until pasta is golden also.
- Add salt, peppers, and oregano and stir to combine. Add drained olives and drained mushrooms.
- Pour in spaghetti sauce and stir until well combined.
- Tranfer to a shallow baking pan (such as a jelly roll pan) and spread out into an even layer. Evenly distrubute shredded mozzarella over the top.
- Watching carefully, broil for about 5 minutes, until cheese is melted and nicely browned. To serve, use spatula.

- Heat oven to 400°F. Grease 15x10x1-inch pan.
- Cook spaghetti in large pot as directed on package. Drain, and quickly rinse spaghetti and pot with cool water.

PIZZA PASTA
Steps:
- In a bowl, beat eggs with freshly grated cheese before tossing with leftover spaghetti. Make sure the spaghetti is fully covered with the egg. Add a dash or two of salt, to taste, noting that the leftover spaghetti is already seasoned with salt.
- Heat the olive oil in a saucepan. To test oil temperature, drop a piece of spaghetti into the pan. If it sizzles upon contact, the oil is ready.
- Pour the spaghetti mixture into the pan and flatten it out like a pancake. Fry for 2 minutes on high heat, or until golden brown.
- To flip the pasta, cover the pan with a plate larger than the pan, and hold it covered. Flip the pan and plate together to transfer the pasta onto the plate, then slide the uncooked portion back into pan and continue cooking for another 2 minutes, or until golden brown.
- Remove the pizza pasta from the pan and place it on a plate lined with a paper towel to absorb the excess oil. Serve warm or cold.

PIZZA PASTA CASSEROLE

- Preheat oven to 350 degrees. Prepare the pasta as directed on the package.
- While the pasta is cooking, place a large skillet over medium high heat on the stove top. Warm up the olive oil in the skillet and then add the onions and green pepper.
- Cook for a few minutes until vegetables are tender, then add the mushrooms and garlic. Cook for 1 more minute. Push everything to the side of the pan and add the sausage.
- Cook the sausage, breaking it into small pieces as it cooks. Cook until it's no longer pink. Drain grease. Add in the pepperoni slices and stir together.
- Add in remaining ingredients to the skillet except for Mozzarella cheese.
- Turn the heat down to medium and let the mixture simmer for 2-3 minutes so that the flavors can meld together.
- Turn off the heat and add the cooked pasta to the skillet pan. Mix everything together.
- Spray a large 9 x 13 inch baking pan with non-stick cooking spray.
- Dump the pasta mixture into the pan. Top with Mozzarella cheese and any other toppings you prefer.
- Bake in the oven (uncovered) for about 30 minutes or until cheese is melted and pasta is heated through.

- In a small bowl, beat the eggs until well combined. Stir in the Parmesan, salt, and pepper and mix well.
- In a large bowl, toss together the pasta, diced meat, and vegetables; using your hands generally gets the job done most efficiently. Add the egg mixture and mix again, being sure to distribute the eggs thoroughly.
- Heat 1 tablespoon of the oil in a medium skillet over medium-high heat. When hot but not smoking, add the pasta mixture, pressing evenly into the pan with the back of a spatula. Reduce the heat to medium and cook without stirring for 5 to 6 minutes or until the bottom of the cake is browned and crisp and releases from the pan (you may need to run a spatula or knife around the edge of the pan to nudge it free). Press down on the pasta as it cooks now and then to ensure it is making good contact with the bottom of the pan.
- Cover the pan with a large plate and carefully flip it over, inverting the pasta cake onto the plate. Add a bit more oil to the pan if it looks dry, then slide the pasta cake back into the pan. Cook for another 5 to 6 minutes or until golden.
