3 to 4 zucchini, (trimmed and cut length-wise into quarters (sticks))
Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves, (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Preheat your oven to 350 degrees F.
  • Mix together the grated Parmesan, thyme, and spices in a medium bowl.
  • Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
  • Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
  • Bake in the heated oven for 15 to 20 minutes, or until tender. For a crispy golden topping, broil for 2 to 3 minutes more. Watch it carefully so the zucchini does not burn.
  • Serve immediately as an appetizer with a dipping sauce, or as a side next to your protein of choice.

Pronounced LEH-cho, this is a simple but versatile sauce. It's unique flavor is derived from the hot peppers, which vary immensly in intensity of hotness, so use more or less peppers to match your taste. Lesco freezes beautifully and makes an excellent base for soups and stews, delicious on fish, or with pasta and rice with a dollop of sour cream. Adapted from Moosewood Restaurant Low Fat Favorites.

4 cups large yellow onions, chopped (about 2 onions, may also use white onions)
1 teaspoon vegetable oil
1/2 cup water
4 green bell peppers, stemmed, seeded, chopped
2 -4 hungarian hot peppers, stemmed, seeded, chopped (banana peppers, use hot or mild)
4 cups chopped fresh tomatoes (about 4 tomatoes)
salt

Steps:

  • In a saucepan over medium heat, saute the onions in oil for a few minutes.
  • Stir well, add water, cover and increase the heat to high.
  • Cook for 5 minutes, stirring frequently.
  • Add bell peppers and hot peppers and lower the heat to medium.
  • Continue to cook, covered, stirring often, for 5 minutes.
  • Add the tomatoes, mix well, and simmer for 15 minutes, until onions and peppers are quite soft.
  • Add salt to taste.

Lecso is of a Hungarian origin, and the original version contains a lot of those small, very hot peppers. I prefer a milder version.

3 sweet peppers
5 big tomatoes
200 g champignon mushrooms (or other mushrooms)
1 medium zucchini (about 80dag)
200 g tomato paste
2 big onions
4 garlic cloves, chopped
vegetable oil (for frying) or olive oil (for frying)
1 teaspoon gound paprika (or 5, 6 whole piment)
salt and pepper

Steps:

  • Chop all the vegetables.
  • Fry them separately for 3-5 minutes on a medium heat, then put them in a large pot.
  • When they all are in the pot, mix them, add garlic and tomato paste.
  • If the mixture is too thick, add a little water.
  • Add piment, salt and pepper to taste.
  • Simmer for 20 minutes on a low heat.
  • Serve in small bowls, along with rice, meat, or actually whatever you like.
