TRIPLE-CHEESE SPIRALS

- Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

- Cook pasta according to package directions. Meanwhile, in a large saucepan, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and mushrooms; bring to a boil. Reduce heat; cover and simmer for 20 minutes., Place 1/2 cup of meat sauce in a greased shallow 2-1/2-qt. baking dish. Drain pasta; place half over sauce. Top with half of the remaining meat sauce; spread with sour cream. Top with process cheese and remaining pasta and meat sauce. Sprinkle with mozzarella cheese. , Cover and bake at 350° for 25-30 minutes. Uncover; bake 5-10 minutes longer or until bubbly. Freeze option: Freeze individual portions of cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little spaghetti sauce if necessary.

- Put cream cheese, sour cream, and mayonnaise into a medium bowl and mix well.
- Mix in tomatoes, green onions, jalapeno peppers, green olives, and black olives into the cream cheese mixture.
- Spread each tortilla with a thin layer of the mixture and roll up.
- Chill rolls in fridge for at least 1 hour to set.
- Cut rolls into 1 inch pieces and serve on a platter.

- COMBINE cream cheese, 1/3 cup Cheddar cheese, lime juice, chili powder and cumin in medium bowl; add Creamed Chipped Beef, cilantro and green onion, stirring well. Evenly divide mixture among tortillas, spreading to cover each tortilla.
- ROLL up each tortilla, finishing with seam-side-down. Place rolled tortillas on baking sheet; sprinkle with 1/4 cup Cheddar cheese.
- BAKE in preheated 400 degrees F oven for 7 minutes or until cheese is melted. Let stand 3 to 5 minutes; slice into 1-inch pieces and serve hot.
- Note: Recipe can also be prepared without baking. Omit cheese topping; refrigerate filled and rolled tortillas for at least one hour to set filling before slicing.

- In blender, make a smooth sauce of tomatoes, chili seasoning of your choice and salt.
- Set aside.
- Tear tortillas into 1-inch strips then tear the strips into bit-size trangle or square pieces.
- In a large frying pan heat oil.
- In batches fry tortilla pieces until they are golden brown, approximately 3-5 minutes.
- Drain on paper towel.
- Remove excess oil from frypan and saute garlic and onion briefly.
- Add tortilla pieces.
- Pour eggs and tomato sauce over ingredients in frypan.
- Cook over low heat 10-15 minutes, stirring as little as possible, until liquid is absorbed and mixture appears fairly dry.
- Sprinkle cheese over the top.
- Remove from heat and cover until cheese melts.
- SERVING SUGGESTION: serve with fresh fruit and green salad.
