- Lightly grease a 2-quart rectangular baking dish; set aside. In a large saucepan cook noodles according to package directions; drain. Return noodles to pan.
- Meanwhile, for sauce, in a medium saucepan heat 1/4 cup butter over medium heat until melted. Add sweet pepper, celery, and onion; cook for 8 to 10 minutes or until tender, stirring occasionally. Stir in flour, mustard, salt, and black pepper. Gradually stir in milk. Cook and stir until slightly thickened and bubbly.
- Gently fold sauce, tuna, and cheddar cheese into cooked noodles. Transfer noodle mixture to the prepared baking dish. In a small bowl stir together panko, Parmesan cheese, and parsley; stir in melted butter. Sprinkle crumb mixture over noodle mixture. (To serve today, omit Step 4. Continue as directed in Step 5, except bake, uncovered, for 25 to 30 minutes.)
- Cover baking dish with plastic wrap, then with foil. Freeze for up to 1 month. To serve, thaw in the refrigerator overnight (casserole may still be a bit icy).
- Preheat oven to 375°F. Bake, uncovered, for 65 to 75 minutes or until heated through. Let stand for 5 minutes before serving.

EASY CHEESY TUNA NOODLE CASSEROLE

- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain noodles and return to the pot. Pour olive oil and salt over the drained noodles; stir.
- Preheat oven to 350 degrees F (175 degrees C).
- Put processed cheese food cubes into a large, microwave-safe bowl. Heat in microwave, stirring every 30 seconds, until melted and smooth, 3 to 5 minutes; pour over noodles and add tuna, peas, celery soup, mushroom soup, and black pepper. Stir to coat noodles completely; pour into a large casserole dish. Sprinkle Parmesan cheese over the top of the noodle mixture to cover completely.
- Bake in preheated oven until Parmesan cheese just begins to brown, 20 to 30 minutes.

- Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
- Cook the egg noodles until al dente as per the package directions. Drain and set aside.
- In a medium bowl, combine the cottage cheese and sour cream. Add plenty of freshly ground black pepper. Add to the noodles and stir. Add the Cheddar and green onions, then stir.
- Add the contents of the bowl to a 9-by-13-inch baking dish and bake for 15 minutes. Remove and top with the potato chips. Return to the oven and bake until golden, another 5 minutes.
- Garnish with green onions, then serve.
CHEESY TUNA NOODLE CASSEROLE
This was a favorite in my home growing up and now it's a favorite of my family as well. I double the recipe these days for my husband and three children. For a change of pace I add canned chopped green chilies and 1/8 teaspoon cayenne, use pasta shells or spirals, or top the casserole with sliced American or cheddar cheese instead of breadcrumbs.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to boil; place noodles in water and bring to boil again. Cook until al dente; drain well.
- While noodles are cooking saute in a medium size saucepan vegetable oil, onion, green and red bell peppers. Saute until tender.
- Pour soup, tuna, milk, salt and black pepper into the saucepan. Mix well over medium-low heat.
- Fold the noodles into the saucepan.
- Pour entire mixture into a 2 quart casserole. Sprinkle bread crumbs over the mixture. Bake 20 to 30 minutes or until the top is crisp and golden brown.

- Preheat the oven to 400°F (200°C). Lightly grease a 9 x 13-inch (22 x 33cm) baking dish with nonstick spray.
- Melt the butter in a large saucepan over medium heat. Add the onion and sauté until softened and very fragrant, about 5 minutes. Stir in the garlic, flour, Italian seasoning, and salt and cook for another minute, until thickened.
- Slowly pour in the chicken broth and milk and stir to combine. Bring to a simmer, stirring constantly. Once the mixture has thickened, 10-12 minutes, stir in the peas, carrots, and tuna.
- Spread the cooked egg noodles in the prepared baking dish.
- Pour the sauce over pasta in the pan and stir to combine. Add 2 cups of cheddar cheese and stir to incorporate. Spread the casserole in an even layer, then sprinkle the remaining cup of cheese on top.

I had company coming and wanted something that was relatively easy and I could serve in one dish. So I came up with this casserole and it was a huge hit. Once it sits after cooking (about 5 min.) the sauce thickens. The buttered bread crumbs add a nice crunch to it.

- Prepare noodles according to package instructions.
- Empty mushroom soup into 4 quart casserole dish, and add 2 cans milk (use soup can to measure milk). Use wire whisk to mix well.
- Melt Velveeta in microwave with 12 cup of the soup mixture. Stir this is with the soup mix.
- Add broccoli, onion, garlic powder, and tuna to mix. Stir to mix.
- Place cooked egg noodles in mixture. Stir well.
- Sprinkle with shredded cheddar cheese.
- Spoon mashed potatoes on top, spread evenly over mixture.
- Melt 3 TBSP butter, pour over bread crumbs. Mix with hands.
- Sprinkle buttered bread crumbs on top of potatoes.
- Bake at 350°F for 25-30 minutes. Bread crumbs will be slightly browned.
