Steps:
- Fill the base of the Chemex with ice. You'll want about 8 ounces of ice, which is 200 grams or one cup.
- Place a paper filter in the top section of the Chemex. Grind your coffee beans and place them in the filter, gently tapping to level them out. We recommend using a medium to medium-coarse grind size.
- Boil water in a kettle and then let it sit for a few seconds. Pour a small amount of the water over your grounds in a circle. Let the coffee bloom for 30 seconds.
- Continue pouring in circles until your coffee is fully brewed.
- Take out the filter and throw it away. Then gently shake the Chemex to mix the coffee with the ice.
- That's it! You now have iced coffee in the lower section of your Chemex. Pour it into glasses, add cream or sugar, and enjoy your refreshing caffeinated beverage. Not cold enough? Add a little extra ice to the glass.

HOW TO USE A CHEMEX TO MAKE COFFEE – A COUPLE COOKS

- Heat a pot of filtered water to 200 to 205F. We use an electric kettle that shows us the exact temperature. You could also use a teapot on the stove — just heat to boiling, then let the water cool down for a few minutes.
- Use a food scale to weigh out 34 grams of coffee, then grind it to a medium coarse grind (about the size of kosher or sea salt). We use an electric burr grinder to get a consistent grind.
- When the water is heated, place the filter in your Chemex (see the video below for exact instructions). Pour in just a bit of water to wet the filter, then pour out the water into the sink. Place the ground coffee into the Chemex and shake it to level it out.
- Place the Chemex on the food scale and tare it so the scale reads 0. Slowly pour in 70 grams of water in a circular motion. Then stop and wait for 1 minute: this allows the coffee to bloom (you may have to tap your scale once so that it doesn’t time out!).

- Lenny // EB Cafe Hyde Park Suggested Coffee: Yirgacheffe... Ethiopian blend Recipe: Amount of Coffee: 21 grams. Grind Size: Setting 5. Amount of Water: 350 grams.
- Aaron Kok // Home Barista // The Woodlands, TX Suggested Coffee: Light-medium roast. Personally prefer fruitier origins like Kenya/Ethiopians. Would work well with Bourbons & any other chocolaty too.
- Sinan Muslu // coffeesomething.de. Suggested Coffee: I love this recipe with a light roast washed Ethiopian heirloom. It gets me to the 3rd place at the second international Chemex Cup during the Berlin Coffee Festival 2018 this year ;)
- Patrick __p__x__ Suggested Coffee: Light Ethiopia. Recipe: Amount of Coffee: 42 grams. Grind Size: Setting 3. Amount of Water: 750 grams. Steep Time: 4:10 minutes.

- Geoffrey Waterman // Philadelphia, PA Suggested Coffee: I find this recipe handles light roasts best, light-to-medium preferred; the Chemex is a bit of a jack-of-all-trades and can brew most coffees well with just a few adjustments.
- Joseph Hemphill // Echo Coffee Suggested Coffee: We love a Medium or Medium/Light Roast. Ethiopian is a favorite, but if you are a cream and sugar person try a nice Honduran!
- Tim Messenger // bikehikebrew.com // Australia. Suggested Coffee: Lighter roasted Kenyans or Central Americans Recipe: Amount of Coffee: 38 grams. Grind Size: Setting Medium.
- Some Guy Who Drinks Coffee Suggested Coffee: Single origin medium or light roast all geographies to understand the contribution of roast and region to flavors.
- Courtney Lynn Suggested Coffee: I always tend towards the light to mid roasts with fruity undertones. Ethiopian beans are always my favorite. Columbian is also nice and usually balances well between fruity and more caramel-y flavors.
