FRENCH TOAST "JUBLIEE"

Steps:
- For the jubilee sauce: Combine the cherries and lemon strips and juice in a small saucepan over low heat. Cook until the mixture has thickened, about 10 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 5 minutes. Just before serving, swirl in the butter and maple syrup.
- For the French toast: Add the cream, honey, almond extract, cardamom and eggs and yolks to a blender and blend until combined. Transfer to a shallow container and soak the bread in the custard mixture.
- Heat the butter in a large saute pan over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook on both sides until golden brown, 5 to 8 minutes a side.
- Serve by placing the French toast on a platter along with the cherry jubilee sauce. Finish with the lemon zest and a dusting of confectioners' sugar.

- Combine the cherries, lemon juice, sugar and lemon strips in a small saucepan over low heat. Cook until the mixture has thickened, about 20 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 1 minute or until the flame is gone.
- Whisk together the milk, cream, eggs, almond extract and honey in a shallow bowl. Soak the bread in the custard mixture.
- Heat the butter in a large saute pan wide enough to fit both pieces of bread over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook the on both sides until golden brown, 4 to 5 minutes a side.
- Finish in a 375 degrees F oven if the center is still wet, 5 minutes at most.
- Serve by placing the French toast on a platter, along with the cherries jubilee sauce. Finish with the zest of the lemons and a dusting of confectioners' sugar.

- Beat pudding mix, milk and 1/4 tsp. extract in medium bowl with whisk 2 min. Stir in COOL WHIP and 1 Tbsp. nuts.
- Mix cherry pie filling and remaining extract. Spoon into 8 dessert glasses alternately with pudding mixture.
- Top with remaining nuts.

- In a large skillet, melt butter over medium heat. Add sugar and cherries; stir to combine. Cook until cherries are tender and sugar dissolves, about 5 minutes.
- Remove skillet from heat. Add kirsch, and carefully ignite. Cook until flame is extinguished. Serve warm over vanilla ice cream.

- Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
- Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

- In a small saucepan on low heat, add cherry brandy and keep it warm - don't let it simmer.
- In a medium skillet over medium heat, add raw sugar and corn starch, Pour in the milk and whisk until the sauce thicken, about 2 minutes.
- Add cherries to the cornstarch mixture, stir to coat and warm them up, about 3 minutes. Pour in the warm brandy. Either flambé it for 15 seconds or cook for about 45 to 60 seconds. Remove from the heat and serve immediately with vanilla ice cream.

- In a skillet, heat the juice from the cherries over medium heat.
- Add cornstarch mixture.
