Cherry Cheesecake Cookies have all the flavors of traditional cheesecake - in cookie form. They'll be a new holiday favorite for years to come!

Number Of Ingredients 10

1 1/4 cups finely crushed graham crackers (about 1 sleeve)
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 sticks (12 tablespoons) unsalted butter, softened
1/2 cup packed light brown sugar
1 egg, separated
4 ounces cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
cherry pie filling

Steps:

  • Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, whisk together the graham cracker crumbs, flour and baking powder.
  • In a medium bowl, with an electric mixer, beat together the butter and brown sugar until light and fluffy; about 2 minutes. Add the egg white and beat until well combined.
  • Stir graham cracker mixture into butter mixture until just combined.
  • In another medium bowl, beat together the cream cheese and granulated sugar until combined. Add in egg yolk and vanilla and mix until smooth.
  • Using a medium cookie scoop (about 2 tablespoons), scoop out the cookie dough and place on prepared baking sheets. Flatten slightly, pressing your thumb or a round measuring teaspoon into the center of the ball to create a small bowl shape. Repeat with the remaining dough.
  • Spoon or pipe the cream cheese mixture into the indents of the cookies.
  • Bake in preheated oven for 12 minutes or until the filling is barely set and the cookies are lightly golden.
  • Allow to cool 5 minutes on the baking sheets before removing them and cooling completely on a wire rack.
  • Spoon cherry pie filling onto cooled cookies just before serving.

12 slices refrigerated chocolate chip cookie dough, 1/4 inch
1 (8 ounce) package cream cheese, at room temp
1/2 cup sweetened condensed milk
1 large egg
1 teaspoon almond extract
1 (21 ounce) can cherry pie filling
1/3 cup sliced blanched almond
chocolate curls

Steps:

  • Preheat oven to 325 degrees.
  • Line a 12 count muffin tin with cupcake liners.
  • Place 1 round of cookie dough in each lined cup.
  • Bake for 10 minutes.
  • Meanwhile beat cream cheese, sweetened condensed milk, egg and almond extract in a medum bowl until smooth.
  • Pour 3 T.
  • cream cheese mixture over each cookie in a cup.
  • Bake for an additional 15 minutes or until set.
  • Cool completely on a wire rack.
  • Top with cherry pie filling and sprinkle with blanched almonds.
  • Chill in the fridge for 1 hour.
  • Garnish with chocolate curls.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/4 cup cold butter or margarine
4 oz (half of 8-oz package) cream cheese
1/2 cup sliced almonds
2 1/2 packages (8 oz each) cream cheese (20 oz), softened
1/2 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon almond extract
2 eggs
1 can (21 oz) cherry pie filling

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray. Place cookie mix in large bowl. Cut in butter and 4 oz cream cheese, using pastry blender or fork, until mixture is crumbly. Reserve 1 1/2 cups mixture for topping. Press remaining mixture in bottom of pan. Bake 12 minutes.
  • Meanwhile, in large bowl, beat 20 oz cream cheese, the sugar, flour, almond extract and eggs with electric mixer on medium speed until smooth.
  • Spread cream cheese mixture evenly over partially baked cookie base. Spoon pie filling evenly over cream cheese mixture. Sprinkle with reserved topping and almonds.
  • Bake 40 to 45 minutes or until light golden brown. Cool 30 minutes. Refrigerate about 2 hours or until chilled. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

3 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 (8 ounce) packages cream cheese, softened
2 ½ sticks unsalted butter, softened
1 ½ cups white sugar
2 large eggs
2 ½ teaspoons vanilla extract
1 cup graham cracker crumbs
3 (20 ounce) cans cherry pie filling, drained

Steps:

  • Combine flour, baking powder, and salt in another bowl.
  • Combine cream cheese, butter, and sugar in a large bowl. Beat with an electric mixer on medium-high speed until smooth and creamy, about 2 minutes. Add eggs and vanilla extract and mix until incorporated. Reduce speed to low, add flour mixture, and mix until just combined. Refrigerate dough until firm, at least 30 minutes.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Roll dough into 1 1/2-inch balls. Pour graham cracker crumbs into a shallow bowl; roll dough balls in the crumbs. Place balls 2 inches apart on the prepared baking sheets. Make an indentation in the center of each ball with the back of a tablespoon measure. Place 3 cherries in each indentation.
  • Bake in the preheated oven, switching and rotating the sheets halfway through, until edges are golden, 12 to 14 minutes. Cool for 5 minutes on the baking sheets. Transfer to wire racks to cool completely.

Steps:

  • In a small bowl, combine almonds and cracker crumbs; stir in butter. Press onto the bottom of a greased 9-in. springform pan; set aside. In a bowl, beat the cream cheese and milk until smooth. Add eggs, beat on low just until combined. Pour into prepared crust., Refrigerate 1/2 cup pie filling for garnish. Drop remaining pie filling by teaspoonfuls onto cream cheese mixture; cut through batter with a knife to swirl the filling. Bake at 325° for 50-55 minutes or until center is almost set. 1 ½ cups oat flour
¾ cup white sugar
3 tablespoons butter, at room temperature
½ cup vanilla-flavored soy milk
1 egg
½ tablespoon baking powder
½ tablespoon ground cinnamon
1 cup dried cherries
¾ cup slivered almonds, divided

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a cookie sheet with parchment paper.
  • Combine oat flour and sugar in a large bowl. Add butter; beat with an electric mixer until creamy. Mix in egg and soy milk. Mix in baking powder and cinnamon; dough should be the consistency of soft cookie dough. Fold in cherries and 1/2 cup almonds.
  • Drop cookie dough onto the prepared sheet in 2-tablespoon portions, leaving a few inches between each cookie. Sprinkle remaining slivered almonds on top of each cookie.
  • Bake in the preheated oven until a toothpick inserted in the center of each cookies comes out clean, about 15 minutes.
