BRANDIED CHERRY BROWNIE BITES



Brandied Cherry Brownie Bites image

Dress Betty Crocker® dark chocolate fudge brownie mix with brandy macerated cherries and hazelnuts to make these decadent candy treats - perfect bite-sized desserts for gift giving.

1 cup dried cherries
1/3 cup brandy
1 box (1 lb 3.9 oz) Betty Crocker™ dark chocolate fudge brownie mix
Water, vegetable oil and egg called for on brownie mix box
3/4 cup hazelnuts (filberts), toasted, skins removed and nuts chopped
12 oz semisweet baking chocolate, chopped
1/2 cup hazelnut spread with cocoa

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In 1-quart saucepan, heat cherries and brandy to simmering over medium heat. Remove from heat; let stand 15 minutes.
  • Make brownie mix as directed on box, using water, oil and egg, except stirring in cherries, any remaining brandy and 1/2 cup of the hazelnuts. Pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 30 minutes. Refrigerate 1 hour.
  • Line cookie sheet with waxed paper. With spoon, scoop out brownies and shape into 1-inch balls; place on cookie sheet.
  • In microwavable bowl, microwave baking chocolate uncovered on High 1 minute or until melted, stirring after 30 seconds. Stir in hazelnut spread until well blended. With fork, dip brownie balls, one at a time, into chocolate mixture; tap off excess. Return to cookie sheet. Sprinkle with remaining 1/4 cup hazelnuts. Refrigerate 30 minutes or until set.

2 2/3 cups all-purpose flour (spooned and leveled)
2 teaspoons baking soda
1/2 teaspoon fine salt
2 sticks unsalted butter, room temperature
2/3 cup granulated sugar
1 cup packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup semisweet chocolate chips
1 cup dried tart cherries

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking soda, and salt.
  • In a large bowl, using a mixer, beat butter and both sugars on high until pale and fluffy, 3 minutes. Beat in eggs and vanilla. Reduce speed to low, add flour mixture, and beat until combined. Stir in chocolate chips and cherries.
  • Press mixture into a 9-by-13-inch metal baking pan. Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 28 to 30 minutes. Let cool completely in pan on a wire rack.

I found this recipe while trawling through the food blogs one morning. A few tweaks later and bite-sized yumminess was emerging from my oven.

Number Of Ingredients 9

1 cup sweet butter
4 ounces white chocolate
3/4 cup firmly packed brown sugar
3/4 cup white sugar
3 large eggs
1 1/2 cups flour
1 teaspoon vanilla extract
1 cup white chocolate chips
1 cup chopped macadamia nuts

Steps:

  • Preheat oven to 350°. Line mini muffin pans with paper liners.
  • Place the butter and 4 ounces white chocolate in a large bowl. Microwave on high in 30 second intervals, stirring between each, until mixture is smooth. It takes my microwave about 90 seconds before I'm happy with the mixture.
  • Stir in the brown sugar and the white sugar.
  • Stir in the eggs, one at a time, and beat well after each addition.
  • Gradually stir in the flour.
  • Stir in the vanilla.
  • Then, stir in the white chocolate chips and the nuts.
  • Just as an aside, don't you love the fact that you don't need to use your mixer for this recipe, just stir, stir and stir.
  • Spoon the batter into the muffin pans.
  • Bake for about 15 minutes, until lightly browned.
  • While the babies are baking, lick your spoon.
  • Cool in pans for 5 minutes. Then, remove from pans and cool on wire racks.

9 tablespoons (1 1/8 sticks) unsalted butter, softened, plus more for pan
1 teaspoon baking powder
3/4 teaspoon salt
1 cup packed light-brown sugar
2 large eggs
1 2/3 cups all-purpose flour
1 teaspoon pure vanilla extract

Steps:

  • Stir together coconut, chocolate, walnuts, and cherries in a medium bowl; set aside. Line a standard 12-cup muffin tin with cupcake liners; set aside.
  • Preheat oven to 350 degrees. Line a buttered 8-inch square baking pan with foil or parchment paper, allowing 2 inches to hang over sides. Butter lining (excluding overhang); set pan aside.
  • Whisk together flour, baking powder, and salt in a medium bowl, and set aside.
  • Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; cream on medium speed until pale and fluffy, about 3 minutes. Add eggs and vanilla; beat until combined. Add flour mixture, and beat on low speed, scraping down sides of bowl, until well incorporated. Mix 1 cup coconut mixture into batter.
  • Divide batter among muffin cups, filling each three-quarters full. Sprinkle remaining coconut mixture over tops. Bake until a cake tester inserted into centers comes out with a few crumbs but is not wet, about 25 minutes.

1 cup pepper flavored vodka
2 tablespoons lemon pepper
2 tablespoons celery salt

Steps:

  • Remove the stems from the tomatoes, and place them in a shallow bowl. Pour vodka over them so that they are covered. Stir in the hot pepper sauce. Cover, and refrigerate overnight.
  • To serve, mix together the lemon pepper and celery salt in a small dish. Serve tomatoes floating in vodka. Provide toothpicks so that your guests may pick up the tomatoes and dip them in the seasoning before eating.

2 teaspoons vanilla
1/2 teaspoon almond extract
2 eggs
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 packages (6 oz each) white chocolate baking bars, cut into chunks
1/2 cup slivered almonds
1/2 cup chopped dried cherries or cranberries
1/2 teaspoon vegetable oil

Steps:

  • Heat oven to 325°F. Grease or spray 13x9-inch pan. In large bowl, beat brown sugar, butter, vanilla, almond extract and eggs with electric mixer on medium speed until light and fluffy.
  • On low speed, beat in flour, baking powder and salt until well blended. Set aside 1/4 cup of white chocolate bar chunks. Stir in remaining chunks, almonds and cherries. Spread batter evenly in pan.
  • Bake 35 to 40 minutes or until top is golden brown and set. Cool completely, about 1 hour.
  • In small microwavable bowl, microwave reserved white chocolate bar chunks and oil uncovered on High 30 to 60 seconds, stirring every 15 seconds, until melted; stir well. Drizzle glaze over bars. Or if desired, place glaze in small food-storage plastic bag and cut off small tip from one corner of bag; drizzle glaze in diagonal lines over bars. Let stand until glaze is set, about 3 hours. For bars, cut into 6 rows by 6 rows.

1 teaspoon baking powder
1/2 cup unbleached cane sugar
1/2 cup brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla
1/4 cup maraschino cherry juice
24 maraschino cherries
1/4 cup powdered sugar

Steps:

  • Heat oven to 350 degrees. Spray a 24 count mini muffin pan with non stick cooking spray. Set aside.
  • In a large bowl, beat together the butter, cane sugar and brown sugar on high for about 2 minutes.
  • Add egg, vanilla and cherry juice. Beat well on high for another 2 minutes.
  • In a medium sized bowl, sift together the flour and baking powder. Add to the butter/egg mixture. Beat on high until well blended, 2 to 3 minutes.
  • Place one teaspoonful of batter into each of the 24 mini muffin pan cups. Place a maraschino cherry into the center of each.
  • Bake at 350 degrees for about 20 to 22 minutes or until toothpick inserted comes out clean.
  • Let stand for 10 minutes. Using a thin knife, gently loosen each mini muffin from the side of tin and place on a rack to cool. Let cool for about 15 minutes. Sift powdered sugar over.
  • Makes 24.
