1 cup butter, softened
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups all-purpose flour
1 teaspoon salt
1 (21 ounce) can cherry pie filling (2 if you like cherries)
1 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 tablespoons milk

Steps:

  • Cream together butter and sugar. Add eggs and beat well. Beat in extracts. In a separate bowl combine flour and salt. Add to the creamed mixture. Mix until combined.Spread 3 cups batter into a greased 15x10x1-in baking pan (Also works with 9x13 - baking time will be at least 35 minutes). Spread with pie filling. Drop the remaining batter by teaspoonfuls over pie filling. Bake at 350 for 30 to 35 minutes, or until toothpick comes out clean. Cool on wire rack. Combine glaze ingredients, and drizzle over cooled bars.

1 ¾ cups white sugar
4 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour

1 pinch salt
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. Reserve 1 1/2 cups of the dough and spread the rest into the bottom of the prepared pan. Cover this layer evenly with cherry pie filling. Drop the rest of the dough by spoonfuls on top of the cherry layer and spread to cover the best you can.
  • Bake for 35 to 40 minutes in the preheated oven, until top is golden. Frost with a confectioners' glaze when cool for sweeter bars. Let cool completely before cutting into bars.

1 1/4 cup flour
1 1/2 cup quick oats
1/2 cup rolled oats
1 cup brown sugar
1 tsp baking powder
1/2 tsp kosher salt
3/4 cup butter (at room temperature)
5 cups sweet cherries (fresh or frozen; stemmed and pitted; see notes.)
6 Tbsp water
1/2 cup white sugar
3 Tbsp cornstarch
6 Tbsp lemon juice

Steps:

  • Prepare the cherry filling in advance as it needs to cool. Place cherry filling ingredients in medium sauce pan and stir well. Turn the heat to medium and bring to a boil. Reduce heat to low and simmer, stirring frequently, for 8-10 minutes. Remove from heat and let cool completely. If you want the filling to be smoother and less chunky, use a hand blender to slightly break the cherries into smaller pieces.
  • Preheat the oven to 350F.
  • Line a 9 x 12 inch baking pan with parchment paper and set aside.
  • Next prepare the base and the top dry layers. In a large bowl, stir together the oats, flour, brown sugar, baking powder and salt. Cut in the butter to form a crumbly mixture.
  • Spread 2/3 of the oat mixture and pat firmly and evenly into the bottom of the baking pan.
  • Spread the cherry filling evenly over the base.
  • Spread cherry pie filling over oats.
  • Crumble the rest of the oat mixture evenly over the cherry filling.
  • Bake at 350F until light golden brown, about 40 minutes. Transfer to a cooling rack and cool completely before cutting.

4 cups cherries ((fresh, pitted))
2 tsp all-purpose flour (plain flour)
¾ cup unsalted butter ((12 Tbsp; melted))
½ tsp pure vanilla extract
⅔ cup sugar
2 cups all-purpose flour (plain flour)
⅛ tsp kosher salt (Diamond Crystal; use half for table salt)
1 cup unsalted butter ((16 Tbsp))
3 large eggs (50 g each w/o shell)
⅔ cup sugar
⅛ tsp kosher salt (Diamond Crystal; use half for table salt)
½ cup all-purpose flour (plain flour)
1 tsp pure vanilla extract
1 tsp almond extract

Steps:

  • Gather all the ingredients.
  • Preheat oven to 375ºF (190ºC). For a convection oven, reduce cooking temperature by 25ºF (15ºC). Line a 13 x 9-inch (33 x 23 cm) baking dish with parchment paper.
  • Pit cherries and toss them with 2 tsp flour.
  • In the bowl of an electric mixer, combine melted butter, vanilla and sugar. Mix on medium speed until well blended and smooth.
  • Blend in flour and salt and stir until incorporated.
  • Press dough evenly into bottom of prepared baking dish. Bake until crust is golden and slightly puffed, about 18 minutes.
  • When the crust is done, transfer to a wire rack and cool crust in pan.
  • Meanwhile, let's make the filling. Cut the butter into a few pieces and place in a saucepan over medium heat. Melt the butter completely stirring frequently with the spatula.
  • As the butter heats, it will begin to foam and then bubble. After several minutes, the milk solids will start to become brown on the bottom of the pan. Make sure that milk solids do not stick to the pan. Continue stirring until the butter is evenly browned, being careful not to burn. Remove from the heat and pour browned butter into a glass bowl to cool slightly.
  • In the bowl of an electric mixer, combine eggs, sugar, and salt in a medium bowl and whisk all together.
  • Add extracts and blend in flour by ⅓ at a time. Whisk all together until smooth.
  • Gradually blend in browned butter and whisk mixture until completely blended.
  • Arrange cherries over cooled crust.
  • Carefully pour filling evenly over fruit.
  • Bake at 375ºF (190ºC) for about 30 minutes, until filling is puffed and golden. A skewer inserted in the center should come out clean. Cool bars completely in pan on a wire rack.
  • Carefully lift the parchment paper to remove cooled bars from the pan and place them on a cutting board. Cut them into squares using a knife.

These Cherry Bars are incredibly easy to make and absolutely scrumptious. They're sure to be a hit with all your friends and family.

1 cup butter (softened)
2 cups sugar
1 tsp salt
4 large eggs
1 tsp almond extract
3 cups all-purpose flour
3/4 tsp cinnamon
1/4 tsp nutmeg
21 oz cherry pie filling
1 cup confectioners' sugar
1 tsp almond extract
2 tbsp milk

Steps:

  • Preheat the oven to 350 degrees F. Spray a pan with non-stick spray. You can use a 15 x 10 inch pan (sheet pan) or a 9 x 13 casserole dish. You just won't get the straight edges with the pan I used. Things like that don't rattle this girl.
  • In a large bowl combine the butter, sugar, and salt. Cream them together until light and fluffy. I used my stand mixer with my paddle attachment.
  • Now add the eggs, one at a time, mixing really well after each addition.
  • Add the extract, mix again.
  • Now gradually add the flour, mix on low while adding until it's all combined. Add the cinnamon and nutmeg, mix briefly by hand.
  • Pour about 3 cups of the batter into the prepared pan. Smooth it out.
  • Now take spoonfuls of the cherry pie filling and drop them randomly over the batter. Smooth as best you can.
  • Now take the remaining batter and drop spoonfuls of it randomly over the pie filling portion.
  • Bake in preheated oven for about 30 to 35 minutes, you want the top golden brown.
  • Remove the dish from the oven and allow to cool completely.
  • In in a small bowl mix the confectioners' sugar, extract and milk. Start with 2 tablespoons of milk, then adjust by adding more until you get the desired consistency for your glaze. Now drizzle the glaze over the bars. You can do it neatly, or messy. Matters little in the grand scheme of things.
  • Serve with a big old cherry loving smile.

1/4 cup canola oil
1 egg, beaten to mix
1 egg white
3/4 cup chopped dried tart cherries
1/2 cup finely chopped walnuts
Cooking spray
1/4 cup "fruit only" apricot preserves

Steps:

  • Preheat oven to 350 degrees F. In a medium bowl, whisk together the oats, flour, wheat germ, cinnamon and salt.
  • In another bowl, whisk together the honey, applesauce, oil, egg and egg white until well combined. Stir in the oatmeal mixture until well combined. Add the dried cherries and walnuts.
  • Coat an 8-inch square baking pan with cooking spray. Spread the mixture into the prepared pan and bake until a toothpick inserted in the center comes out
  • clean, 30 to 35 minutes. Put the preserves in a small saucepan and bring to a boil. As soon as the bars come out of the oven, brush with the preserves. Cool completely and cut into 12 bars, about 4 by1 1/2 inches each.

  • To prepare crust, weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 5 ingredients (through cinnamon) in a medium bowl, stirring well with a whisk. Drizzle butter and juice over flour mixture, stirring until moistened (mixture will be crumbly). Reserve 1/2 cup oat mixture. Press remaining oat mixture into the bottom of an 11 x 7–inch baking dish coated with cooking spray.
  • To prepare filling, combine cherries, sour cream, granulated sugar, and remaining ingredients in a medium bowl, stirring well. Spread cherry mixture over prepared crust; sprinkle reserved oat mixture evenly over filling. Bake at 325° for 40 minutes or until edges are golden. Cool completely in pan on a wire rack.

  • Add all cherry filling ingredients to small sauce pot (2.5 c frozen cherries, 3 T water, 1/4 c white sugar, 1 T corn starch, 1 T lemon juice, pinch of salt). Cook, stirring occasionally until sauce thickens. This should take between 5-8 minuets. Break up cherries with a spoon or your rubber scraper if you desire smaller chunks of cherries. Add 1-2 T more lemon juice depending on how sweet the filling is. Place in refrigerator to cool.
  • Preheat oven to 350 degrees. While cherry filling is cooling, prepare oatmeal mixture. This will be used for the base and for the topping. Add 3/4 c whole wheat flour, 1 c old fashioned rolled oats, 1/2 c dark brown sugar, 1/2 tsp baking powder and 1/2 tsp salt to large mixing bowl. Mix together. Add 1/2 cup chopped cold butter. Cut into flower/oat mixture with two knives or with a pastry cutter until butter is pea sized. (watch video to learn how to cut butter into flour mixture.
  • Prepare bars by placing parchment paper in an 8x8 metal baking pan, then add 1/2 of the flour/oatmeal mixture into baking pan. Press down with a measuring cup or your clean hands to form a pressed crust with an even thickness. Pour cooled cherry mixture over base, spread over crust. Sprinkle remaining flour/oatmeal mixture to make crumbly topping. Do not press down topping. Bake for 20-30 minutes, or until cherry filling is bubbling and topping is golden brown. Remove and cool before serving. Eat as is or serve with vanilla ice cream or yogurt. Refrigerate leftovers for 3-5 days.
