MICROWAVE CHERRY COBBLER

Steps:
- For the cherry filling - Place cherries, sugar, cornstarch, and lemon juice in a 12 oz (or larger) jar. Stir to combine. Make sure you have at least 1 1/2 inches from the top of the jar for the cobbler topping to rise.
- For the cobbler topping - Mix flour, sugar, and baking powder in a small mixing bowl. Add in melted butter and milk and stir until well combined.
- Spoon the batter on top of the cherry filling.
- Microwave for 90 seconds, or until done.
- Use a towel or pot holder to remove the jar from the microwave as it will be hot.
- Let the jar cool to handling temperature.
- Top with your favorite dairy-free ice cream and enjoy!

Gluten Free Cherry Cobbler, made with fresh or frozen sweet cherries, is the perfect summer dessert, especially when cooked up on the grill!

- Set Traeger to smoke with lid open for about 5 minutes. Close lid and set temperature to 375 degrees F.
- Add cherries to a 9x13 baking dish. Toss with lemon juice and almond extract.
- If cherries are frozen, you can set them on the grill while it is heating up.
- In medium sized bowl, combine almond and gluten free flours, sugar, baking powder and salt. Use a whisk to combine and eliminate lumps. In a separate bowl, combine egg, heavy cream and almond extract. Pour wet ingredients into dry and mix to combine. Mixture will be crumbly. Cover cherries with this mixture.
- Slice butter into thin slices and spread as evenly as possible on top of cobbler mixture. Sprinkle with decorator's sugar.
- Place cobbler onto grill and close the lid.
- Bake on preheated grill for about 60 minutes until golden brown.
