CHERRY ROAST CHICKEN WITH SAGE STUFFING AND CHERRY SAUCE

1 tablespoon olive oil, plus extra to drizzle
1 onion, finely chopped
2 celery sticks, finely chopped
2 cloves garlic, crushed
200g rindless streaky bacon rashers, finely chopped
2 cups fresh sourdough breadcrumbs
2 teaspoons finely chopped sage
2kg Steggles Family Roast Chicken
½ cup cherry jam
400g can black stoneless cherries

Steps:

  • Heat oil in a frying pan over medium heat. Add onion, celery and garlic. Cook, stirring, for 3 minutes, until soft. Add bacon and cook, stirring, for 2 minutes. Cool slightly. Add breadcrumbs and sage. Season with salt and pepper. Mix to combine the stuffing
  • Preheat oven to 200°C/180°C fan forced. Fill chicken cavity with stuffing and secure with toothpicks. Tie drumsticks together with kitchen string. Rub 2 tablespoons of the jam over the skin. Place chicken in a large baking dish. Drizzle with oil and cover loosely with foil. Roast in oven for 1 hour and 30 minutes. Remove foil and brush with remaining jam. Bake for a further 30 minutes or until golden brown and cooked through (juices run clear when tested with a skewer). Transfer chicken to a heatproof plate to rest for 5 minutes
  • While chicken is resting, strain cooking juices into a small saucepan over medium-high heat. Add canned cherries and ¼ cup water and bring to the boil. Reduce heat to medium and simmer for 5 minutes or until reduced slightly
  • Serve chicken with stuffing and sauce

1½kg whole chicken
1 heaped tbsp sea salt flakes
2 small lemons, halved
70g unsalted butter, softened
2 large garlic cloves, crushed
½ small bunch of sage, finely chopped
¼ small bunch of thyme, leaves picked
3-5 fresh bay leaves

Steps:

  • The night before, put the chicken in a medium roasting tin. Rub the salt generously over the skin and into the cavity, then grind over some black pepper. Push one half of a lemon into the cavity, then tie the legs together with kitchen string. Cover and chill overnight.
  • Heat the oven to 200C/180C fan/gas 6. Dab a little of the excess salt from the skin using kitchen paper.
  • Mix the butter with the garlic and sage. Push the herby garlic butter under the skin using your hands and rub it over the flesh, making sure it's evenly spread out. Stuff the thyme and bay leaves into the cavity, then put the remaining lemon halves in the tin around the chicken. Roast for 1 hr, then baste the chicken with the buttery juices from the tin. Roast for a further 20-30 mins, or until cooked through. Check the chicken is cooked by inserting a skewer into the thickest part of the thigh - the juices should run clear.
  • Transfer the chicken to a board, cover and leave to rest for 20 mins before carving. Slice and serve on a warmed platter.

1 lb cherries, pitted (fresh or frozen)
1/2 cup orange juice
1/2 cup soy sauce
1/4 cup Splenda brown sugar blend
1/4 cup honey
2 tablespoons lemon juice
1 garlic clove, minced
2 teaspoons gingerroot, grated
2 egg whites, slightly beaten
1/2-3/4 cup whole wheat flour
1/2 teaspoon black pepper
6 boneless skinless chicken breasts
3 tablespoons butter
6 crepes (prepared)

Steps:

  • Set aside 3/4 cup cherries. In a blender, combine orange juice and remaining cherries; cover and process until smooth. Add the soy sauce, brown sugar, honey, lemon juice, garlic and ginger; set aside.
  • Dip chicken in egg whites. Dredge in flour that has been combined with pepper, shaking off excess. In a large skillet over medium heat, brown chicken on all sides in butter. Place chicken in a Pam sprayed 13-in. x 9-in. baking dish (or if you skillet is oven proof can leave it in for easier clean up). Top with cherry sauce.
  • Bake, uncovered, at 350° for 15 minutes; turn chicken. Top with reserved cherries. Bake, uncovered, 15-20 minutes or until done.
  • Meanwhile, heat crepes as directed on package. Place on crepe on each plate and top with one chicken breast and some cherry sauce.
