8 ears corn in the husk
2 cups quartered cherry tomatoes
1 large red bell pepper, chopped
1 small red onion, chopped
¼ cup chopped fresh basil
½ cup olive oil
¼ cup rice vinegar
2 tablespoons lime juice
1 ¼ teaspoons salt
1 clove garlic, minced
½ teaspoon grated lime zest
¼ teaspoon freshly ground black pepper

Steps:

  • Trim corn husks of any long hanging parts and excess silk. Place in a large bowl with water and soak for 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place corn on the grill and turn every 6 minutes 1/4 turn until all 4 sides have been grilled, about 24 minutes. Allow corn to cool until cold enough to handle easily.
  • Remove husks from cooled corn and cut corn off into a serving bowl. Add cherry tomatoes, red pepper, onion, and basil.
  • Whisk together olive oil, rice vinegar, lime juice, salt, garlic, lime zest, and pepper in a small bowl until well blended. Pour dressing over corn salad and toss to combine. Cover and refrigerate for a minimum of 1 hour.

2 Large Ears of Fresh Corn (Husks and silk removed )
1 Tbsp Unsalted Butter (Melted)
1 Medium Red Onion (Halved and cut into thick slices)
1 Pound Cherry or grape tomatoes (Halved)
1 Large Avocado (Chopped)
1/4 Cup Fresh Parsley (Roughly chopped)
3 Tbsp Lime Juice
Salt and Pepper (To taste)

Steps:

  • Brush the corn with melted butter before placing the corn and red onion slices on a pre-heated gas grill over medium direct heat. (You can also do this indoors on a grill pan sprayed with non-stick cooking spray set over medium-high heat.)
  • Cook the corn until kernels are slightly charred, rotating every couple of minutes until each side is done. While you're cooking the corn, flip the red onion once.
  • Remove the onion and corn from the heat and slice the kernels from the cobs with a sharp knife. Add the corn and the onions in a large bowl.
  • Add the tomatoes, avocado, fresh parsley, and lime juice to the bowl. Season with salt and black pepper, to taste, and toss gently to combine. Serve and enjoy.

4 ears sweet corn, unhusked
Kosher salt
1 clove garlic, minced
1 jalapeño pepper, seeds and ribs removed, minced
Zest and juice of 3 limes
1/2 cup extra-virgin olive oil
1 ripe avocado, halved, pitted, peeled and diced
1 cup halved cherry tomatoes
6 scallions, thinly sliced
3/4 cup finely chopped fresh cilantro leaves
Freshly ground black pepper

Steps:

  • Soak the corn in its husks in a bowl of heavily salted water overnight in the refrigerator. Keep the ears submerged below the surface of the water with a plate weighted down with a heavy can.
  • Prepare and preheat your lump charcoal grill to medium low.
  • Put the corn, still in its husks, on the grill, cover, and cook, turning occasionally, for 20 minutes.
  • Meanwhile, in a large bowl, combine the garlic, jalapeño and a large pinch of salt. Add the lime zest, lime juice and olive oil and whisk to combine. Add the avocado, tomatoes, scallions and cilantro and toss gently to combine.
  • Remove the corn from the grill. When cool enough to handle, peel back the husks, discard the silk and slice the kernels off the cobs with a knife. Add to the bowl of vegetables. Toss to combine. Season with salt and pepper.

6 tablespoons extra-virgin olive oil
1 tablespoon thinly sliced garlic (from 2 cloves)

2 cups corn kernels (from 2 ears)
3 cups halved cherry or grape tomatoes
4 ounces halloumi, cut into 1/4-inch slices
2 cups packed baby arugula, preferably wild

Steps:

  • Whisk together lime juice and zest in a large heatproof bowl. In a small skillet, heat 5 tablespoons oil over medium-high. Add garlic and cook, stirring often, until light golden, 30 seconds to 1 minute. Whiskoil mixture into lime mixture; season with salt and pepper. Set aside 2 tablespoons dressing; add corn and tomatoes to remaining dressing and toss gently to combine. Season with salt and pepper.

  • Microwave the corn in their husks on high for 3 minutes. Shuck the corn - the silks will come off easily. (If you want to boil or steam the corn on the stovetop, you can shuck the corn first then cook just until brighter in color, 2 to 3 minutes.) Cut the kernels off the cobs, transfer them to a large bowl and add the tomatoes.
  • Finely grate the zest of the lime directly over the corn mixture, then squeeze the juice from the lime all over. Add the oil, a generous pinch of salt and the chile, if using.
