HEALTHY TOMATO SAUCE
This sauce tastes great over pasta, fish, or grilled chicken. It can be stored in a tightly sealed container in the refrigerator for up to five days.

Steps:
- In a medium skillet, heat oil over medium heat. Add onion and garlic; cook, stirring frequently, until softened, about 7 minutes.
- Stir in tomatoes and juice, wine, oregano, and basil. Simmer 8 minutes or until lightly thickened. Season with salt to taste.

Steps:
- Heat the olive oil in a large saucepan, add the onions and cook on a low heat until soft. Add the garlic and tomato purée. Cook for a few minutes then add the chopped tomatoes and oregano. Season generously and simmer for 20 mins, then allow to cool.
- Store in sterilised jars in the fridge for up to 1 week, or transfer to a container and freeze for up to 2 months.

HEALTHY TOMATO SAUCE
A healthy tomato sauce that can be served chunky or blitz. It is an easy recipe and it will soon become one of your favourites. You can throw any vegetable in here to make it even more nutritious.

Steps:
- Finely chop the onion, spinach and garlic. Add to a pan. Instead of using oil, to help soften the onion add a spoon of water. Cook for 5 mins until soft.
- Add the fresh tomatoes (chopped), the tomato puree, the water, stock cube and the tinned tomatoes. Add sweetener/honey if you have chosen to. Mix until all combined. Season with salt and pepper.
- Leave to simmer (with the lid on ajar), for 10 mins. At this point, if you want to make it a smooth sauce, pour into a food processor and blitz until smooth.
