This Chicken Afritada is made extra delicious with fresh tomatoes and NO canned tomato sauce! Loaded with potatoes, carrots, bell peppers, this classic Filipino chicken stew is a hearty and tasty meal the whole family will love.

1/4 cup canola oil
2 medium potatoes, peeled and quartered
1 large carrot, peeled and cut into cubes
1/2 small red bell pepper, cored and sliced into 1/2-inch thick strips
1/2 small green bell pepper, cored and sliced into 1/2-inch thick strips
4 pounds chicken, cut into serving pieces
1 small onion, peeled and sliced thinly
3 cloves garlic, peeled and minced
6 large Roma tomatoes
1 tablespoon fish sauce
1 cup water
1/2 cup frozen sweet peas (thawed)
salt and pepper to taste

Steps:

  • In a pan over medium heat, heat oil.
  • Add potatoes and carrots and cook, turning once or twice, until lightly browned. Remove from pan and drain on paper towels.
  • Remove excess oil from pan except for about 2 tablespoons.
  • Add bell peppers and cook for about 30 to 45 seconds. Remove from pan and drain on paper towels.
  • Add onions and garlic and cook until softened.
  • Add chicken and cook, turning on sides once or twice, until lightly browned but not cooked through.
  • Add tomatoes and cook, mashing regularly with back spoon until softened and release juices.
  • Add fish sauce and cook for about 1 to 2 minutes.
  • Add water and bring to a boil.
  • Lower heat, cover, and cook for about 20 to 30 minutes or until chicken is cooked through and sauce is thickened to desired consistency.
  • Add potatoes and carrots and continue to cook until fork-tender.
  • Add bell peppers and sweet peas. Cook for 1 to 2 minutes or until green peas are heated through and bell peppers are tender yet crisp.
  • Season with salt and pepper to taste. Serve hot.

Chicken Afritada is a popular chicken Filipino dish that is cooked in tomato sauce with carrots, potatoes and bell peppers as the main vegetables.

2 lbs chicken (mix of thighs and drumsticks)
2 tablespoons lemon juice
2 tablespoons soy sauce
2 tablespoons olive oil
2 cloves garlic, (chopped)
1 medium onion, (chopped)
1 medium tomato, (diced)
2 tablespoons fish sauce
Salt and pepper, (to taste)
1 cup tomato sauce
1 cup water
1 large potatoes, (cubed)
1 carrot, (cubed)
1 red bell pepper, (cubed)

Steps:

  • Marinate chicken pieces in soy sauce and lemon juice for half an hour. Drain chicken from the marinade.
  • In a heavy pan, heat oil over medium high heat. Sauté garlic, onions and tomatoes for 2 minutes or until onions are soft.
  • Add chicken pieces and saute for a few minutes until meat is nicely browned and no longer pink.
  • Add fish sauce and stir. Add tomato sauce and water and stir to combine. Let the mixture boil and then reduce heat. Cover and let simmer, stirring occasionally for 20 minutes.
  • Add carrots, red bell pepper and potatoes; cover and cook for 10 minutes or until potatoes are tender.
  • Season with salt and pepper, to taste.
  • Serve with steamed rice. Enjoy!

  • In a large skillet, over medium high heat, add the vegetable oil. When oil is hot enough, after 1 to 2 minutes, add the onions and garlic. Sauté for around 2 minutes till onions are translucent.
  • To the same skillet, add the chicken pieces and brown each one on all sides for about 8 minutes. Pour the fish sauce, tomato sauce, organic chicken broth. Blend liquid ingredients well, making sure some sauce encases the chicken pieces.
  • Add the potatoes and bell pepper slices. Season with sea salt and black pepper. Add bread crumbs to thicken the tomato sauce. Lower heat to a medium low. Cover and simmer for about 55 to 60 minutes or till chicken is thoroughly cooked. Potatoes should be soft by the end of cooking, as well.
