CHICKEN AND ARTICHOKES (5 WW POINTS)

Another meal inspired by a recipe from *Eating Well* magazine. Don't you just love it when you can assemble a fancy feeling dish that is actually quite easy in less than 30 minutes. The sauce here is aromatic and flavorful and I like to add a little extra broth so there is a bit more to spoon over brown rice. At just 5 WW points per serving, this is a real dandy.

1/4 cup flour, for dredging
1 tablespoon olive oil
4 (4 1/2 ounce) boneless skinless chicken breasts, cut into bite sized cubes about 3/4 to 1 inch in size
1 shallot, finely chopped
1 1/2 teaspoons finely chopped garlic
1 tablespoon chopped fresh parsley
1 cup frozen artichoke hearts (can use bottoms) or 1 cup canned artichoke heart, halved (can use bottoms)
1/4 cup thinly sliced sun-dried tomato
3/4 cup fat free chicken broth
1/4 cup dry white wine
parsley, for garnish

Steps:

  • Place the flour in a shallow bowl. Heat the oil in a nonstick pan. When the oil is hot, dredge the chicken in the flour, tap off the excess, and sauté until golden brown, about 3 to 4 minutes on each side.
  • Pour off the oil and add the garlic to the pan with the chicken, stir to combine. Add the parsley and salt, artichokes, and sun-dried tomatoes. Stir to combine.
  • Add the broth and bring to a boil. Cover, lower the heat, and simmer for 5 to 8 minutes, turning the chicken 2 to 3 times until cooked through.
  • Place the chicken on plates, arrange the artichokes and tomatoes around the chicken, and pour the sauce over all. Garnish with parsley.

1-1/2 pounds boneless skinless chicken thighs or breasts (I used thighs) (Each piece of chicken should be about 4 ounces each.)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 can (14 ounces) diced tomatoes with juice
1 can (14 ounces) quartered artichoke hearts, drained
1/2 cup chopped onion
1/2 cup kalamata olives, pitted and sliced
1 cup nonfat chicken broth
1/4 cup dry white wine
1 tablespoon quick-cooking tapioca
1 tablespoon chopped fresh Italian parsley
1 teaspoon dried basil
1 teaspoon dried thyme

Steps:

  • Coat the ceramic insert of your slow cooker with cooking spray. Season the chicken with salt and pepper and place the chicken in the slow cooker. In a medium size bowl, mix together the tomatoes, artichoke hearts, onion, olives, broth, wine, tapioca, parsley, basil and thyme. Pour mixture over the chicken. Cover and cook on LOW, 4 to 6 hours or until fork tender. (Mine were fork tender at 4 hours so I switched the ninja to warm for several hours till dinner.)   • Preheat oven to 450°F. On large rimmed baking sheet, arrange potatoes and onion and drizzle with 2 tsp oil. Season with 1⁄2 tsp salt and 1⁄4 tsp black pepper. Bake for 5 minutes.
  • Meanwhile, place chicken between 2 large pieces of plastic wrap and use rolling pin or mallet to flatten slightly. Arrange chicken, artichokes, lemon, and tomatoes on baking sheet. Sprinkle with oregano and drizzle with 1 tsp oil. Season with remaining 1⁄2 tsp salt and 1⁄4 tsp black pepper. Continue to bake until chicken is cooked through and potatoes are tender, about 20 minutes.
  • Meanwhile, in small bowl, whisk lemon juice, mustard, agave, and remaining 1 tsp oil. Season with salt and black pepper to taste.
